In Belarus, pancakes are called pancakes made from raw grated potatoes. Under various names, similar dishes exist in the national cuisines of other countries. There are a lot of recipes for pancakes. The traditional recipe involves the use of only potatoes and onions. There are more complex recipes, which include flour, garlic, starch, eggs and other products.   • Potatoes contain starch, which acts as a binder ingredient. In new potatoes, a little, in the old - a lot. The amount of starch in the potato depends on the variety of this vegetable. Therefore, for pancakes should be taken mature potato varieties, characterized by a high starch content. This is especially true in the case when the pancakes are cooked without eggs and flour.

Composition:

  • potatoes - 1 kg;
  • onions - 100 g;
  • chicken egg - 3 pcs .;
  • hard cheese - 100 g;
  • wheat flour - 20 g;
  • salt, spices - to taste;
  • vegetable oil - how much will leave.

Method of preparation:

  • Clean, wash the potatoes. Drain the tubers with a napkin and coarsely rub.
  • Grind on a grater or onion using a blender, mix onion puree with potato.
  • Whisk the eggs, combine with the potatoes.
  • On a coarse grater, chop the cheese, put it in a potato mass, mix.
  • Salt and pepper, thicken the potato dough with flour.
  • Heat oil in a pan. Type in a tablespoon of dough, put in boiling oil, gently apply it with the back of a spoon, giving the dranik a flat shape. At a distance of about 5 mm from him put another spoonful of dough. Thus fill the pan.
  • Fry the pancakes over medium heat for about 4-5 minutes, then turn over with a broad spatula and fry for another 2-3 minutes.

Composition:

  • potatoes - 1 kg;
  • ground beef - 0, 5 kg;
  • chicken egg - 2 pcs .;
  • wheat flour - 50 g;
  • onions - 0, 2 kg;
  • hard cheese - 0, 2 kg;
  • mayonnaise - how much will leave;
  • vegetable oil - how much will leave.

Method of preparation:

  • Coarsely rub the potatoes, having washed and peeled them beforehand. Salt, let stand 5 minutes. Squeeze out extra juice from the potato mass.
  • Crank through a meat grinder or chop the onion in another way. You can even chop it with a knife. Mix with potatoes.
  • Cut the second onion into thin rings or half rings.
  • Add eggs to the vegetable mass, salt, pepper, flour. Stir until a homogeneous consistency, no lumps.
  • Salt and pepper the minced meat.
  • Lubricate the baking dish. Form a flat cake the size of the central part of the palm of the potato dough, put them in shape.
  • Smear the pancakes with mayonnaise, put the minced meat on top. Sprinkle the pancakes with onions. Put a layer of grated potatoes on top.
  • Put the pancake form in a preheated oven to 200 degrees.
  • After 20 minutes, remove the pancake from the oven.
  • Finely rub hard cheese and sprinkle the back of the pancakes.
  • Return the form with pancakes to the oven for another 10 minutes.

Potato pancakes with cheese and mushrooms in pots

Composition:

  • potatoes - 0.5 kg;
  • chicken egg - 1 pc .;
  • wheat flour - 40 g;
  • hard cheese - 100 g;
  • fresh champignons - 0, 2 kg;
  • garlic - 1 clove;
  • butter - 80 g;
  • vegetable oil - how much will leave;
  • onions - 75 g;
  • sour cream - 0, 2 l;
  • vegetable oil - how much will leave.

Method of preparation:

  • Chop the onion in a blender, put in a bowl.
  • Peel potatoes and rub on a fine grater, mixed with onions.
  • Squeeze the juice from the vegetable mass, let it stand, drain, leaving starch settled on the bottom.
  • Add the starch and flour (half indicated in the recipe) to the vegetable mass, pepper and salt it, put the eggs and garlic passed through the press.
  • Mix thoroughly so that no lumps remain.
  • Coarsely grate the cheese, mix half with the potato base.
  • Heat the vegetable oil in a pan and fry the pancakes in it.
  • Grease the pots with butter.
  • Cut the mushrooms into small pieces.
  • In a clean frying pan, melt the remaining butter and fry the mushrooms on it until the excess moisture evaporates.
  • Sprinkle the mushrooms with the remaining flour, fry a little. Pour in, stirring carefully, sour cream. Stir to the extent that the sauce in the pan has acquired a homogeneous consistency, rather thick.
  • Put a few pancakes on the bottom of the pots, brush them with the sauce. By alternating layers in this way, fill the pots.
  • Sprinkle the contents of the pots with the remaining cheese.
  • Place the peas on a baking sheet and send them to the oven. Covers do not need to close.
  • Turn on the oven and cook the dish for 10 minutes after the oven temperature reaches 180 degrees.
