Composition:

  • chicken broth - 2 l;
  • tiger shrimps (chishchennye) - 0, 3 kg;
  • chili pepper - 0, 5 pcs .;
  • fresh champignons - 0, 2 kg;
  • Tom Yam pasta - 20 ml;
  • sugar - 20 g;
  • fish sauce - 40 ml;
  • tomato - 150 g;
  • coconut milk - 80 ml;
  • lime leaf - 10 pcs .;
  • ginger root - 20 g;
  • galangal root - 20 g;
  • Lemongrass - 20 g;
  • fresh cilantro -100 g;
  • lime - 1 pc.

Method of preparation:

  • Lemongrass wash. Pat dry with a napkin. Lightly tap on it with the handle of the knife. Cut into pieces of 1, 5-2 cm.
  • Peel ginger and galangal. If you use only ginger, take 60 g. Cut each root into 4 pieces, cut into thin plastics.
  • Pepper wash, cut in half, remove the seeds. Chop half the pod with a knife as finer as possible.
  • Wash and blot mushrooms and tomatoes with a napkin. Cut the champignons into 6-8 pieces each, cut the tomato into the same number of slices.
  • If you do not have Tom Yam paste, crush a few cloves of garlic, turn the rest of the hot pepper through a meat grinder, and mix them.
  • Clean shrimp if necessary.
  • Boil the broth. Put lemongrass, lime leaves or half a lemon into a slice of dried zest, chopped roots. Simmer for 15 minutes.
  • Put garlic-pepper paste in broth, mix.
  • Cook for 5 minutes, add shrimps and mushrooms. Boil for 2-3 minutes.
  • Add fish or soy sauce, sugar, chili pepper pieces. Squeeze the juice from the whole lime or half a lemon into the broth. Cook the soup for 5 minutes.
  • Add one spoonful of coconut milk, waiting a minute after adding each serving.
  • Remove the soup pot from the heat, put chopped cilantro greens and tomato slices into it. Cover the pan with a lid, let the soup stand for 15 minutes.

Bread to Tom Yam soup is not accepted. It can be replaced with boiled rice, putting it on the table in a separate bowl.

Composition:

  • water - 2 l;
  • garlic - 2 cloves;
  • oyster mushrooms - 150 g;

Method of preparation:

  • Free the onions from the husk, cut into small cubes.
  • Cut the tomatoes in half or 4 pieces.
  • Cut the garlic cloves into thin plates.
  • Cut the shrimp into several pieces.
  • Cut the mushrooms into small pieces.
  • Pour oil on the bottom of the pan.
  • Put the pan on the fire.
  • When the oil warms slightly, add onion and garlic to it, fry until golden brown.
  • Put the tomatoes, squeeze lime juice on them, lightly fry.
  • Fill the vegetables with water, bring it to a boil.
  • Add the contents of a special set, cook for 10 minutes.
  • Put the mushrooms and shrimp. Boil another 5 minutes.
  • Add coconut milk, boil the soup for 5 minutes, remove from heat.
  • Insist on a quarter-hour cover.

Composition:

  • chicken fillet - 0, 2 kg;
  • fresh champignons - 150 g;
  • pepper paste - 60 ml;
  • bitter capsicum - 2 pcs .;

  • ginger root - 20 g;
  • Lemongrass - 20 g;
  • soy sauce - 20 ml;
  • sugar - 5 g;
  • coconut milk - 80 ml;
  • water - 1, 5 l.

Method of preparation:

  • Wash the chicken fillet, cut into small pieces.
  • Finely chop the peppers by removing the seeds from the pods.
  • Mushrooms, washed and dried with a napkin, cut into plates.
  • Squeeze juice out of half lime.
  • Cut ginger and lemongrass into small pieces.
  • Dilute the pepper paste with water, put on fire.
  • When it boils, put lemongrass and ginger. Boil 5 minutes.
  • Add sugar, soy sauce, lime juice, cook for another 2-3 minutes.
  • Dip the chicken and mushrooms, slices of hot pepper into the pan.
  • After 10 minutes, add coconut milk, mix. Continue cooking the soup for 5-10 minutes - until the chicken is completely cooked.

The soup for this recipe is especially hot. If you are not accustomed to Thai cuisine, the number of burning ingredients should be reduced by 2-3 times.

Tom Yam Soup with Seafood

Composition:

  • sea cocktail - 0.5 kg;
  • water - 2 l;
  • onions - 100 g;
  • tomatoes - 0, 4 kg;
  • oyster mushrooms - 100 g;
  • Lemongrass - 20 g;
  • galangal root - 30 g (or 50 g of ginger root);
  • ginger root - 20 g (in addition to galangal);
  • lemongrass leaves - 10 pcs .;
  • coconut milk - 120 ml;
  • chili pepper - 1 pc .;
  • vegetable oil - 40 ml;
  • salt, ground red pepper (spicy) - to taste.

Method of preparation:

  • Finely chop the pepper pod, garlic cloves, galangal and ginger roots.
  • Heat a spoonful of butter in a pan. Fry the chopped ingredients in it.
  • Add more oil, reduce heat, then sweat for 5 minutes.
  • Pound spices in a mortar.
  • Coarsely chop the onions and tomatoes.
  • Cut the mushrooms into strips.
  • Dilute the hot pasta with water, bring to a boil.
  • Put lemongrass and lemongrass leaves in a saucepan. Cook for 5 minutes.
  • Sprinkle seafood, add mushrooms, onions
  • Boil 10 minutes after the soup boils again.
  • Put the tomatoes, pour coconut milk, cook the soup for a few more minutes and remove from the heat.
