They are completely thorny and, on the contrary, they melt in the mouth. It is difficult to say how they differ in taste from meatballs, but the original appearance with a slight complication of technology is quite a reasonable price for children to delight in sweeping food off the plates.

Chicken hedgehogs with rice - the general principles of cooking

• For minced meat, you can choose any part of the bird carcass. The main thing - its juiciness, so you should not use only one breast. Stuffing will be ideal if for its preparation to take the breast fillet and meat from the hips, in the ratio of 1: 1.

• Vegetables are often added to mincemeat. They not only give extra juiciness, but also make the taste of the dish richer. Almost always a raw egg is mixed in the minced chicken, making it more viscous. But, it is worth noting, if the meat mass turned out to be watery, the egg should not be added, otherwise the stuffing will start to flow. Therefore, inject eggs, if necessary, last.

• Spices are practically not used, their choice is limited to ground black pepper, which is seasoned with meat twisted in a meat grinder or blended by chicken.

Ingredients:

• pitted chicken breast and thigh fillet - only 700 gr .;

• one Bulgarian pepper;

• bitter onion head;

• one egg;

• a quarter of a 250 gram cup of rice;

• ground, dried basil;

• one and a half teaspoons of flour;

• refined oil;

• Bank of tomatoes, canned in its own salted juice - 3 liters.

Preparation:

1. Wash the meat, chop and grind into mince with a blender. You can use the meat grinder, but then you need to install the smallest lattice on it and twist the chicken at least two times.

2. Peel the onions, select seeds from the pepper. Wash and grind in the same way as meat. We spread in a sieve and wait for the juice to run off, then we shift it to the stuffing.

3. Pour an egg into a bowl with minced meat, add finely ground pepper and the same fine salt, knead well.

4. We sort out the rice, wash the cereal with cold water and leave it, putting it on a sieve to dry. We shift dried rice to the stuffing and once again mix it well.

5. From the jar with tomatoes pour all the juice and select 100 ml in a cup. Add flour, stir - lumps should not remain. Pour the juice connected to the flour to its main volume, mix.

6. With the hands moistened with water from the stuffing, we form large balls and stack them into a refractory form in one layer. Fill with tomato, sprinkle with basil on top and place in a hot oven. Cooking hedgehogs at 200 degrees for at least forty minutes.

Dietary chicken hedgehogs with steamed rice (in a double boiler)

Ingredients:

• a pound of minced chicken;

• long grain rice - 150 gr .;

• one small carrot;

• large onion;

• large egg;

• non-aromatic oil;

• a sprig of any fresh greens.

Preparation:

1. Chicken fillet after washing, cut into pieces, grind in any convenient way into the stuffing. Season with pepper and lightly add, add chopped greens. 2. Shred onions and fry the pieces to transparency in vegetable oil.

3. Chop the carrot with a medium grater, add to the onion and stir while cooking until softened. Cool the vegetable roasting well, transfer it to the minced meat and, after breaking an egg into it, mix thoroughly.

4. Without the addition of salt, until half-cooked, boil only a portion of the recruited rice (at least 100 grams). Put it in a colander, rinse and, letting it drain all liquid, mix the boiled rice with chicken mince.

5. Remaining rice is sorted from litter and poured into a wide bowl.

6. From the cooked meat mass we form balls and, rolling in rice cereal, put them in a steam container (steamer grid).

7. Fill the bottom of the steamer with hot water for a third and set the grid with “hedgehogs”, cover with a lid.

8. Cook on low heat for about 25 minutes, after boiling.

Juicy chicken hedgehogs with rice with sour cream-tomato sauce

Ingredients:

• homemade minced chicken - 500 gr .;

• 200 gr. rice cereal;

• a tablespoon of thick, uncultivated tomato paste;

• egg;

• half a cup of drinking water;

• 20% sour cream - 200 gr.

Preparation:

1. We sort out the rice, wash it and, with a lot of cold water in it, put it on a strong fire. Stirring, wait for boiling, and, reducing the heat to medium, boil until half cooked. Water is not salted.

2. We transfer the boiled rice to a colander and, after washing for a while, leave it for a while, then transfer it to a bowl of minced chicken.

3. Add spices to your liking, break an egg into the meat mass and mix thoroughly until smooth. Then we moisten hands with water and form hedgehogs in the form of small balls.

4. In a frying pan at the maximum temperature, warm the oil well and put the meat balls in it. Fry them, often turning them over to achieve the formation of a dense brown crust, and shift them to the cauldron. We add the oil remaining in the pan to the same place.

