Most often, it is fried, boiled, baked or mashed. Potato side dish - a frequent guest on the table in many families, but sometimes the usual dishes can get bored. If you mashed the mashed potatoes, you can make something tasty and less familiar from it. For example, lazy dumplings with potatoes diversify your menu, without requiring extra expenses and considerable effort.

Lazy dumplings are called such precisely because they are easily and quickly prepared, so even an inexperienced hostess can make such a dish. However, some subtleties in the preparation of this tasty and unusual dishes are still there, and you need to know about them.

  • The basis of lazy potato dumplings is mashed potatoes. All housewives make it differently, so the dumplings they turn out unequal. It is clear that they are tastier than those who do not spare milk, butter, eggs. But flour need to add just a little, just to give the desired density test.
  • Potato will taste better if you add a spoonful of olive oil or a piece of butter to the pot in which it is boiled.
  • The finished potato dough rolls into a tow and cut into diamond-shaped pieces or pads, which are then rolled in flour and boiled in salted water. They must be removed immediately after the ascent to the surface, otherwise they will quickly lose their integrity. Potato dumplings better retain their shape when steamed.
  • Lazy potato dumplings can be made with a filling. There are two options in this case. Additional ingredient (onions, mushrooms or something else) can be mixed with mashed potatoes and become part of the dough. Sometimes potato dough is rolled into a thick layer, covered with a layer of mushrooms, onions or other products, then rolled into a roll and cut into slices, which are then boiled, like regular lazy dumplings.

Serve lazy potato dumplings to be hot. At the same time they can be flavored with onion, sauce or sour cream.

Lazy dumplings with potatoes - a simple recipe

Composition:

  • potatoes - 0.5 kg;
  • flour - 150 g;
  • chicken egg - 1 pc .;
  • salt, pepper - to taste;
  • fresh greens - to taste.

Method of preparation:

  • Peel the potatoes, cut them into 4 pieces and boil until done.
  • Drain, put the potatoes in a bowl and knead well.
  • Beat an egg into mashed potatoes, mix.
  • Add salt, pepper, finely chopped greens. Stir once more.
  • Sift flour and add half a glass to mashed potatoes. Mix thoroughly by kneading the dough. If necessary, add more flour, leaving 2-3 tablespoons for sprinkling potato dumplings.
  • Make a sausage out of dough and roll it up with a rope.
  • Cut the harness into 1, 5-2 cm long pieces.
  • Boil water, add salt and spices.
  • Roll the potato slices in flour and dip into boiling water.
  • Remove the dumplings with a slotted spoon immediately after their ascent.

It is best to serve such dumplings with sour cream. If you are fasting, you can fry onions in vegetable oil and pour the dumplings with this oil.

Lazy dumplings with potatoes and onions

Composition:

  • potatoes - 0.5 kg;
  • flour - 70 g;
  • onions - 150 g;
  • fat - 80 g;
  • chicken egg - 1 pc .;
  • salt, pepper - to taste.

Method of preparation:

  • Peel potatoes and boil until tender. Grind using a blender or tolkushkoy.
  • Peel the onions and cut them into small pieces.
  • Finely chop the bacon and melt it in the pan.
  • Stir the bacon into the mashed potatoes, and in the fat melted from the bacon fry the onions. Add half of it in mashed potatoes and stir it.
  • Mix the potato mass with the egg.
  • When adding sifted flour, knead the dough.
  • Make small balls of dough, roll them in flour.
  • Boil steamed or boiling water.

Before serving, lazy dumplings made according to this recipe should be watered with the remaining fat mixed with fried onions. If desired, the dish can be supplemented with sour cream mixed with greens and crushed garlic.

Lazy dumplings with potatoes and cottage cheese

Composition:

  • flour - 110 g;
  • chicken egg - 1 pc .;
  • potatoes - 0.5 kg;
  • butter - 40 g;
  • cottage cheese - 150 g;
  • sugar - a pinch;
  • salt - to taste.

Method of preparation:

  • Curd the curd through a sieve.
  • Boil the potatoes and mash them, adding a piece of butter to it.
  • Mix mashed potatoes with cottage cheese.
  • Break an egg into the resulting mass, stir.
  • Salt to taste, add a pinch of sugar, mix.
  • Drain half the flour, sifting it beforehand. Stir until smooth. Gradually add flour, knead quite thick dough.
  • Roll the potato-curd mass into a thin sausage, cut it into pieces, holding the knife at a 45-degree angle. The result should be figures that resemble a rhombus.
  • Roll lazy dumplings in flour and boil them for 3 minutes in boiling water, remove with a skimmer.

This unusual dish is served as a main dish, watering with sour cream and garnished with chopped greens. Sour cream can be replaced with unsweetened yogurt.

Lazy dumplings with potatoes and mushrooms

Composition:

  • champignons - 0, 3 kg;
  • potatoes - 0.5 kg;
  • flour - 160 g;
  • chicken egg - 1 pc .;
  • sour cream - 150 ml;
  • garlic - 3 pcs .;
  • butter - 100 g;
  • olive oil - 20 ml;
  • onions - 75 g;
  • hard cheese - 150 g.

Method of preparation:

  • Cook the mashed potatoes, cool it to a temperature just above room temperature.
  • Add an egg to the puree, mix.
  • Pour approximately 120-130 grams of flour, knead the dough. The rest of the flour will come in handy later.
  • Make a harness from dough, cut it into pieces and boil the dumplings in boiling water.
  • Grease a baking sheet with olive oil and put dumplings on it.
  • Melt the butter, pour the dumplings over it. For this, 40 g of oil is enough.
  • Finely chop the onion and garlic.
  • Wash and cut champignons in small pieces.
  • Melt the remaining butter, fry the onion and garlic in it for 2 minutes, add the mushrooms and continue frying until the excess liquid has evaporated.
  • Sprinkle flour over the mushrooms. Continue to fry them, stirring for another 2-3 minutes.
  • Add salt, season, add sour cream and stew sauce 5 minutes.
  • Place the sauce on the lazy dumplings.
  • Sprinkle with grated cheese on top.
  • Send the baking tray to the preheated 180 degree oven for 10 minutes.

Dish needs to be served hot. It goes well with fermented milk products: yogurt, yogurt, kefir.

Lazy dumplings can also be made from mashed potatoes left over from lunch or yesterday's dinner. Serve them hot as a main course. However, if you serve bacon with them, the dish will be more satisfying.
