Despite the fact that the kneading process is quite long, frying these pancakes is a pleasure!
Because, most likely, you will not have to scrape the first failed pancake from the pan, because these pancakes are perfectly baked, they do not burn at all and do not stick to the pan. Of course, if you do everything as described in the recipe with step by step photos.
Ingredients:
- milk - 2, 5 st .;
- flour - 2, 5 st .;
- sugar - 1, 5 tbsp. l .;
- eggs - 2 pcs .;
- dry yeast - 1 tsp;
- salt - 0, 5 tsp;
- sunflower oil - 100 g.
Method of preparation
1. In a capacious bowl or pot, pour a little more than a glass of milk warmed to 30-35 °. Pour dry yeast and wait until it dissolves.
2. Put salt, a little sugar and half the norm of flour.
3. Stir well with a whisk until the lumps disappear.
4. Cover the bowl with a lid or towel and place for half an hour in a warm place to lift.
5. Put the egg yolks and the remaining sugar in the cup.
6. Spread them with a spoon until smooth.
7. The dough has already risen.
8. Put the yolks in it and pour the remaining flour.
9. Knead the dough thoroughly with a whisk until smooth. As you can see, it turned out pretty thick.
10. Heat the remaining milk and stir it into the dough.
11. The dough will turn out to be of medium thickness and will flow down from the cooks in a thick trickle.
12. Pour oil and stir.
13. Again put the dough in a warm place for 15 minutes.
14. Beat the whites with a mixer until the foam is firm and place in a bowl with dough.
15. Gently mix from top to bottom, leave the dough for 15 minutes alone. During this time it will rise a little more.
16. Start baking pancakes. Heat a frying pan, grease it with oil and pour an incomplete scoop of dough. Bake over medium heat. As soon as the underside is reddened, and holes are formed on the dried up upper side, gently pry the pancake with a knife with a rounded end or a spatula, turn over to the other side and bring to readiness.
17. Put the baked pancake on a dish and proceed to baking the next. From this amount of dough you will get about 17-20 pancakes the size of a dessert plate.
18. Yeast pancakes are good with jam.
19. But if you don't like jam, you can eat it with sour cream.
