Turkic peoples and the inhabitants of the Caucasus have airan - a popular dairy drink. It is similar to kefir, that's why kefir is often called airan even by the manufacturers of this product.

Ayran is made from cow or goat milk, adding to it a special leaven with fermented milk bacteria, as well as water and salt.

The airan density also depends on the amount of water. Thick ayran is similar in consistency to sour cream, and you can eat it with a spoon. Liquid Ayran well quenches thirst, so it is so popular in the summer. And it makes okroshka. It turns out slightly harsh, with a pleasant sourness and very tasty.


  • Okroshka on airan is prepared in the same way as on kefir. If airan is liquid, then, unlike kefir, it is not diluted with water.
  • Salt is added to okroshka, considering the taste of ayran.
  • Okroshka products on ayran are used the same as for classic okroshka. Potatoes, fresh cucumbers, radishes, eggs, green onions and a lot of greens are put into it.
  • If airan is thick, it is diluted with milk or water.
  • Sometimes okroshka on airan is made only from fresh cucumbers and a large amount of spicy greens - dill, parsley, cilantro, basil. To add spice, black pepper, coriander, chopped walnuts are added to such okroshka.

Okroshka on airan with ham

Ingredients (for 5-6 servings):

  • potatoes - 3 pcs .;
  • ham - 300 g;
  • fresh small cucumbers - 4 pcs .;
  • radishes - 4 pcs .;
  • eggs - 3 pcs .;
  • green onions - one bunch;
  • dill and parsley - one bunch;
  • airan - 2 l;
  • water;
  • salt - to taste.

Preparation Method

  • Boil the potatoes in advance so that they can cool down well.
  • Wash radishes, cut tops and tails.
  • Wash cucumbers, cut off the ends on both sides.
  • Cut ham into slices with a thickness of 0.5 cm, and then cut these slices into cubes.
  • Cut potatoes, cucumbers and radishes in the same cubes as ham. Put all the ingredients in one bowl.
  • Boil hard-boiled eggs, cool, peel. Then grind with a fork. Connect with the rest of the products.
  • Chop green onions with thin ringlets, salt and pound with a spoon until juice appears. Finely chop greens. Pour into a bowl. Mix gently by adding a little salt.
  • Spread the salad in deep plates or pussy, fill with airan.

Note: Okroshka can be prepared in a standard way: put all the cut foods into an enamel pan, salt and pour airan. Stir. Remove the sample. If okroshka is not sour enough, add a little vinegar or citric acid. After thorough mixing, pour the okroshka into plates and serve on the table.

Okroshka on ayran with meat: the first recipe


  • potatoes - 3 pcs .;
  • boiled meat (chicken, beef, veal) - 300 g;
  • fresh cucumbers - 3 pcs .;
  • eggs - 3 pcs .;
  • dill and parsley - on a small bunch;
  • green onions - a few feathers;
  • mustard ready - 1 tsp;
  • salt - to taste;
  • ground black pepper - to taste;
  • airan - 1, 5 l.

Preparation Method

  • Boil lean meat in advance. To make it tasty, pour raw meat with cold water. As soon as the foam appears, remove it with a skimmer, salt, reduce the heat and cook at low boiling until ready: beef - 2 hours, veal - 1 hour, chicken leg - 40 minutes. Cool the meat in the broth. In the same place hold it before cutting.
  • Cook potatoes in a uniform, quickly rinse with icy water, remove the skin. Cool it down.
  • Boil hard boiled eggs. To boiled yolk did not work with a greenish tint, boil eggs no more than 12 minutes. Cool in cold water and peel off the shell. Separate the yolks from the whites, fold them into a separate cup. Add mustard, rub well with yolks. Squirrels finely crumble with a knife.
  • Wash cucumbers and cut into small cubes. Cut the potatoes in the same cubes.
  • Cut the meat first along and then across - in small cubes.
  • Chop onion, dill and parsley.
  • Put all the ingredients in a saucepan, cover with airan. Salt it. Stir thoroughly. Refrigerate in the refrigerator for at least half an hour, then pour into plates and serve on the table.

Okroshka on ayran with meat: second recipe


  • boiled meat (beef or veal);
  • fresh cucumbers - 5 pcs .;
  • green onions - 5 feathers;
  • parsley, dill and cilantro - a big bunch;
  • eggs - 4 pcs .;
  • airan - 1 l;
  • salt - to taste;
  • ground black pepper - pinch.

Preparation Method

  • For okroshka, take lean meat, boil it, cool it without removing it from the broth. Then remove from the pan, wait until the liquid flows, cut into strips. Take another pan, put the meat in there.
  • Boil hard boiled eggs. Separate the yolks from the proteins, place them in a small bowl. Spread them with salt, adding a little ayran. Squirrels cut into thin strips.
  • Wash cucumbers, cut both ends. Grate on a medium grater.
  • Green onions and spicy greens very finely chopped.
  • Add eggs and vegetables to meat. Put the yolks pounded with salt here. Fill all with airan. Put salt and pepper, mix. If okroshka turned out not sufficiently acidic, add vinegar or citric acid.
  • Allow the okroshka to infuse for half an hour in the fridge, pour into plates and serve.

Okroshka on airan with carrots


  • potatoes - 3 pcs .;
  • carrots - 1 pc .;
  • eggs - 5 pcs .;
  • green onions - a thin bunch;
  • dill - a small bunch;
  • airan - 1 l;
  • salt - to taste.

Preparation Method

  • Boil the potatoes until soft. So that he doesn’t crumble during cutting, he needs to be boiled in his uniform.
  • Cook carrots separately from potatoes, otherwise it will turn yellow during cooking. Rinse hot carrots with cold water and cool. This will allow the carrot to maintain its bright color.
  • Boil hard-boiled eggs, cool them, peel off the shell.
  • Cut vegetables and eggs in the same small cubes. Chop onions with thin rings. Put all the ingredients in a saucepan or bowl, lightly salt and mix.
  • Chop the dill.
  • Put a portion of vegetable salad in a deep plate, cover with airan, sprinkle with dill.

These recipes give general recommendations. But you can replace some ingredients with others, add some more vegetables, given your taste preferences. The main thing is that all products are well combined with each other, then in the end you get a tasty dish.
