Vegetable salad with avocado is a light vegetable salad that is suitable for a lean and vegetarian menu. In the diet menu this dish can also be included, however, if you decide to part with those extra pounds at the waist, then reduce the amount of olive oil in the dressing and take only half the avocado, instead of the whole fruit.
Prepare a salad just before serving - chopped fresh vegetables lose their taste, the avocado salad becomes “wet” and tasteless if you keep it for several hours.

Ingredients of Lean Salad with Avocado
- 1 avocado;
- 1 red onion;
- 1 fresh cucumber;
- 1 \ 2 head of Iceberg lettuce;
- 3 tomatoes;
- 1 teaspoon black sesame;
- lemon juice.
- 1 \ 2 lemons;
- 2 tablespoons of olive oil;
- 1 teaspoon dry seasoning for vegetable salad;
- 2 teaspoons of mustard;
- red pepper or paprika;
- sea salt to taste.
A way to make vegetable salad with avocado
Cut the avocado in half, pick up the bone. Remove the pulp with a dessert spoon, cut into thin slices, put into a salad bowl.
Avocado pulp quickly oxidizes in the air - becomes dark, looks unappetizing. To preserve the color of the fruit, pour it with freshly squeezed lemon juice, and in order not to get lemon bones into the lenten salad, we filter the juice through a strainer.
Cut the sweet red onion into thin feathers, add the chopped onion in the salad bowl to the avocado.
Cut the fresh cucumber into thin slices, send the sliced cucumber into the salad, following the onion. I advise you to peel a long green cucumber peeled and remove the change from it.
Cut in half a small head of “Iceberg”, cut the leaves coarsely or tear hands. There is an opinion that vegetables lose vitamins from contact with metal, they say, therefore, it is better to tear the salad with your hands. In fact, the loss of vitamins is negligible, so you can use a knife.
Cut ripe red tomatoes in half, cut the stem with a seal, cut the tomatoes into slices. If you use cherry tomatoes, it is better to add them entirely.
We make refueling. Squeeze a tablespoon of lemon juice in a bowl, add a pinch of sea salt, grain mustard and dry seasoning for vegetable salads.
Pour tasty olive oil (unrefined) into a bowl, pour a pinch of ground sweet paprika or red pepper, if spicy food is to your taste. Mix the dressing with a spoon so that it becomes homogeneous.
Pour the dressing into the salad bowl, mix the vegetables so that the dressing soaks every bite.
Sprinkle the salad with black or white sesame. In addition to sesame, you can sprinkle the dish with roasted pumpkin seeds or flax seeds, this will make the texture varied.
Immediately serve fasting avocado salad on the table. Fresh salad is obtained crunchy - (iceberg leaves, cucumber and red onion), with delicate splashes of avocado, ripe tomatoes and an appetizing, spicy dressing with a light sour lemon. Enjoy your meal!
