Despite the difference in compote preparation technologies with and without sterilization, making cherries and strawberries for the winter, you can follow several general rules.

  • It is not necessary to pick berries on compote in cloudy weather: they will be tasteless and watery.
  • It is unacceptable that the berries in the compote look unattractive, having lost their beautiful shape. Do not use overripe berries, as well as spoiled by insects or pecked by birds. From such fruits need to get rid of without regret.
  • Wash the berry gently so as not to damage it. To do this, it is first washed in a basin of water, then washed under the shower.

Cherry and strawberry compote with sterilization

Composition (4 liters):

  • sweet cherry - 0, 8 kg;
  • strawberries - 0, 6 kg;
  • sugar - 0.5 kg;
  • water - 3 l;
  • citric acid - 4 g.

Method of preparation:

  • Loop, wash the berries. Spread them on a towel so that it absorbs excess moisture - so the berries dry out faster.
  • Remove straws from strawberries, twigs from cherries.
  • Sterilize the jars and lids to them.
  • Arrange the cherries and strawberries in the jars. Tanks should be about half full. First put the cherry, strawberries lay out the second layer.
  • Pour sugar in a saucepan, cover with water.
  • Heat until the syrup boils. Add citric acid. Cook the syrup for 10 minutes.
  • Pour hot syrup into cans. It should reach the very edges.
  • Cover the jars with lids, but do not tighten.
  • Put a towel on the bottom of the pan, put the jars on it.
  • Pour water into the pan so that its level reaches the hangers of the cans.
  • Put on a slow fire. After the water in the pan begins to boil, sterilize the jars with compote 10-20 minutes: 10 minutes is required for a 1-liter jar, 20 minutes for a two-liter jar.
  • Remove the jars from the pan, roll them up.
  • Turn the jars over, cover with a blanket and leave to cool in this form.

After cooling, cans with compote can be removed to the pantry. The drink according to this recipe is obtained concentrated, before serving it should be diluted with clean cool water.

Composition (3 liters):

  • pitted sweet cherry - 0.5 kg;
  • strawberries - 0.5 kg;
  • granulated sugar - 0.5 kg;
  • water - 2-2, 5 l.

Method of preparation:

  • Wash and dry the berries.
  • At the sweet cherry, tear off the branches, remove the bones from it. This can be done with the help of a special device or using a pin, clip.
  • In strawberries unscrew the sepals.
  • Stir the berries.
  • Pour into sterilized three-liter jar.
  • Boil the water, preferably with a supply, so that it will certainly be enough to fill the jar.
  • Pour boiling water over berries. To prevent the jar from cracking at this time, place a knife blade under it.
  • Cover the jar with a lid, leave for 20 minutes.
  • Pour the liquid from the can into the pan through the lid with holes, add sugar to it.
  • Bring the syrup to a boil and cook for 10 minutes.
  • Fill the berries with hot syrup, roll them up.
  • Leave to cool, turning and covering with a warm blanket.

Despite the fact that the compote has not been sterilized, it costs well and can be stored even at room temperature. Before use, it is recommended to dilute the drink with water.

Compote from sweet cherry and strawberry with mint

Composition (3 liters):

  • sweet cherry - 1, 5 kg;
  • strawberries - 0, 25 kg;
  • water - about 1 l;
  • sugar - 0, 35 kg;
  • citric acid - 4 g;
  • mint - 1 sprig.

Method of preparation:

  • At the bottom of the sterilized jar, place the washed and dried mint sprig.
  • Wash the cherries, let it dry. Free from the twigs, pour into the jar.
  • Strawberries, washed, spread on a napkin. When the berry dries, put it on the cherry. The jar will be almost full to the shoulders.
  • Boil water, pour into the jar, leave for 15 minutes.
  • Pour the berry infusion into the pan, mix with the sugar. Cook the syrup. It should boil for about 10 minutes.
  • Pour syrup into the jar of berries, roll it up.
  • Turning over, cover with a blanket, leave to cool. After clean in the pantry.

Compote made according to this recipe has a rich and refreshing taste. Before serving, it is diluted with cold water. You can add ice cubes to the glass.

Even if you do not have a lot of berries, it makes sense to make at least a little compote of cherries and strawberries for the winter. When you open it, it will remind you of summer and lift your spirits.
