I really like hot potato flavored dumplings with sour cream or fried onions. Just delicious. Unfortunately, the purchased semi-finished products do not have the taste that you expect. So it is better not to be lazy and prepare vareniki in the proc for yourself and your family.
The cooking process is not so complicated, the main practice here. If you cook them once a week, then stick 100 dumplings for you will be a trifling matter. But it is worth it.
From one portion of the test I got 1.5 kg of dumplings. By quantity, on average - 30 pieces. But the number is very relative, because each sculpts dumplings in their own way.
If you keep the post, then the dumplings with potatoes are perfect for this period. If you do not keep the post, then add 1 egg to the dough, it will be denser and tastier.

The first thing we start to prepare the dough. Everything is simple, you prepare the dough on water or milk, with or without eggs, it is important to remember that all products must be at room temperature.
So, in a convenient bowl, sift the flour and pour warm water.
Add vegetable oil and salt.
Knead the dough, first in the bowl, then on the table. Dough should not stick to hands. It should be elastic and well mixed. So ask the men for help. And if you have a bread maker, entrust the batch of dough to this assistant. After the kneading, the dough should rest for about 40 minutes. This is important, if you immediately start sculpt the dumplings, then the dough will crack when frozen, and when cooked, it will most likely disintegrate.
Before you start kneading the dough, peel the potatoes and boil them in salted water.
When potatoes boil, cut off for 20 minutes. During this time, the potatoes should be cooked. We check the readiness with a fork - it is easily punctured, it means it is ready. Drain the water from the potatoes in a separate container. And mnem potatoes in mashed potatoes adding broth. It is good to add chopped dill to the potatoes.
Now you can do the modeling of dumplings. Roll out the dough at 2-3 mm thick and cut out with a glass or a mug of a mug.
Put about 1 teaspoon of mashed potatoes on each circle.
Pinch the edges. For decoration we make a pigtail. Pull back some dough and wrap it up.
Ready-made dumplings can be cooked immediately, and what is not eaten is frozen. Spread the boiled sausages in a single layer on a tray or board and place in the freezer. After 4-5 hours, boiled eggs can be transferred into the package. If you put them all at once in a package, they will freeze in one big lump.
Cook the dumplings 8 to 10 minutes after boiling water. Salt water is not necessary, since the dough is already salty. While the vareniki are boiled, make the onion roast.
Serve the dumplings hot! Enjoy your meal.
