Meatballs in tomato-sour cream sauce - the basic principles of cooking

Meatballs are cooked in different ways: fried, stewed or steamed. But they are especially juicy in sauce. In composition, meatballs are similar to meatballs, with the only difference being that cereals, vegetables, or mushrooms are added to ground meatballs.

Minced meat can be mixed or made from poultry meat. For children it is better to cook from chicken or turkey meat, or combine several types of meat. Finely chopped onions, boiled rice and other cereals, spices and eggs, boiled until half cooked, are added to the mince. Stir the meat thoroughly until smooth. Then the hands are moistened in water and form round-shaped meatballs of the same size.

Separately prepared tomato sour cream sauce. To do this, take sour cream and combine it with tomato paste, flour and spices. Mix well and gradually pouring the broth or boiled water, bring the sauce to the desired consistency. Meatballs are poured over the sauce and braised until cooked on the stove, in the oven or in the multicooker.

This dish can be varied by adding fresh vegetables or mushrooms to the mince. In general, you can safely experiment, combining a variety of products.

Recipe 1. Meatballs in tomato-sour cream sauce

Ingredients

300 g mixed minced meat;

ground black pepper;

50 grams of rice;

salt;

bulb;

25 ml of lean oil;

40 g of flour;

egg;

60 g sour cream;

Bay leaf;

30 g tomato paste;

60 ml of filtered water.

Method of preparation

1. Boil the washed rice until cooked, fold to a sieve and leave until the cereal has cooled.

2. Add cooled rice to mince. Beat in the egg, salt and season with pepper. Knead the mince thoroughly with your hands until smooth. 3. Peel the bulb, finely crumble. Put it in a saucepan. Add vegetable oil and tomato paste. Put on a moderate heat and fry for four minutes, stirring constantly.

4. Combine sour cream with flour. Stir. Add sour cream in tomato sauce, pour in water and put bay leaf.

5. Mince small round meatballs. Dip them one by one in a tomato-sour cream sauce and cook 15 minutes on low heat. Serve the meatballs with a side dish or vegetable salad.

Ingredients

600 g mixed minced meat;

5. Put sour cream in a bowl, add tomato paste, vegetable oil and flour to it. Salt and stir well. Season with a mixture of herbs, pour a glass of filtered water and mix again.

6. Put the meatballs in a deep mold, and pour them over with the sauce. Put in the oven and bake until done. At the end, turn the grill on to make the meatballs brown. Serve with mashed potatoes or pasta.

Recipe 3. Meatballs in tomato-sour cream sauce in a slow cooker

Ingredients

ground beef - half a kilogram;

salt;

small onion head;

tomato paste - 60 g;

half a multistack of rice;

Method of preparation

1. Rice cereal thoroughly washed several times replacing the water. We shift the rice into the crock-pot and fill with filtered water in a ratio of 1: 3. Close the lid and start the “rice” mode. Cook the cereal until half cooked. Put it in a bowl and cool it.

2. Add minced meat to rice and knead. We hammer in egg, we pepper, we salt and we mix once again.

3. We moisten hands in water and form balls of the same size of minced meat.

4. In the capacity of the multicooker pour corn oil. Run the program "frying" and fry the meatballs on both sides to light ruddy.

5. Dilute tomato paste with filtered water, add sour cream to the mixture and mix.

6. Fill the fried meatballs with sauce. Season with spices, close the lid and turn on the “quenching” program. Cooking meatballs for forty minutes. Put ready-made meatballs on a dish, pour the sauce in which they were prepared, chop greens and serve.

Recipe 4. Meatballs in tomato-sour cream sauce with tomatoes

Ingredients

four tomatoes;

100 g green onions;

bread - 100 g;

paprika;

200 ml of milk.

Method of preparation

1. Wash beef, dry and cut into medium sized pieces. Grind the meat through a meat grinder or using a blender. Put the minced meat in a bowl.

2. Peel the bulbs and cut them into four pieces. Rinse green onions and cut into large feathers. Place onions in a blender container and chop. Then add the green onions and continue chopping. Put the onion in the stuffing.

3. Fill the bread with milk and leave to soak.

4. On each tomato make a cross-cut and fill them with boiling water. Hold for five seconds, drain and remove thin peel from tomatoes. Grind the bread in a blender and send in mincemeat. In the same way, chop the tomatoes to a state of mashed potatoes. Add the paprika, salt and a tablespoon of vegetable oil to the tomato. Stir. 5. Form with wet hands from minced meatballs. Roll each into flour and fry until golden brown in hot vegetable oil. Put the finished meatballs on a plate.

6. Pour tomato mash into this pan and simmer for about five minutes. Add sour cream to the pan, stir and cook for another five minutes. Put the parsley sprig in the sauce.

7. Put the meatballs in a tomato-sour cream sauce, cover and simmer on moderate heat for 15 minutes. Pour in some boiling water and simmer the meatballs for the same amount of time.

Recipe 5. Meatballs in tomato-sour cream sauce without rice

Ingredients

250 g of beef and pork mince;

200 ml of drinking water;

250 g carrots;

salt;

250 g onions;

flour - 75 g;

75 ml of vegetable oil;

sour cream - 50 g;

eggs - 3 pcs.

Method of preparation

1. Combine two kinds of minced meat, put in an egg, season with salt and pepper.

2. Peel and finely chop the onion. Chop the cleaned carrots grated with fine holes. Fry the onions to light clarity in hot oil. Add carrots and continue to fry until soft.

3. Cool the fryer and add to the mince. Knead it well.

4. Form round meatballs of the same shape from mince and fry them on both sides until golden brown.

5. Combine the tomato paste with sour cream, mix, pour in boiled water, lightly salt and shake well.

6. Arrange the fried meatballs in a deep refractory form. Pour the sauce over all and put in the oven for 20 minutes, covered with a lid. Cook at 150 degrees.

Ingredients

5 g sugar;

300 grams of minced meat;

200 g of mushrooms;

Method of preparation 1. Boil thoroughly washed rice, drain in a colander, rinse and cool.

2. Clean the mushrooms. Chop the onion, garlic and mushrooms in a blender to a state of not too small pieces.

3. Stir the minced meat well, lightly beating it on the bowl. Add boiled rice, a mixture of mushrooms with onions, grated cheese, finely chopped dill. Season everything with pepper, salt and knead well.

4. Moisten hands with water and form meatballs of the same size with wet hands. Put in deep form.

5. Add sugar and sour cream to tomato juice. Stir. In a glass of cold water, dilute the starch. Add the mixture to the tomato-sour cream sauce. Stir and pour the meatballs with the sauce.

6. Cover the form with foil and place in the oven heated to 180 degrees. Cook for about an hour. Then remove the foil and keep in the oven for another five minutes.

  • If you make meatballs from ground beef or chicken mince, add a little bit of lard to it to make them juicy.
  • Before stewing the meatballs in the sauce, fry them until golden brown.
  • You can use juice or fresh tomatoes instead of tomato paste.
