Traditional dumplings are a tasty and satisfying dish that is equally enjoyed by both adults and children. Depending on the filling, they can be sweet and savory. Often, dumplings are made with a filling of berries, potatoes, mushrooms, cabbage, cottage cheese. The latter option is especially popular. However, not all housewives are willing to spend time and effort on sticking dumplings. Fortunately, in addition to traditional, there are lazy dumplings with cottage cheese. They were called “lazy” because it was very easy to make them. In addition, the preparation of lazy dumplings does not take much time.

Despite the fact that the process of cooking lazy dumplings is simple in itself, there are several subtleties that the hostess should learn before cooking.

  • The calorie content of the finished dish will most depend on how rich you use cottage cheese. If you are on a diet, choose a low-fat one.
  • Do not try to save sour cottage cheese by making lazy dumplings. You will not be able to kill the unpleasant taste, and the dumplings will not taste good. It is unlikely that your children will eat these with pleasure, if they do not refuse breakfast at all.
  • Cottage cheese for lazy dumplings needs to be ground through a sieve. Due to this, the dumplings will be tender, and they will look attractive, without white large points. It is especially important to observe this rule if you use granular cottage cheese for cooking dumplings.
  • Flour for lazy dumplings must also be sifted. In some recipes, it is replaced by a decoy.
  • In order for lazy dumplings to have a neat shape and look the same in size, the dough for dumplings is rolled into a sausage with a diameter of about 2 cm, then it is cut with a sharp knife at an equal angle of about 1.5 cm wide, or 45 degrees.
  • To prevent the dumplings from sticking together during boiling, they should be thrown into the water one at a time, and only after it boils.
  • Boil the dumplings in a large saucepan in plenty of water, otherwise they stick together, despite all your efforts. If you do not have a large pan, you will have to cook in small portions.
  • An indicator of the readiness of lazy dumplings is their ascent to the surface. Floated dumplings should be removed with a slotted spoon and laid out on plates. They cannot be cooked for a long time, as they can lose their beautiful shape and turn into a gruel.
  • Boil dumplings, even if they are sweet, should be in salted water. Then they get much tastier.

Lazy dumplings can be frozen, this should be done before boiling. In this case, you will need to cook them without defrosting. Dumplings can be stored in the freezer for a month. This makes it convenient to prepare for breakfast. After all, all that the hostess needs in this case is to boil water and throw dumplings into it. After five minutes, breakfast will be ready.

Classic recipe for lazy dumplings

Calorie dishes: 2118 kcal, per 100 g: 265 kcal.

Composition:

  • butter - 70 g;
  • 9% fat cottage cheese - 0, 4 kg;
  • chicken eggs - 2 pcs .;
  • wheat flour - 160 g (not including the cost of sprinkling);
  • sugar - 60 g;
  • salt - a pinch of dough, to taste in boiling water.

Method of preparation:

  • Melt butter in a microwave or water bath.
  • In a separate container, wipe the curd, pour in the melted butter, mix thoroughly.
  • Add raw eggs, sugar and salt, mix thoroughly.
  • Sift the flour and pour it into a bowl of curd. Stir until you get a mass of uniform consistency.
  • Spread the mixture onto a floured board and knead the dough. To prevent it from sticking to your hands, treat them more often with flour.
  • Split the dough into several pieces, roll each piece into a sausage with a diameter of about 2 cm. Lightly flatten the resulting sausages and cut them with a knife into even-sized pieces, not too thin.
  • Boil water, salt it to taste. Dip the pieces of dough into boiling water and cook them for 5 minutes after the water boils again. By this time, all the dumplings should float to the surface. If this does not happen, remove the injected skimmer, and cook the rest for a couple of minutes.

Serve lazy dumplings made according to the classic recipe, made with sour cream or jam. Adults usually prefer the first option, children the second.

  • wheat flour - 0, 2 kg;
  • sugar - 50 g;

  • salt - a pinch.

