Traditionally, diet and sweets are considered incompatible. French nutritionist Pierre Dyukan broke this stereotype by developing a diet plan for weight loss, in which there was a place and the usual desserts. These include cakes and pies, many of which are hard to imagine without custard. If you use the recipes invented by the followers of the doctor, these delicacies will not threaten the figure. Dukanu custard is prepared according to special recipes, thanks to which it turns into a dietary dish. It can be used to make sweet pastries or eat as a stand alone dessert.

Cooking Features

Inexperienced housewives are insecure when it comes to cooking custard. Traditionally it is considered that the technology of creating this dish is complex and an inexperienced chef cannot do it. In fact, the process has several subtleties, without knowing which the result may not meet the expectations. However, clearly following the detailed instructions accompanying the recipe, it is almost impossible to make a mistake. People who follow the Dukan diet successfully cope with the task, even without cooking experience. Knowledge of a few points helps them.

  • The Dukan Diet does not allow for the use of sugar. For sweetening, sweeteners with zero calories are used. Not all of them equally well help to thicken the cream. Preference is given to erythritol-based sugar substitutes. These include the Fitpard sweetener, which is popular among Dukan followers.
  • Cornstarch will help to thicken the cream, but its use is allowed starting only from the second stage of the Dukanov diet. If you are in the first stage, you will have to select a recipe without this component.
  • Dukan custard is made on the basis of milk and eggs. The essence of technology in brewing these components. This happens when the ingredients are heated in a water bath. If you are cooking the cream on the stove, the fire should be made minimal, but in this case there is still the risk that the eggs will roll. When preparing a cream in a water bath, there is no such risk.
  • When brewing, the cream should be constantly whipped with a whisk or stirred to prevent the formation of lumps. If this could not be avoided, the cream is ground through a sieve, and it acquires a smoother texture.
  • The heat treatment that products undergo during the preparation of custard is minimal, so eggs can be used only for those that you are sure are safe. But even they need to be washed with soap and water before use.

Starch, milk powder and some other components that make up the custard are allowed during the observance of the Dukan diet in limited quantities. This must be taken into account when determining how much custard or dessert with it can be eaten during the day.

Dukan's classic custard recipe

Composition:

  • skimmed milk - 0, 5 l;
  • powdered sugar substitute (“Fitpard” or similar) - 15 g;
  • chicken egg - 2 pcs .;
  • vanilla extract - 2-3 drops.

Method of preparation:

  • Wash eggs with soap. Smash, separating the yolks from proteins. Proteins for making custard in this recipe will not be required.
  • Combine yolks with sweetener. If the sweetener is in tablets, it must first be crushed to a powder or dissolved in a teaspoon of water.
  • Whisk the yolks. Beat until yolks are completely light.
  • Add vanilla extract to milk. Heat it until bubbles appear.
  • Place the container with the yolks in a water bath or low fire.
  • Beat the yolks with a beater, trickle, and pour warm milk into them.
  • Continue heating the mixture, stirring it until the cream thickens.
  • Move the cream pot to a bowl filled with ice. Cool, while stirring. If necessary, strain the cream to get rid of lumps.
  • Spread the cream on the creamer, put it in the fridge.

The cream is served as a stand-alone dessert or with fruits that are allowed from the third stage of the diet. If you are preparing a cream for a layer of cake or filling eclairs, it is desirable to use it warm.

Dukan chocolate cream

Composition:

  • egg yolks - 3 pcs .;
  • skimmed milk - 0, 5 l;
  • corn starch - 40 g;
  • cocoa powder (fat-free) - 20 g;
  • vanillin, sweetener - to taste.

Method of preparation:

  • Combine a glass of milk with a sugar substitute, heat up.
  • Pour some milk, mix cocoa powder in it, mix with sweet milk. Add vanillin, mix well.
  • Separate the egg yolks, whisk. Mix them with unused milk and starch.
  • Pour 50 ml of cocoa into the yolk mixture and whisk. Enter the remaining drink in portions.
  • Whip the chocolate mixture with a whisk and place in a water bath. Heat by stirring until the cream thickens.

It will remain to spread the cream on the vases and cool. This dessert will appeal to those who are not indifferent to chocolate.

Dukan custard without eggs

Composition:

  • skimmed milk powder - 50 g;
  • corn starch - 20 g;
  • sweetener - 10 tablets;
  • whole milk (with fat content not more than 1, 5%) - 0, 25 l.

Method of preparation:

  • Grind the sugar substitute, mix it with starch.
  • Combine starch with dry milk, mix.
  • Heat up the liquid milk, mix it with dry ingredients.
  • Pour into container suitable for use in microwave oven.
  • Microwave for 30 seconds, turning it on at maximum power.
  • Stir, put in the microwave again, turning it on for 30 seconds.
  • Repeat the procedure until the cream thickens.

This cream can be called scrambled only conditionally, since the technology of its preparation is significantly different from the traditional one, but it tastes good.

Dukan custard is low-calorie, which allows you to use this dessert, even those who follow a diet to lose weight. Knowing the nuances of making this delicacy, even an inexperienced cook will cope with the task.
