Many people like the diet designed by Pierre Ducane for allowing them to eat sweets, albeit cooked according to special recipes. Allowed products that can be used for baking, adhering to the Dukanov diet, a little, and some of them are permissible to use in strictly limited quantities. Oat bran is allowed in the amount of 1, 5-3 tablespoons, depending on the stage of the diet, starch - in the amount of 20 g, starting from the second stage. All of these products are required for making pancakes, pancakes, and baked puddings, and many people spend them on preparing main dishes, and there is almost nothing left for desserts. Ducane meringue can be made for tea, even if nothing is left of the additional products.

Cooking Features

Sugar is not included in the list of allowed products of the Dukanov diet. Sweetening is allowed only low-calorie sugar substitutes. There is an opinion that it is impossible to make meringue from a sugar substitute - the dough will not have the desired viscosity. However, the followers of Dukan found a solution to this problem. By following the recommendations below, you can cook tasty meringues without disturbing the diet.

  • Not all sugar substitutes have the same properties. Proponents of the Dukan diet found that erythritol-based sweeteners (“Erythritol”, “Fitparad”) provide the proper effect. When using other sugar substitutes, the dough must include starch or crushed bran in the powder - they will provide the necessary viscosity and creepiness.
  • It is convenient to use a sugar substitute in the form of a powder for making meringue. If this is not the case, the tablet will do. Before its introduction into the protein mass, it should be crushed to the state of powder; for reliability, you can even sift the resulting powder.
  • In order for the whites to be well whipped, the eggs must be cooled before this. Hold for some time in the refrigerator will not interfere with the pan and mixer tips.
  • If even a drop of fat or yolk gets into the protein mass, it will be very difficult to whip it. Therefore, wash the dishes, with which you intend to prepare cakes, you need to carefully.
  • Proteins will be better whipped if you add a little citric acid to them. This product is added very little, at the tip of a knife.
  • Beat the proteins on the meringue to the peaks, that is, to such a state that when extracting the rim from them, the protein mass lasts behind it, and such a peak stays on the surface for a long time.
  • It is necessary to bake meringue at a low temperature, but for a long time.
  • To prevent cakes being burnt, spread the dough on parchment. Between the meringues you need to leave a distance, as during cooking, they will increase in size.

You can cook the meringue according to Dyukan not only in the oven, but also in the microwave and the slow cooker, by choosing the appropriate recipe.

Ducane Meringue without Starch


  • chicken egg - 2 pcs .;
  • erythritol sugar substitute or equivalent - 70 g;
  • citric acid - a small pinch;
  • vanillin - 1 g;
  • xanthan gum (optional) - 1 g.

Method of preparation:

  • Separate the whites from the yolks, cool.
  • Add citric acid to the proteins, whisk them to the peaks.
  • Add a sweetener in a spoon, without stopping to beat the protein mass. Before that, it must be crushed to the state of powder, using a coffee grinder.
  • Lastly add vanillin and gum, whisk again for 5-10 seconds.
  • Place the protein mass in the culinary bag.
  • Cover baking tray with parchment paper.
  • Squeeze the balls, leaving a distance of about 2 cm between them.
  • Place in an oven preheated to 120-140 degrees.
  • Bake for 25-40 minutes.
  • Turn off the oven, leave it for another 5-10 minutes.
  • Merengues cooked according to this recipe can be eaten at any stage of the Dukanov diet, even on Attack.

Meringue for this recipe can be cooked in the microwave. Squeeze the dough on a dish covered with parchment, put it in the microwave. The unit is turned on for minimum power for 20 minutes. Dried meringues for an hour on a sunny windowsill or near the stove.

Chocolate meringue by Dyukan in a slow cooker (with bran)


  • chicken egg - 2 pcs .;
  • citric acid - a pinch;
  • sweetener “Fitparad” - 20 g;
  • sweetener “Milford” - 12 tablets;
  • cocoa powder - 5-10 g;
  • oat bran - 10 g;
  • baking powder for the dough - a pinch.

Method of preparation:

  • Separate the whites from the yolks; no yolks are required for meringue.
  • Add citric acid and crushed Milford tablets to proteins. Beat with a mixer at low speed, then at maximum speed.
  • When the protein mass becomes so dense that it does not spill when the pan is tilted, stir the remaining ingredients, enter into the protein mass, whisk for a minute.
  • Lay parchment paper on the bottom of the multicooker. From the cooking syringe, squeeze the protein dough balls onto it.
  • Turn the unit on for 30 minutes in Baking mode. Leave for 15 minutes for heating.

Chocolate meringues can be baked in the oven. Bake them for half an hour at a temperature of 140-150 degrees.

Ducane Meringue with Starch and Curd Filling


  • egg whites - 4 pcs .;
  • corn starch - 20 g;
  • stevia powder - 150 g;
  • sweetener for cottage cheese (any) - to taste;
  • vanillin or other flavoring - to taste;
  • citric acid - a pinch;
  • baking powder for dough - 5 g;
  • low-fat cottage cheese - 0, 2 kg.

Method of preparation:

  • Whisk the egg whites with citric acid and stevia to the peaks.
  • Add flavor and starch, beat for another minute.
  • Put the dough on a parchment-covered baking sheet, pressing down in the center to form indentations.
  • Place the oven in a preheated 140 degree oven for 25 minutes.
  • Whip the curd with a sweetener.
  • Fill meringue baskets with cottage cheese mass.
  • Return to the oven for 5-10 minutes.

Such cakes can be included in the menu, starting from the second stage of the Dukanov diet.

Ducane meringue is prepared using a sweetener, which is why it is low-calorie. You can eat it without fear of gaining extra weight.
