Products for making this variant of Ducan ice cream are available, but eggs are used for it raw. This creates a risk of salmonella infection. To avoid trouble, you can only use products in the safety of which you are fully confident. Another option is to use a recipe without eggs.
Dukan Ice Cream Without Eggs
- low-fat cottage cheese - 125 g;
- skim milk - 150 ml;
- dry milk - 50 g;
- sweetener “Fitparad” - 5 scoops;
- agag-agar - 2 g;
- Goji berries (optional) - to taste.
- Mix powdered milk with 100 ml of liquid, add 3 scoops of sweetener, mix.
- Place the mixture in a plastic container. Pour some water on the bottom of the multicooker, put a container with milk mixture into the bowl of the device. Turn on the device in any mode except the “Yoghurt” mode for 5 minutes.
- Stir the contents of the container. Turn on the unit for 15 minutes in heating mode.
- Cool condensed milk.
- Mix the remaining liquid milk with 2 scoops of sugar substitute and agar-agar. Heat by stirring until the ingredients are completely dispersed in the milk. Allow the mixture to cool slightly.
- Add cottage cheese to condensed milk, whisk, add mixture with agar-agar, whisk together.
- Add goji berries, mix.
- Put the ice cream in the mold, put it in the freezer. Stir every half hour.
- After 1, 5 hours, arrange in portioned cups and refrigerate for another 2 hours.
Cooking diet ice cream without eggs is troublesome, but the result justifies the time spent.
Dukan Ice Cream with Guar Gum
- skimmed milk - 0, 25 l;
- guar gum - 1, 5-2 g;
- dry milk (optional) - 15-20 g;
- sweetener - to taste;
- fruit or vanilla flavoring - 3 drops.
- In 50-100 ml of liquid milk, dissolve the dry milk, guided by the manufacturer's advice. Cool the milk mixture to a temperature not higher than room temperature.
- Combine the cooked mixture with the rest of the milk, which until then is recommended to be kept in the refrigerator.
- Add guar gum, flavor and sugar substitute.
- Beat with a mixer until the milk begins to thicken. When it becomes like kefir or thin sour cream, you can proceed to the next step.
- Put the mixture in the freezer for an hour.
- Beat again. At this time, the consistency of the composition should be similar to sugar-whipped proteins for making meringue.
- Spread in tins and send to freezer for 3-5 hours.
