  • For the preparation of “cold jam”, as they call sea buckthorn, harvested for the winter without heat treatment, rather ripe berries are required. Do not rush and harvest early, let the sea buckthorn ripen completely.
  • Before cooking, it is necessary to thoroughly wash and sort out the fruits: getting spoiled berries into the billet can destroy it completely, significantly reducing its shelf life and taste.
  • The processed, that is, wiped, berries need to be prepared quickly, trying to keep it as light as possible, as this reduces its useful qualities.
  • After some time, the finished “jam” will split: one layer will be liquid and light, the second will be brighter and thicker, the third will be bright, thick and oily. Do not be afraid: it is absolutely normal. Do not try to mix everything, it is better to use each layer separately. Use the top one as jam, spreading on sandwiches, use the middle one as mashed potatoes, drink the bottom one instead of compote, diluting the syrup with water to your taste.
  • Store the workpiece in hermetically sealed sterilized jars in a refrigerator.

A classic recipe for sea buckthorn, rubbed with sugar

Composition:

  • sea buckthorn - 1 kg;
  • granulated sugar - 1, 5 kg.

Method of preparation:

  • Wash, reassemble the sea buckthorn. Drain it, pouring on a towel.
  • Grind dry berry thoroughly with a blender or meat grinder. Rubbing, pour each layer of sugar. Another option is to mix small portions of sea buckthorn with sugar and crush with a wooden wooden pestle. Leave only a small amount of sugar (about a glass).
  • Shredded and mixed with sugar, cover the berry with a cloth and place in a cool, dark place to infuse.
  • After a couple of hours, lay out the prepared banks. Preparation involves washing and sterilization.
  • Pour granulated sugar into each jar on top of the berry mass. The optimum width of the sugar layer is 2 cm.
  • Cover each jar with parchment, close with a plastic cap on top. Store in a cellar or refrigerator.

Due to the fact that according to this recipe, sea buckthorn is ground with the skin, it retains all the useful substances, but there is such a “jam” is not very convenient: it contains small bones, oilcake. For those who prefer delicacy, though less useful, but with a more delicate taste, there is another recipe.

Sea buckthorn grated with sugar: a modern recipe

Composition:

  • sea buckthorn - 1, 2-1, 25 kg;
  • sugar - 1, 25 kg.

Method of preparation:

  • Make thoroughly mashed potatoes out of carefully picked and washed sea buckthorn. This can be done in different ways. The first option is to scroll the berries through the meat grinder, then rub the resulting berry mass through a sieve. The second way - twice pass sea buckthorn through a juicer. The mass of the finished puree should be 1 kg.
  • Pour a kilogram of sugar in sea buckthorn puree and let it brew for three to four hours. It is necessary to insist in not warm and not bright place.
  • Spread out on clean, dry, before these sterilized banks.
  • Sprinkle the remaining sugar in jars.
  • Cover it with parchment, put capron caps on top and store in a cool place for the winter.

According to this recipe, a very tender sea buckthorn puree, which does not require heat treatment, is obtained, and therefore it is useful. For those who prefer desserts a little more sour, there are other recipes.

Composition:

  • sea buckthorn - 1, 2 kg;
  • apples - 0, 8 kg;
  • granulated sugar - 1 kg.

Method of preparation:

  • Dip the sea buckthorn in a gentle mash (without stones and oilcake).
  • Peel apples, cut a core out of them with seeds. Chop the apple pulp in any way convenient for you.
  • Mix sea buckthorn and applesauce with sugar, leaving about 0, 2 kg. Hold in a dark cool place, covering with gauze for 3 hours.
  • Spread on cans, pour in the remaining sugar, cork.

This dessert has a sweet and sour taste. It turns out gentle. Good boosts immunity and hemoglobin level in the blood. To normalize pressure, it is better to use hawthorn fruits instead of apples.

Composition:

  • sea buckthorn (ground by any method) - 1 kg;
  • hawthorn (already ground) - 0.6 kg;
  • sugar - 0.5 kg.

Method of preparation:

  • Mix the sea buckthorn and hawthorn fruits (fresh) crushed in any way.
  • Fill with sugar and leave for 4 hours.
  • Spread over the cans, close them and put them in the cold.

This recipe makes a mixture, which can be called medicine rather than dessert. If you want to make it sweeter, the amount of sugar during its preparation can be doubled.
