Cucumber is a common healthy vegetable. It contains glucose and fructose, potassium, organic acids, magnesium and vitamins, which help unload the digestive system, support the muscular and cardiovascular systems.
Fresh cucumber salad is present on our tables from early spring to late autumn. This vegetable is not suitable for long-term storage, therefore, as a rule, it is pickled and salted. But with the advent of refrigerators in the houses with roomy freezers or separate freezers, a new method of harvesting cucumbers was added.
Which cucumbers are suitable for freezing?
To freeze cucumbers must be healthy, fresh, with small seeds. Do not take yellow, lethargic or damaged skin. Fruits should be soaked for an hour in cold water, then washed, dried and cut on both sides.
Ways of freezing
Freeze circles
- Cucumbers should be cut into circles, about 2-3 mm thick.
- Spread out on a wooden board or cardboard and place in the freezer.
- After 6 hours pour the frozen circles into plastic bags, remove the air and place in the freezer.
Freeze by dice
For fans of Okroshka, the following recipe will do:
- Cut the prepared cucumbers into cubes;
- Pour a thin layer on a dish or plate and place in the freezer for 6 hours;
- Pour into bags or plastic cups, which cover or wrap; food wrap
- Store in refrigerator.
Freezing for soup “Tarator”
Frozen cucumbers are suitable for cooking soup “Tarator”, the Bulgarian analogue of our okroshka.
- Peel the cucumbers.
- Cut into small cubes and mix with chopped dill.
- Separately, take sour milk, mix with salt and mix thoroughly.
- Pour a mixture of cucumbers with greens tightly into jars and pour over milk.
- Cover the container and place it in the freezer.
- This ready-made soup should be defrosted before use.
Preparations for cosmetics
Cucumber - a wonderful cosmetic that moisturizes and nourishes the skin.
- Grind cucumbers on a fine grater.
- Together with the juice, break the mixture into vacuum bags, remove the air and store.
Cucumber juice
- Fruit mince through a meat grinder or juicer.
- Strain the juice and pour into small containers or ice molds.
- Place in freezing chamber.
- Shake the frozen cucumber cubes into packets and return to the chamber.
Thawing cucumbers is necessary for a long time. For the preparation of “Okroshka”, it is better to put the freezing in cold water or broth.
