Wishing to prepare a hearty snack for lunch and dinner, without spending much time and effort, housewives often choose meat with onions and carrots, which is easiest to fry or stew in the pan. This dish can be served with almost any side dish, but nourishing in and of itself. If the garnish you have crumbly porridge, rice or pasta, it is worth cooking meat with gravy. Under the vegetable stew or salad more fry meat without sauce is more suitable. Soft and tender meat is obtained in sour cream. There are quite a few recipes for cooking pork or beef with carrots and onions in a skillet, and they are all good in their own way.

Cooking Features

There are many recipes for this dish, but there are a few common settings.

  • You can fry or stew in a frying pan any kind of meat, but keep in mind that the beef will have to cook longer pork and to soften it will have to take more sauce and vegetables.
  • Meat will cook faster and be softer if marinated beforehand. For this, the same marinade options are suitable as for barbecue.
  • Gourmets say that fresh or chilled meat turns out to be more juicy than frozen. However, the difference will be almost imperceptible if the frozen meat product is allowed to thaw in natural conditions, avoiding a sharp temperature drop. Defrost meat to refrigerate, in extreme cases - at room temperature. Trying to speed up the process with the help of a microwave or warm water, you make a mistake that can no longer be fixed.
  • If you are going to cook meat in a frying pan, it should be cut into small pieces, otherwise it can overheat from above, remaining almost raw inside.
  • Carrots are usually cut into thin strips or ground in a grater. Onions are usually offered to cut into thin half-rings, sometimes - in small cubes.
  • Select seasonings according to the type of meat: black ground pepper is more suitable for beef, red pepper, turmeric for pork, garlic and zira for mutton.

Meat is served cooked in a pan with carrots and onions, usually with a side dish. To do this, suitable mashed potatoes, vegetable stew, buckwheat, rice and pasta. If the side dish is dry, do not forget to pour it with gravy.

Meat with onions and carrots with gravy


  • meat (tenderloin or fillet) - 0, 5 kg;
  • onions - 100 g;
  • carrots - 100 g;
  • flour - 50 g;
  • water - 0, 75 l;
  • salt, spices - to taste;
  • refined vegetable oil - how much will go;
  • tomato paste - 50 ml.

Method of preparation:

  • Wash and dry the meat with a napkin. Peel off the film. Remove fat and other unwanted parts.
  • Cut the meat across the fibers into chunks of a thickness of about 1, 5-2 cm, slightly repel. Cut the chops into medium-sized bars.
  • Scrape, wash carrots. Pat dry with a napkin. Grind grated with medium or even small holes.
  • Free onion from the husk, cut into small pieces.
  • Heat the oil in a deep frying pan, put the meat in it. Brown it over medium heat.
  • Sprinkle meat with salt and spices, add chopped vegetables. Fry them for 5 minutes with the meat.
  • Sprinkle meat and vegetables with flour, fry for 2-3 minutes.
  • Dissolve tomato paste with hot boiled water. Pour the liquid into the meat. Stir.
  • Turn down the fire. Simmer the meat in the sauce under the lid until it is soft. The exact time depends on the type of meat and the size of the pieces.

Served such meat with a side dish and gravy, in which it was stewed.

Grilled meat with onions and carrots (without gravy)


  • meat (preferably pork) - 0, 6 kg;
  • onions - 0, 2 kg;
  • carrots - 150 g;
  • tomatoes - 0, 3 kg;
  • soy sauce - 60-80 ml;
  • refined vegetable oil - how much will go;
  • seasonings - to taste;
  • water - 120 ml.

Method of preparation:

  • Wash meat, blot with a kitchen towel. Remove films, veins, excess fat.
  • Cut the flesh into medium-sized bars, put them in a bowl.
  • Pour the soy sauce to the meat, mix the product by hand. Leave for half an hour.
  • Slice the tomatoes crosswise on the side opposite the stem.
  • In a saucepan, boil water, dip the tomatoes in it. After 2 minutes, catch them with a skimmer and transfer them to a container filled with cold water.
  • Peel cooled tomatoes and cut them into small-sized pieces of any shape.
  • Wash and peel the onions with carrots.
  • Grind carrots on a grater for cooking Korean salads, or on a regular one with large holes.
  • Cut onions into thin half rings or quarter rings if the heads are large.
  • Heat the oil in a deep frying pan, put the meat in the pan (along with the sauce).
  • Fry meat over medium heat, stirring with a spatula, for 20 minutes.
  • Add onions and carrots to meat. Fry foods together for 10 minutes.
  • Add water, reduce heat. Cover the pan with a lid and cook the dish until the meat is cooked.
  • After removing the lid and increasing the heat, evaporate the excess water.
  • Again reduce heat, salt, season the meat, add tomatoes. Extinguish the dish for 10 minutes, after which it can be served.

Despite the fact that the meat for this recipe is prepared without gravy, it turns out tender and juicy. The recipe is best for pork.

Meat stewed in a frying pan in sour cream with onions and carrots


  • beef - 0.5 kg;
  • onions - 100 g;
  • garlic - 2 cloves;
  • carrots - 100 g;
  • tomato paste - 50 ml;
  • sour cream - 0, 25 l;
  • water - 0, 2 l;
  • salt, spices - to taste;
  • refined vegetable oil - how much will go;
  • wheat flour - 40 g.

Method of preparation:

  • Wash and dry the meat, remove all excess. Cut meat pulp into cubes about 2 cm in size or in bars.
  • Prepare the sauce: mix the sour cream with tomato paste and garlic passed through the press, dilute the resulting mass with boiled water.
  • Free the onions from the husk and cut them into thin halves of the rings.
  • Peel the carrots, cut into strips.
  • In a large frying pan, heat the oil, fry the meat until golden brown.
  • Add carrots and onions to meat, fry them together for 10 minutes.
  • Sprinkle meat and vegetables with salt, seasonings, mix.
  • Sprinkle the fried foods with flour, stir again.
  • Pour the prepared sauce into the pan. Stew meat and vegetables in it on low heat under the lid until the meat is soft.

Sour cream sauce, in which meat was stewed, can be used instead of gravy.
