Recipe 1: Homemade cottage cheese cookies
The basic recipe for cottage cheese cookies is quite simple, but it turns out very tasty, tender and airy. The perfect complement to lunchtime tea. So, to make cookies for this simple recipe, you will need about an hour of time and a minimum amount of ingredients.
Ingredients:
- medium-fat cottage cheese 250 gr.
- Butter (margarine for baking) 250 gr.
- Wheat flour B / C 300 gr.
- three eggs
- 150-200 gr. fine sugar
- half tea l. soda (extinguish with acetic acid)
- vanilla
Method of preparation:
1. Oil use frozen. Pour the sifted flour into the container, grate the butter on top. After that, using a kitchen knife, chop up the mass until it turns into a fine crumb.
2. Next to the resulting basis add ground cheese, slaked soda and vanilla. Quickly mix and let the mass stand for about ten minutes. Then on the table (or board) we knead the soft dough, cover it with foil and put it into the cold for ten minutes.
3. After the dough has cooled, cut it into three parts. From each roll a layer of average thickness (about 5 mm). With the help of a glass we cut out even round flat cakes.
4. Beat eggs with a fork (slightly). Pour sugar into a separate container. We take one tortilla, dip it on one side, first into the egg mass, and then into the sugar. We fold it in half, then also dip one side and fold it again in half. Thus, we have a folded triangle, the inside of which is covered with a mixture of eggs and sugar. We turn off all available cakes. 5. Heat the oven to 170-180C, cookies - on a greased baking sheet and in the oven for 25 minutes. “Pinwheels” from cottage cheese are also easy to prepare and do not require wasting a large amount of food and time. We will make the dough only by hand (without the help of a blender), otherwise the product will eventually lose its shape. Chicken eggs are not put into “Pinwheels”, but the peel is added, due to which the cookie has a pleasant citrus taste and aroma.
Ingredients:
- 200 gr. cottage cheese
- Butter about 200 gr.
- 200 gr. flour
- 200 gr. fine sugar (two thirds cup)
- half tsp of soda (to extinguish in acid)
- one spoon (tea) lemon rind
- half a cup of ground nuts
- any berry syrup to choose from
Method of preparation:
1. Pound the curd through a sieve, mix with fine sugar. Grate lemon zest, add it to the curd. Soft oil, pre-melted at room temperature, also mix with the mass until smooth. Here we send slaked soda.
2. Sift flour and pour into the cottage cheese mixture, starting a steep plastic dough. Pounded nuts mixed with berry syrup.

- 100 gr. medium-fat cottage cheese
- 100 gr. cheese
- one egg
- one and a half glasses of flour (or a little more)
- about 150 gr. dark chocolate
- half tea l. soda (to extinguish in acetic / citric acid)
- sugar 150 gr.
- vegetable oil (grease pan)
Method of preparation:
1. Mix the thawed butter with curd wiped through a sieve and fine sugar. Separately, we add unsalted cheese (the smaller, the better), mix it with slaked soda and sifted flour twice.
2. We combine cheese and flour and curd mass. Knead plastic rather steep dough. Remove it, covered with cling film, for half an hour in the fridge.
3. Then we get, divide into two parts, of which we roll out pancakes with a thickness of about five millimeters. With the help of glass we cut the cakes. One side of each flat cake is greased with a slightly beaten egg and sprinkled with sugar. Fold the cake in half, and then again (as described in the first recipe).
4. Send the cookies to the preheated oven for half an hour. While it is baked, we melt dark chocolate in a water bath and decorate the finished products at our discretion.
