Lush yeast baking is difficult to compete with. Ruddy buns in the form of rolls with cinnamon look on the tea table like strange edible flowers. Their recipe is not as complicated as it may seem, and the production time depends on the quality of the yeast: the dough should foam in a warm place for half an hour.
Soft cinnamon flavor goes well with lemon zest. Alternative or companion ground cinnamon can be fine nut crumb. Chopped blanks need to give a little distance.
Baking can be served with hot chocolate or thick cocoa with frothy.
Ingredients
Dough:
- water - 100 ml;
- sugar - 5 tbsp. l .;
- fresh yeast - 25 g;
- salt - 0, 5 tsp;
- butter - 70 g;
- vegetable oil - 2 tbsp. l .;
- wheat flour - 350-400 g.
Filling:
- ground cinnamon - 1 tbsp. l .;
- sugar - 2 tbsp. l .;
- vegetable oil - 1-2 tbsp. l for lubrication dough.
For lubrication:
- chicken yolk - 1 pc .;
- water - 1 tbsp. l .;
- icing sugar - 1 tbsp. l
Cooking
1. The required amount of fresh pressed yeast lightly chop and add to a deep bowl for cooking sourdough. There also add a little white sugar - about a spoon, and mix.
2. Pour the yeast in a deep bowl with warm water. Then gently mix with a spoon or spatula.
3. Sift the wheat flour through a sieve and add about 5 tablespoons to the plate with the yeast mass. Stir well with a spoon or a whisk so that no flour lumps form. After that, leave the plate in a warm place for 20-25 minutes so that the yeast has time to be activated and the dough weight doubled.
4. Meanwhile, in a separate bowl, mix the egg, the rest of the specified amount of sugar and salt. Stir with a whisk until smooth.
5. Add a small amount of vegetable oil and melted butter to a beaten egg. Then mix with a whisk or whisk with a mixer.
6. Add the prepared egg mixture to this brew and stir with a spoon or any convenient kitchen appliance.
7. Sift wheat flour and add to dough. Knead with a spoon, and then on the board elastic and elastic dough. If necessary, add wheat flour to the desired result.
8. Put the prepared dough back onto the plate and cover with a foil or towel. Leave it to infuse in a warm place for 30-50 minutes. The dough over time should be soft and rise to 1, 5-2 times.
9. Take the dough out of the bowl and put it on a floured board. Roll a whole piece of dough with a rolling pin into a rectangular layer. Grease with vegetable oil.
10. Mix the indicated amount of sugar and ground cinnamon in a convenient dish. Then spread the fragrant filling over the entire surface of the rolled dough. At this stage, you can add a little raisins or other dried fruits with nuts.
11. Roll the dough into one roll, then fix the edges.
12. Cut the roll into slices of about 2-3 centimeters.
13. Put the prepared semi-finished products on a pan, greased or covered with parchment paper. You can slightly pin them down if you want to get a more oval shape.
14. Separate the yolk from the protein and mix it with a small amount of boiled water and powdered sugar. Culinary brush grease the buns on top and put them to bake at a temperature of 180 degrees, 45-50 minutes.
