Ingredients:
• half a kilo of minced meat (pork with beef);
• rice cereal - 200 g;
• 3 onions;
• egg;
• 1 carrot;
• 30 g of tomato;
• salt - 20 g;
• Allspice in powder - at will;
• flour for sprinkling.
Preparation:
1. Wash the washed rice in a small saucepan and cook for 20 minutes. Throw back in a colander, wash. 2. Spread the boiled rice in the stuffing with two chopped onion heads.
3. Add the egg to the mince, salt, pepper, stir thoroughly and let it brew a little.
4. While the stuffing is infused, put the chopped onion head in a cast-iron skillet, carrot on a fine grater and cook with vegetable oil on moderate heat for 3 minutes.
5. Shape minced balls, sprinkle with flour.
6. Put the meatballs on a hot frying pan with butter and fry until slightly crisp crust, turning it over three times.
7. Fried “hedgehogs” are shifted to the cast iron skillet with stewed vegetables, well stirred.
8. Fill tomato puree diluted in water to almost full coverage, add some salt, turn on low fire and simmer for 20 minutes.

Ingredients:
• 600 g of pork and ground beef;
• 1 carrot;
• 3 onions;
• chicken egg;
• sour cream - 300 g;
• a few cloves of garlic;
• salt - 20 g;
• allspice - on request;
• long grain rice - 250 g;
• parsley leaves - 1 bunch;
• a little oil for frying.
Preparation:
1. Cut two heads of onion into small crumb, put in minced meat, add rice, chopped garlic, parsley, egg, washed and boiled until half cooked, add salt, pepper, stir well and let it brew for 25 minutes.

Ingredients:
• 3 medium chicken breasts;
• rice groats - a floor a glass;
• a piece of butter;
• A couple of garlic cloves;
• 3 onions;
• 1 carrot;
• olive oil for frying - 30 ml;
• defatted sour cream - 300 ml;
• parsley - 1 bunch;
• salt - 10 g;
• allspice - 1 teaspoon;

Preparation:

Ingredients:
• any stuffing - half a kilogram;
• long grain rice groats - 12 tbsp. spoons;
• broth from meat - 2 glasses;
• a pair of onions;
• 1 carrot;
• sour cream - 30 g;
• 2 tbsp. spoons of tomato;
• 1 egg;
• allspice in powder - 30 g;
• salt - 1 teaspoon.
Preparation:
1. In the stuffing we fill in raw rice, add onions, chopped finely, crush an egg, add some salt, pepper, mix everything thoroughly, let it brew for 25 minutes.
2. Prepare the gravy: finely chop the carrot and onion, put it into a cast-iron deep pan, combine them with sour cream and tomato puree, pour all the meat broth.
3. We form meat balls, sprinkle with flour and lay them in the prepared vegetable mixture.
4. Put the pan on low heat, simmer with the lid closed for 25 minutes. 5. We put the ready-made “hedgehogs” 2 pieces per serving plate with any side dish (it is possible without a side dish), pour with sour cream sauce, and sprinkle with chopped parsley leaves.
5. Spicy minced hedgehogs with rice in a frying pan
Ingredients for minced meat:
• half a kilogram of pork and beef mince;
• incomplete cup of long grain rice;
• chicken egg;
• large onion head;
• 1 carrot;
• A couple of garlic cloves;
• dry basil, coriander - 20 g each;
• allspice powder - 30 g;
• salt - 1 teaspoon;
• a floor of a bunch of parsley.
On sauce:
• medium fat sour cream - 1 cup;
• 2 tomatoes;
• a few cloves of garlic;
• flour - 10 g;
• incomplete glass of boiling water.
Preparation:
1. Boil pure rice in lightly salty water for 10 minutes, throw in a colander to drain the liquid.
2. A small piece of beef and pork scrolls through a meat grinder with onions, carrots and garlic.
3. Add the egg to the minced meat with onions and carrots, add some salt, pepper, add basil, coriander or any other spices, thoroughly mix it with your hands and leave for 25 minutes.

6. Hedgehogs from minced meat with rice in a pan with cheese
Ingredients:
• slightly less than a kilogram of chicken lean meat;
• rice groats - 7 tbsp. spoons;
• onion head;
• garlic - 4 cloves;
• parsley - 1 bunch;
• egg;
• salt - 20 g;
• nutmeg - 20 g;
• pepper - half a teaspoon.
On Fill:
• “Hochland” cheese - 2 pcs .;
• sour cream - 300 ml;
• cream - a little less than a glass;
• parsley leaves - a bunch floor.
Preparation:
1. Cook rice 8 minutes, recline in a colander.
2. In the finished chicken mince, break the egg, add finely chopped onion, garlic, parsley, pepper, nutmeg, cooked rice.

• So that when forming hedgehog balls, the stuffing does not stick to your hands, do not forget to periodically dip your palms in cold water.