5. Add a tomato mixed with sour cream, pour the semi-finished products with water so that it slightly covers them. Add quite a bit of salt and, if needed, spices. Move the cauldron to the fire, bring the sauce to a boil. Then lower the heat and slowly wean the hedgehogs under the lid for half an hour.

Chicken hedgehogs with rice in vegetable sauce

Ingredients:

• rice long-grain groats - 150 gr .;

• 700 gr. chicken, homemade minced meat;

• a pound of fresh tomatoes;

• egg;

• fresh garlic - 3 teeth;

• 150 gr. carrots;

• large onion;

• olive or high-quality sunflower oil;

• wheat flour - 10 tbsp. l .;

• Fresh dill, if desired - a little parsley and fresh basil.

Preparation:

1. We wash enumerated from litter fig. Fill with water and boil without adding salt until half cooked. Then wash and dry again, shifting to a sieve or small colander.

2. While the rice is being cooked, for two minutes we put the tomatoes in boiling hot water. Let the tomatoes cool by placing in cold water and gently separate the skin from the pulp. Cut into small slices, put in a saucepan. Cover with a lid, let it in its own juice over medium heat.

3. In parallel, in olive oil, until softened, fry the chopped onion. We lay out a carrot dabbed on a medium grater. Well stirring, fry until golden brown.

4. To the softened tomatoes lay out the roasting of onions and carrots. Add a little curry and, carefully mixed, simmer another ten minutes. Then turn off and cool slightly.

6. We form balls, roll them well in flour and lay them in butter heated in a pan. After frying from all sides, we shift it to a deeper frying pan or saucepan. Fill a glass of water and place on a small fire, simmer for at least a quarter of an hour.

7. Put the slightly cooled vegetable roast in the bowl of the blender. Add a little dill, parsley and basil, chop. The resulting puree is diluted with a glass of boiled (cold) water and poured to meat hedgehogs. After boiling stew meatballs in vegetable sauce for ten minutes.

8. At the end add chopped garlic, gently mix and remove from heat.

A simple recipe for chicken hedgehogs with rice in a tomato-cream sauce for the slow cooker

Ingredients:

• rice groats - 100 gr .;

• 400 gr. minced chicken;

• large onion;

• four small garlic cloves;

• sweet carrot;

• thick tomato puree - 2 tbsp. l .;

• two sprigs of fresh dill;

• three tablespoons of liquid, preferably 20%, sour cream.

Preparation:

1. Pour the cereal on the table, choose the trash and damaged grains. Pour into a deep bowl, pour half a glass of boiling water and set aside for 15 minutes.

2. Clean the carrot and onion, wash with water and rub both roots with a large grater.

3. Mince put in a bowl with rice and chopped vegetables. Thoroughly knead until uniform. Season with pepper, add a little.

4. We form ten balls from the prepared meat mass and place them in the cooking bowl.

5. In a deep bowl, mix the tomato and sour cream and dilute the mixture by adding 700 milliliters of cold water. Add a little pepper and paprika. We add them to our taste, comparing salinity to taste, and, stirring well with a whisk, pour it into a bowl. Ingredients:

• long grain, not steamed rice - 300 gr .;

• 400 gr. minced chicken;

• tomato paste - 30 gr .;

• two large onions;

• one carrot;

• 120 grams of medium-hot, good cheese;

• one Bulgarian pepper (red);

• egg;

• 50 ml of 15% sour cream.

Preparation:

1. Mix washed, well-dried rice with minced chicken. Season with pepper and add a little. Here on the middle grater we rub one onion, pour in egg for viscosity and mix.

2. Having received a homogeneous mass, with wet hands, we form hedgehogs - small balls. We spread them in the form of one layer. 3. Preparing refueling. Chop the rest of the onion into strips; in the same way, grind the carrot and pulp of the bell pepper. Strips of vegetables should be thin and not too long.

Chicken hedgehogs with rice - cooking tricks and useful tips

• Try to use home-made mincemeat - twist the meat yourself. If you decide to save time and take the purchase - give preference not to the frozen, but to the cooled semi-finished product.

• Before using purchased minced meat, be sure to re-twist it in a meat grinder with a fine mesh, it may contain large pieces of fat and meat. Often in the semi-finished product there are small bones.

• It is advisable not to fry the meat balls, as rice on swelling will not break the integrity of the crust and externally hedgehogs will resemble meatballs.
