- Many varieties of peaches are covered with fuzz. Such fruits are cleaned before canning. To do this, the skin is incised, usually crosswise, then the fruit is dipped in boiling water and blanched for 2-3 minutes, then immediately transferred to a container with cold water. After these manipulations, the skin of the fruit is removed easily.
- Whole peaches in a jar will go down less than half and slices of fruit. When preserving the fruit pieces, they will need much more.
- Banks, in which sweet preparations will be stored, must be washed with soda and sterilized before use. It is possible to close similar canned food only the metal covers providing tightness. Caps are sterilized before use. Usually they are boiled for this for 10 minutes.

Classic Peach Recipe in Own Juice
Composition (3 liters):
- peaches - 3-3, 5 kg;
- sugar - 0, 3-0, 35 kg.
Method of preparation:
- Pick the peaches, wash and dry with a kitchen towel. If they have a very rough skin, peel it off by flashing the fruit for 2 minutes in boiling water and dipping it in cold water.
- Cut the fruit in half, remove the bones. If the peaches are small, they can be conserved in halves. Large fruit is better to cut into slices.
- Sterilize the jars. Fill them with peaches, sprinkling layers with sugar.
- Lay a towel on the bottom of a large pot. Put on it banks with peaches, cover them with sterilized lids.
- Pour water into the pot. Its level should reach the shoulders of the cans.
- Put the pan on a slow fire. Gradually, the peaches in the bank will produce juice and settle. Fruits should be reported until they are almost completely covered with juice. It will take 1-1,5 hours, depending on the size of the cans.
- Remove the jars from the pan, hermetically seal them. Turn over, cover with a warm blanket, leave to cool in this form.

Peaches in own juice without sugar
Composition (1 l):
- peaches - 0, 8-1 kg;
- water - 0, 3-0, 4 l.
Method of preparation:
- Prepare the peaches by washing them out, dried them and, if necessary, peeled from the skins.
- Cut the fruit, remove the bones.
- Cut the peach flesh into large slices.
- Sterilize the jars, fill them with slices of peaches.
- Boil the water. Pour it into a jar of fruit.
- Put a towel on the bottom of the pan, put jars with blanks on it, cover them with lids that have previously been boiled.
- Pour water into the pan so that its level reaches approximately the hangers of the cans.
- Place the pan on the stove. Over low heat bring the water to the boil in a saucepan.
- Sterilize until the peaches are completely covered with juice, but at least 30 minutes a liter jar, 20 minutes a half-liter jar.

Method of preparation:
- Pick out medium-sized ripe peaches. Wash them, lower for 2-3 minutes in boiling water, put into a container with cold water, and clean the skin.
- Sterilize the jars and their lids.
- Fill the jars with whole fruits.
- Boil clean water, pour boiling water over peaches, cover with a lid. Wrap the fruit jars and leave for half an hour.
- Pour the liquid from the cans into the pan, add the right amount of sugar and citric acid. Bring to a boil and boil for 5 minutes.
- Fill the peaches with the prepared juice, roll the cans.
