Okroshka itself is considered a dietary dish, but not all diets allow its consumption, especially if this dish is cooked in kvass. The Dyukan diet is loyal, allows you to include in the diet foods that are prohibited during all other diets, provided that they are made of products that are allowed at the appropriate stage of the diet. Okroshka according to Dyukanu is prepared without kvass, on kefir, mineral water or whey, it is not vegetables that prevail, but eggs and meat, fish products containing a lot of protein. However, her taste is as pleasant and refreshing as that of a traditional cold soup.

Cooking Features

Okroshka on Dyukanu prepares almost the same as usual, the main difference is in the set of products used. However, knowing a few moments does not harm the cook.

  • Okroshka according to Dyukan is most often prepared on mineral water, which can be replaced with ordinary boiled water. For taste, it is acidified with lemon juice, preferably freshly squeezed. If kefir is taken as a basis, it should be degreased. When using whey okroshka can be whitened with low-fat yogurt.
  • The basis of the Ducan okroshka is meat and fish products. Low-fat veal, chicken breast, fish, seafood and turkey ham are allowed in the first stage of the diet. The list of permitted products includes eggs, garlic, lemon, greens. From the second stage, the list is updated with lean pork, bacon, beef tongue. At this stage, vegetables are included in the list of permitted products, which can be used for cooking on non-protein days. From the third stage, the diet becomes even more loyal. Choosing a recipe for okroshka, refer to the list of products allowed at that stage of the Dukan diet on which you are now.
  • Okroshka products are cut as small as possible, a grater can be used to chop vegetables. Eggs can be crumbled or cut into large slices: the choice depends on the recipe and your own preferences.

Okroshka is eaten and served cold. Products before cooking should be cooled. If okroshka is not served immediately after cooking, it should be placed in the refrigerator. Long-term storage of this dish is not subject to, it must be eaten on the same day when it was cooked.

Okroshka on Dyukanu for the stage “Attack”

Composition:

  • turkey fillet - 0, 2 kg;
  • chicken egg - 2 pcs .;
  • fresh dill - 25 g;
  • celery greens - 0, 25 g;
  • garlic - 2 cloves;
  • sparkling water - 150 ml;
  • freshly squeezed lemon juice - 10 ml;
  • kefir - 0, 5 l;
  • salt - to taste.

Method of preparation:

  • Wash turkey fillets, lower in boiling water, cook for 30-40 minutes. 10 minutes before ready salted.
  • Cool turkey meat, cut into small cubes, put in a bowl.
  • Wash dill and parsley greens, shake off water. Let dry. If greens are put on a cloth towel, it will dry faster.
  • Finely chop the greens with a knife, pour to the turkey.
  • Eggs boil hard boiled. Place under a stream of cold water to cool faster.
  • Clean the eggshell from the eggs. Finely chop the eggs with a knife, put to other products.
  • Crush garlic with a hand press, put in a separate container.
  • Add a pinch of salt to the garlic, lemon juice, pound.
  • Pour in mineral water, stir.
  • Add kefir, stir again.
  • Pour chopped products with liquid mixture, mix.

Cool okroshka by putting it in the fridge for half an hour, pour it into plates and serve it to the table.

Okroshka on Dyukanu for the stage “Alternation”

Composition:

  • boiled veal - 0, 2 kg;
  • turkey ham - 0, 2 kg;
  • fresh cucumbers - 0, 4 kg;
  • pickled gherkins - 100 g;
  • radishes - 100 g;
  • green onions - 50 g;
  • fresh dill - 50 g;
  • chicken egg - 5 pcs .;
  • sparkling water - 1 l;
  • skim kefir - 1 l;
  • mustard powder - 10 g;
  • freshly squeezed lemon juice - 20 ml;
  • salt, black pepper powder - to taste.

Method of preparation:

  • Green onions and dill wash, dry, finely chop with a knife, pour into the pan.
  • Wash radishes, blot with a napkin, cut off the tails. Cut into small cubes, put to the greens.
  • Wash, dry with a napkin fresh cucumbers. Cut the ends, cut the vegetables into small cubes, put them to the greens and radishes.
  • Cut the gherkins as small as possible, add to other foods.
  • Chop boiled beef and ham, put to other ingredients.
  • Cool boiled eggs cool under running cold water, peel.
  • Remove yolks from eggs, finely chop whites, add to other ingredients.
  • Crush the yolks with a fork, mix with mustard and half a cup of kefir, then dilute with the remaining fermented milk product.
  • Pour the kefir into the pan with the chopped products, mix.
  • Mix lemon juice with mineral water, salt and pepper, add to other foods, mix.

It remains to pour okroshka on plates and serve. This dish will appeal not only to those who are on a diet, so it is advisable to cook it for the whole family.

Okroshka on Dyukan with seafood

Composition:

  • unpeeled shrimps - 0, 2 kg;
  • squid - 0, 2 kg;
  • chicken egg - 2 pcs .;
  • radishes - 100 g;
  • fresh cucumbers - 0, 2 kg;
  • fresh greens - 100 g;
  • whey - 1 l;
  • low-fat yogurt - 0, 2 l;
  • salt - to taste.

Method of preparation:

  • Lower the purified squid into boiling water for 3-4 minutes, remove with a skimmer, cool, cut into small strips.
  • Boil the shrimp in a separate saucepan for 4-5 minutes, cool and peel.
  • Seafood put in a bowl.
  • Wash vegetables, dry with a kitchen towel, cut into strips, send to seafood.
  • Add finely chopped greens, salted.
  • Put yoghurt to the chopped products, mix.
  • Fill the products with whey, stir.
  • Spread okroshka on plates.
  • Cool-boiled eggs, cool, peel, cut in half, arrange into plates.

This variant of okroshka by Dyukan can be called delicacy. Gourmets who are not watching the figure will not refuse such a treat.