Method of preparation:

  • Curd the curd through a sieve.
  • Wash the eggs and break them into the curd.
  • Add salt, sugar and vanillin, pound until smooth. First, it is convenient to do it with a fork, and then stir it with a spoon or mixer.
  • Sift the flour and, pouring it in portions into the curd mass and mixing it thoroughly, knead a rather dense dough.
  • Divide the dough into several pieces.
  • Sprinkle flour on the chopping board, and dip your palms in the flour.
  • Put one part of the flour on a cutting board, roll it into a sausage, cut it into pieces of the same size.
  • Do the same with the remaining dough.
  • Boil the water. It should be quite a lot, not less than three liters, and even better more. Add a little salt to the water, stir.
  • Dip the resulting dumplings one at a time. Boil them, stirring gently with a spoon so that they do not stick together, for about a minute or two after surfacing.
  • Remove the lazy dumplings with a slotted spoon and arrange it on plates.
  • Melt the butter and pour the dumplings over it.

You can serve lazy dumplings with sweet or unsweetened yogurt, sour cream, but even in this case it is better not to exclude oil from the recipe - it gives the dumplings a unique creamy taste. If desired, before lowering the dumplings into boiling water, different figures can be formed from them: stars, leaves, and diamonds. Then the children will eat them with even greater pleasure.

Delicate lazy dumplings with semolina

Calories: 2528 kcal, per 100 g: 238 kcal.

Composition:

  • cottage cheese (any fat content) - 0.5 kg;
  • semolina - 0, 25 kg;
  • flour - 100 g;
  • chicken eggs - 2 pcs .;
  • sugar - 100 g;
  • salt - a pinch (not counting the cost of boiling).

Method of preparation:

  • Curd the curd through a sieve.
  • Check the quality of semolina (insects are often found in it), measure the desired amount.
  • Sift the flour into a separate container.
  • In a bowl with cottage cheese, break eggs, add sugar and salt. Spread until smooth.
  • Add the semolina, mix thoroughly and put in the refrigerator for half an hour.
  • Remove and place on a floured board.
  • Add the flour and knead the dough with your hands.
  • Split the dough into several pieces, roll each into a harness, cut into pieces of the same size.
  • Boil the lazy dumplings in salted water until they all pop up. You can immerse them in water only after it boils.
  • Put the dumplings out of the pan and spread them on plates.

Lazy dumplings made according to this recipe are very tender. You can serve them with any sweet sauce, for example made from fruits or berries, with syrup, sweet yogurt or condensed milk. If you are not a big fan of sweets, pour the dumplings with melted butter or sour cream.

Lazy dumplings with cottage cheese and potatoes (savory)

Composition:

  • potatoes - 0.5 kg;
  • cottage cheese - 0.2 kg;
  • chicken eggs - 2 pcs .;
  • flour - 100 g;
  • potato starch - 100 g;
  • onions - 0, 2 kg;
  • vegetable oil - 50 ml;
  • salt, black pepper powder - to taste.

Method of preparation:

  • Peel the potatoes, cut into large pieces and boil in salted water until soft. Mash to make mashed potatoes.
  • Mix curd wiped through a sieve with eggs, salt, pepper and starch.
  • Add sifted flour. Mix thoroughly.
  • Combine the curd mass with mashed potatoes, knead the dough.

Composition:

  • cottage cheese - 0, 5 kg;
  • potato starch - 60 g;
  • wheat flour - 150 g;
  • sugar - 100 g;
  • salt - a pinch.

Method of preparation:

  • In a bowl, sift the flour, mix it with starch.
  • Add sugar and salt, mix.
  • Pour curd tipped through a sieve.
  • Knead everything by hand until a homogeneous mass is obtained. Prepare in advance for the fact that it will take not so little time. So in fact, this recipe is useful only for hard-working housewives.
  • Make sausages out of dough, cut them into small pieces and boil them in salted water.

You can serve with jam or jam, fresh or canned fruit, which the economical hostess almost certainly prepared for the future.
