Among food additives, which are quite often used in food, a separate group is occupied by polyphosphates, combined under the common labeling E452. They are transparent or odorless and tasteless white crystals, which serve as a fairly powerful stabilizer. There are polyphosphates of potassium, calcium, ammonium, sodium and sodium calcium, which have their own area of ​​application and are responsible for various processes.

The benefits of the stabilizer E452

By their nature, all polyphosphates are inhibitors, i.e. they slow down biological processes. It is for this reason that they are used in the food industry in order, for example, to stop fermentation or to prevent the occurrence of mold. In addition, the stabilizer E452 can slow down the process of metal corrosion, soften water and degrease fibers. For this reason, it is actively used not only in the production of paints and varnishes, but also added to various detergents. It should also be noted that polyphosphates can enhance the effect of other food additives, therefore, they are often used together with stabilizers and emulsifiers such as E440 and E499.

Field of application of polyphosphates

These chemical compounds were found in yeast at the end of the 19th century; however, it was not possible to synthesize polyphosphates only 50 years later. It was then that scientists found that E452 can act as a thickener, as well as a stabilizer, suggesting that this additive be applied in the food industry.

Today, in food production, E452 is used infrequently, since it has been established that this substance can cause serious health problems. However, polyphosphates can be found in condensed milk, various canned foods, melted cheese and dry milk mixtures. More often E452 is used in the production of cleaning and detergents, as well as coatings with anti-corrosion properties.

It is noteworthy that in many countries of the world polyphosphates are prohibited additives. However, Russia and Ukraine, as well as the European Union, have not yet imposed restrictions on the industrial production and use of this substance.

What are dangerous polyphosphates?

Scientific studies have shown that E452 stabilizer is very actively involved in the processes that occur in the human body at the cellular level. One side. Polyphosphates are a source of useful substances that are so necessary for humans, have a very beneficial effect on blood clotting and its composition, and are also responsible for the level of platelets. At the same time, it is the food additive E452 that is involved in the synthesis of “bad” cholesterol, which is deposited on the walls of blood vessels and reduces their permeability.

This stabilizer is hardly excreted from the body and forms a kind of “stock” of phosphates, which are non-toxic and do not cause allergies. However, they are a fairly potent carcinogen, which often leads to the formation of malignant tumors.
