Ingredients:
• approximately 1 kg of flour (how much dough will take);
• liter of medium fat kefir;

1. At least one hour before cooking, place the container with kefir from the refrigerator and leave to warm up. You can warm the product in the microwave, in this case, make sure that it does not overheat, otherwise it will roll.
2. Pour warm kefir into a bowl, mix baking soda in it well and let stand for three minutes.
3. Salt, if the filling for the patties is sweet, add a little sugar, about half a tablespoon. Add a third of the flour and mix well. Continue until the flour evenly disperses the kefir and in the still batter will not leave its lumps.

• two glasses of wheat, with high gluten, flour;

3. The peculiarity of this recipe is that you should only knead with a spoon or special nozzles for the dough on a mixer. The mass is not steep, slightly thicker than for the pancakes.
4. After the dough is kneaded, it is spread on a lightly sprinkled with flour form for pizza. Evenly distributed on its bottom so that there are no irregularities on the surface, and only then spread the stuffing.
Universal quick dough on kefir for pies (with sour cream)
Ingredients:
• two spoons of 20% sour cream;
• 30 ml of refined oil;
• 2 fresh eggs;
• quicklime baking soda;
• 750-800 grams of white wheat flour;
• half a liter of medium calorie kefir.

1. In a bowl with kefir, pour soda and wait 2 minutes for it to foam well.

Ingredients:
• creamy margarine or 72% butter - 200 grams;
• one third cup of kefir 2.5%;
• a glass of sugar;
• a small pinch of soda, about a third tsp;
• three full standard glasses of high-grade flour; • two eggs.

1. Put margarine or butter in an enamel container and melt a little. It is not necessary to heat strongly, it is enough that it is softened and only slightly dissolved.

• one glass of warm kefir;

2. Add warm kefir mixed with a ripper to the curd, slightly beaten egg, an incomplete tablespoon of sugar and salt. Stir, add the flour in parts and, slowly, knead the dough. It will get a little sticky, but if you leave it on the table for at least five minutes, its structure will noticeably change.
3. Pies for this recipe will be equally good both fried and baked.
Cheese quick dough for unsweetened topping cake
Ingredients:
• 250 gr. sifted quality flour;
• 100 gr. cheese;
• three tablespoons of low-fat mayonnaise;
• 50 gr. 15% cream;
• four eggs;
• soda;
• juice from 1/8 of lemon.
Cooking Method:
1. Break eggs into a wide bowl and lightly whip them with a whisk, but do not whisk. Rub cheese into eggs on a large grater, mix and pour sifted flour.
2. Add mayonnaise mixed with sour cream and mix well.

Quick dough on kefir - tricks and useful tips
• If you are afraid that when heating, kefir may curl up, warm it up in water. To do this, put the container with fermented milk product for some time in a bowl with warm water and periodically replace the cooled water with warm water.
• Baking turns out to be richer and softer from slightly lying down or slightly expired kefir.
• The lower the fat content of a fermented milk product, the more airy the dough.
• Before mixing, keep all products at the same temperature.
• Put dry soda in kefir first of all, it should extinguish it well.
