Its advantage over other dishes is that this soup does not need to be cooked, and later - to warm up. There is no defined list of products included in its composition. The hostess herself decides which vegetables to put in okroshka.

In summer, the main components are fresh vegetables: cucumbers, radishes, and greens. In winter, okroshka can be made with radish and carrots.

Classical okroshka is cooked on kvass. Also for this purpose they use kefir, yogurt, mayonnaise, sour cream, which are previously diluted with water or mineral water.

Where else take the serum?

First, you can buy it at a large grocery store. Secondly, it is easy to prepare it yourself. Serum is made from kefir, milk, yogurt.

Method 1:

  • Take 1 liter of kefir.
  • Place a colander on a saucepan or deep bowl. Cover it with gauze folded in four layers.
  • Pour kefir into the colander. Put the pot in the fridge and leave overnight.
  • In the morning on gauze you will see a clot similar to dietary curd. And the longer you keep it in a colander, the thicker it becomes. So, and serum will stand out more.
  • Lift the edges of the gauze and gently squeeze the resulting curd. From 1 l of kefir approximately 600 ml of serum is obtained

Method 2:

  • Pour the kefir into the glass jar.
  • Put in the microwave. At high power, warm up for a few minutes. After 3-4 minutes you will see how the serum starts to separate from the kefir.
  • When kefir curls and rises, take the jar out of the oven and leave on the table until it cools.
  • Gently pour the contents of the jar into a colander, covered with gauze, and allow the serum to completely drain into a bowl placed under it. Then lift the edges of the gauze and squeeze out the remaining whey.

Method 3:

  • Pour 2 liters of kefir into the pan and put on a small fire.
  • Warm up until kefir turns into a cheesy mass.
  • Cool. Then put it in a colander with gauze. Allow the serum to drain into a saucepan under a colander.

Subtleties

  • It is advisable to cook potatoes for okroshka “in uniform”. With this method of cooking, more nutrients will remain in it, it will not fall apart, it will be convenient to cut it.
  • If you put warm potatoes or eggs in okroshka, it can sour quickly. Therefore, it is desirable to boil potatoes, carrots, meat in advance and cool well in the refrigerator.
  • Serum must also be cold.
  • If okroshka is cooked in large quantities, do not immediately pour it with whey. All ingredients are crushed, poured into a saucepan and refrigerated. As needed, put chopped chopped vegetables in plates and pour in serum.
  • A lot of greenery is put in okroshka. This may be parsley, dill, cilantro. Lovers of more spicy taste can put basil, celery and other herbs.

  • lemon;
  • sour cream - 150 g.
