However, our compatriots most often under the lobio understand beans, stewed with vegetables, most often with the addition of walnuts and spicy herbs, quite spicy, as it should be for Georgian dishes.

If you want to cook the beans in such a way that the dish from it is the most consistent with the traditions of Georgian cuisine, was tender and tasty, you need to know a few secrets.

  • White beans are boiled soft for a long time, so before cooking it should be soaked for at least 6 hours. This will not only significantly reduce the time of cooking, but also relieve the problems with increased gas formation in the intestines, which often arise after eating foods from legumes.
  • The beans will be even softer and more tender if you soak them in a beer.
  • Onion is an essential ingredient in lobio.
  • It is necessary to simmer the beans on a slow fire for a long time so that it becomes completely soft.
  • In white bean lobio, unlike red bean lobio, tomato paste or fresh tomatoes are rarely added, although it is still possible to use them. They will give the dish a different color, but the taste will not spoil it, quite the contrary.
  • If you want to add a sour dish, you can pour into it a little wine vinegar when cooking, but it’s very important not to overdo it.

Served white beans are often hot, but it will be tasty and chilled, so it will replace the salad with success.

Classic White Bean Lobio Recipe

Composition:

  • white beans - 0.5 kg;
  • onions - 100 g;
  • carrots - 100 g;
  • garlic - 2 cloves;
  • vegetable oil - how much will leave;
  • salt, hop-suneli - to taste;
  • hot peppers - 1 pc .;
  • walnut kernels - 100 g.

Method of preparation:

  • Fill the beans with plenty of water, leave for 8 hours. Rinse well and pour into a saucepan. Fill with water so that it is 2 cm above the level of the beans. Boil the beans for 1, 5 hours on low heat. Make sure not to boil all the liquid, and then the beans will burn.
  • Peel carrots, coarsely grate.
  • Peel the onion, cut into cubes of medium size.
  • Fry vegetables in vegetable oil until soft.
  • Put the vegetables in the pan with the beans.
  • Finely chop the nuts with a knife and add to the beans too.
  • Wash hot pepper, remove seeds from it, and rotate pepper through a meat grinder without seeds. Chop garlic in the same way. Add them to the dish.
  • Stir the lobio, if necessary add a little water, add some salt, season and simmer for an hour.

Before serving, beans should be slightly kneaded, but not mashed. Keep in mind that the dish prepared according to this recipe will be very spicy: it should not be eaten by children and people suffering from diseases of the gastrointestinal tract. Georgian white bean lobio

Composition:

  • white beans - 0.5 kg;
  • onions - 0, 4 kg;
  • fresh coriander - 100 g;
  • walnuts - 100 g;
  • salt, spices - to taste;
  • vegetable oil - how much will leave.

Method of preparation:

  • Soak the beans overnight, rinse and boil for an hour. Salt and continue cooking for another 10 minutes. During cooking, watch the water level so that the beans do not burn. If water remains after cooking, it can be drained
  • Peel the bulbs. Cut them into thin half-rings. Heat the oil in a cauldron or thick pot. Put the onion in it and fry it until golden brown.
  • Transfer the beans to the onions. Fry it with him, not sparing oil.
  • Chop nuts and garlic, as well as cilantro with a knife. Add it all to the beans, season it, stir. Stew for an hour, if necessary, adding water (it should not be much).

Lobio made using this recipe is suitable for the whole family.

White beans lobio in tomato juice

Composition:

  • white beans - 0.5 kg;
  • sweet pepper - 0, 2 kg;
  • garlic - 2 cloves;
  • onions - 100 g;
  • carrots - 100 g;
  • cilantro - 100 g;
  • basil - 10 g;
  • vegetable oil - how much will leave;
  • salt, pepper - to taste;
  • bay leaf - 2 pcs .;
  • Tomato juice - 0, 25 l.

Method of preparation:

  • Sort the beans, rinse. Soak overnight in water. In the morning, wash it again, boil it in clean water until soft. When boiling for 15 minutes until cooked, add salt and laurel leaves.
  • Chop fresh cilantro with a knife.
  • Peel the vegetables. Cut the carrots into thin straws or grate on a Korean salad dressing. Cut onion into small cubes. Garlic skip through the press. Pepper from the seeds, cut into small squares.
  • Heat the oil in a cauldron or thick-bottomed saucepan, fry the onions, peppers and carrots in it. Add 50 ml of juice, put greens and garlic, sprinkle with basil and stew for 5 minutes.
  • Put the beans in the vegetables, pour in the remaining juice. Pepper dish.
  • Stir and simmer under a lid over low heat for 20 minutes.

Lobio with tomato juice is tender and juicy.

Lobio of white beans with chicken breast in a slow cooker

Composition:

  • white beans - 0, 25 kg;
  • chicken breast - 0, 2 kg;
  • tomatoes - 0, 2 kg;
  • purple onions - 100 g;
  • walnuts - 50 g;
  • vegetable oil - 30 ml;
  • salt, herbs, spices - to taste.

Method of preparation:

  • Put the pre-soaked and washed beans into the multicooker bowl. Pour into it two multi-glasses of water (only 360 ml). Turn on the extinguishing program for 1 hour.
  • Cut the raw chicken breast in small pieces, put it to the beans 20 minutes before the end of the program. At the same time, salt and season the dish.
  • Remove the beans from the chicken breast from the slow cooker. Wash the bowl of the multicooker and wipe it thoroughly so that it is dry.
  • Cut the onion into half rings.
  • Peel the tomatoes and rub through a sieve.
  • Finely chop the walnuts, chop the greens.
  • Pour oil into the multicooker bowl, put onions and fry it for 15 minutes. To do this, fit the program “Frying” or “Baking”.
  • Add tomato puree, spices, herbs and nuts. Return the beans to the multicooker bowl. Mix everything.
  • Run the Quenching Program for 30 minutes.
