A popular diet developed by Pierre Ducane is one of the low carb diets. It would seem that any baking with this meal plan will have to be forgotten. However, among the recipes that Dr. Dyukan invented for his followers, you can find recipes for bread, casseroles, biscuits. The latter resemble externally thin cakes. The French wrap an omelet in them - this is one of the common options for a local breakfast. Dyukan tortillas do not contain flour and turn out useful, low-calorie. Cooking Features

In order to bake delicious cakes, which are not banned with the Dukan diet, you need to know and take into account a few points.

  • Instead of flour, oat bran is used to make tortillas for Ducan. They need to be consumed daily in a strictly defined amount: in the first stage - one and a half tablespoons per day, in the second and third stages - two tablespoons per day, after - three tablespoons. The number of cakes or products based on them that can be eaten during the day is calculated based on this requirement.
  • The chop is crushed to powder before use. It is convenient to do this with a blender or coffee grinder, but you can do without the use of kitchen appliances - just crush the product in a mortar.
  • Dukan flat cakes will taste better if they are flavored with fresh herbs, spices, cocoa powder. Most spices can be added at any stage of the diet. Fresh greens, vegetables are introduced from the second stage. From the third stage, you can bake cheese cakes. Adding cumin will make biscuits similar to Borodino bread. Products with basil will appeal to fans of Mediterranean cuisine. Cocoa and vanillin are suitable for sweet cakes. Turmeric will not only give baking a pleasant taste and aroma, but will also make its color more appetizing.
  • When preparing sweet tortillas, sugar is replaced by any of the permitted sweeteners. These include all sugar substitutes with zero calories.
  • It is not recommended to use vegetable oil during the Dukan diet, it is permissible to use it in the minimum amount. The pan, on which the cakes are baked, is smeared with a cloth moistened with oil. You can use the culinary brush. Pouring oil into the pan or add to the dough can not be. You can do without oil, if you do not fry cakes, and bake them in silicone molds.

Method of preparation:

  • Chop the bran to a flour state with a blender or in any other way.
  • Pour bran with kefir. Add salt or sweetener. If the sweetener you are using is in the form of tablets, it must be crushed to a powdered state before adding it to bran and kefir.
  • Leave the mixture for 10-15 minutes to make the bran swollen.
  • Add the curd, grind until smooth.
  • Break the egg, separating the yolk from the protein. For the “Attack” stage, only egg white is used; at subsequent stages, you can add an egg entirely, but in stages: first the yolk, then the white.
  • Beat the whisk with a whisk, add to the dough, and mix gently.
  • Apply a few drops of oil to a pan with a teflon coating, smear it with a brush or cloth.
  • Warm up the pan, put the dough on it, carefully leveling it.
  • When the flat bread is reddened on one side, turn it over with a wide spatula and brown it on the other side.

At the “Attack” stage, three quarters of the biscuits prepared according to this recipe can be eaten per day, in the subsequent stages you can eat the whole cake.

Dukan flat cake with bran and zucchini (for the “Alternation” stage)


  • oat bran - 25 g;
  • corn starch - 15 g;
  • zucchini - 0, 2 kg;
  • chicken egg - 1 pc .;
  • baking powder - 3 g;
  • salt - to taste;
  • vegetable oil - how much will leave.

Method of preparation:

  • Zucchini wash thoroughly, pat dry with paper towel. Peel and pulp with seeds. The skin is easily removed using a peeler. Seeds are easy to remove with a spoon.
  • Coarsely rub the zucchini, add some salt, leave for 5-10 minutes, then squeeze.
  • Put the squash sauce into a bowl, add crushed bran, baking powder and starch to it, mix.
  • Add the egg, grind to homogeneity. Allow bran to swell (5 minutes is sufficient).
  • A thin layer of grease pan with non-stick coating, heat up.
  • Pour dough into the pan, fry until appetizing hue on one side. Turn and fry until cooked.

Serve this flat cake with low-fat yogurt. Based on it, you can make a sauce by adding a bit of garlic and chopped greens to the dairy product.

Dukan Cheese Cakes


  • oat bran - 25 g;
  • wheat bran - 12 g;
  • chicken egg - 1 pc .;
  • low-fat yogurt - 60 ml;
  • cheese with a fat content of not more than 15% - 20 g;
  • baking powder for dough - 3 g;
  • salt, spices - to taste;
  • vegetable oil - how much will leave.

Method of preparation:

  • Mix bran, crushed to flour, with yogurt, leave for 10 minutes.
  • Break an egg into a bowl of bran, carefully rub it.
  • Add finely grated cheese, baking powder, salt. Mix well.
  • Lubricate the pan with oil, heat it.
  • Pour in the dough, fry the cake on both sides.
  • Just fry the rest of the tortillas.

Cheese flat cakes can be cooked starting from the third stage of the Dukan diet.

Dukan flat cakes can be sweet and savory. They are able to replace bread, pita bread, cake cakes, and pizza base. True, they are made from bran, so include them in the menu can be in limited quantities.
