Grilled squash with a sauce of sour cream and fresh vegetables - a vegetarian dish that can be opened and closed the barbecue season. In early spring, young zucchini is available, in the summer in the garden full of a wide variety of zucchini, and in late autumn they fry mature vegetables on coals, peeling them from seeds and peel.
At home, in an ordinary city apartment, you can also treat yourself to delicious vegetables with a light aroma of smoke. In a special pan or electric grill, it is easy and simple to cook tasty and healthy vegetables with almost no oil. Zucchini obtained juicy, slightly crunchy, sour cream sauce with eggs and fresh vegetables perfectly complements this dish.

Ingredients for grilled zucchini with cream and vegetable sauce
- 1 zucchini;
- 1 fresh cucumber;
- 2-3 radishes;
- 1 chicken egg;
- 1/2 chili;
- bunch of parsley;
- 100 g sour cream;
- 10 g of wasabi;
- pepper, salt, olive oil.
Method of cooking zucchini grilled with creamy-vegetable sauce
Zucchini wash, wipe dry, cut into round slices about a centimeter thick. For this recipe, choose young zucchini with undeveloped seeds and delicate skin.
Salt, pepper, add any spices and seasonings at this stage is not necessary - they will burn on the grill, if you are cooking in a city apartment in the kitchen, then extra smoke is also useless.
In addition, salt draws water from vegetables, so there will be a lot of spray.
Pour zucchini with olive oil, it is the only ingredient needed to prepare products in this way.
Thoroughly mix the vegetables and butter so that the slices are covered with an oil film.
Heat up the grill for about 5-6 minutes. When the grill is ready to work, then if you sprinkle water on it, the drops bounce off and hiss. It is not necessary to grease with grilled butter - there is enough oil on vegetables.
Put the zucchini slices on the preheated grill, cook for several minutes on each side. To fry a zucchini slice about a centimeter thick, a total of 3-4 minutes is enough.
For the sauce, rub a fresh cucumber on a small grater. To make the sauce tasty and tender, I advise you to peel the cucumber. To the cucumber add finely grated radish or daikon.
Finely chop the bunch of fresh parsley. Half of the chilli pod cleared of seeds, cut finely.
Add chili and parsley to radishes with cucumber.
Egg boiled hard-boiled, rubbed on a grater or cut. Add the egg to the chopped vegetables.
Mix vegetables with wasabi and sour cream, salt to taste, sprinkle with freshly ground black pepper.
Mix the sauce, you can add a little lime or lemon juice, so to speak, add a sour note.
On a plate, put hot zucchini straight from the grill and thick vegetable sauce, decorate the dish with greens and serve immediately to the table. Grilled squash with cream and vegetable sauce are ready. Enjoy your meal!
