  • Rowan wine can taste bitter - it all depends on the type of berry. However, making wine from chokeberry, bitterness can be avoided. The fact is that after freezing the mountain ash loses excess bitterness. So, it should not be collected at any time, but only after the frost hits.
  • The second problem encountered when making wine from chokeberry at home is the difficulty of getting enough juice from it. There are two ways to make her give this juice. The first is blanching: the berry is poured with boiling water, after half an hour the water is drained, boiled again and the procedure is repeated, after which the black chokeberry is poured with cool water (the same but cooled to room temperature) and thoroughly kneaded. The second method is zabrazhivanie. In this method, kneaded berry is filled with water, covered with sugar and put into a warm place to ferment, covering the bucket with pulp with a thin cloth. A fern must ferment not 2-3 days, like another berry, but much longer - 7-9 days, only then it will be ready to give the juice. Throughout the week, the mash should be mixed at least 2 times a day. When the juice is squeezed out of it, it is not thrown away: sugar is again added to the pulp, water and left to ferment, but for a shorter period (up to 5 days), after which the pulp is again squeezed. Two servings of juice poured together. The combination of the two methods will give an excellent result.
  • If you want to get a transparent and tasty wine from chokeberry as soon as possible, it should be poured into a clean container every week during fermentation, trying not to touch the sediment. This should be done until fermentation is over. Only after that the wine can be bottled, but you should not drink it yet: the young wine should mature. It should be infused in tightly closed bottles for three months. If it becomes cloudy, then in the middle of this period it is necessary to drain it, freeing it from the sediment, and pour it into clean bottles. If you do not follow these recommendations, then wait for the upholding and maturation of black chokeberry wine will take much longer.
  • It is not possible to wait for the fermentation of mountain ash if you collected it after the rain or decided to wash it. Rinse the wild yeast on its surface is not worth it. If this does happen, you will have to purchase pure culture yeast and add them in accordance with the instructions on the bag.

Chokeberry Wine: A Classic Recipe

Composition:

  • black chokeberry - 10 kg;
  • granulated sugar - 4 kg;
  • water (pure spring or boiled) - 2 l;
  • raisins (unwashed) - 100 g.

Method of preparation:

  • Well, sort through the mountain ash and chop the unwashed using a food processor. Juice extractor is not worth using, as it quickly clogs.
  • Pour Rowanberry puree with sugar in the amount of 2 kg and pour 1 liter of water. It is important that it is warm, but not warmer than 30 degrees, otherwise the yeast will die.
  • Cover the container with rowan gauze and place in a warm place for a week. Twice a day, mix its contents so that it is not moldy and not sour.
  • After the indicated time, strain the juice through a normal sieve, but do not throw away the pulp.
  • Pour juice into a clean glass bottle, close it with a water seal.
  • Pour the remaining pulp with water and pour the remaining sugar into it. Stir for 3-5 days and then strain through gauze. This time the cake can be thrown away.
  • Mix the liquid squeezed from the pulp with the first portion of black chokeberry juice. Close the trap again.
  • A week later, through a thin tube, pour the wort into another clean bottle, closing it after this with a water seal. Such actions should be repeated weekly, until fermentation is completely stopped.
  • Filter the wine through cheesecloth and pour it into clean bottles, filling it at the very neck. Close the bottles and wait 3 months.
  • Strain the wine again and bottle it again, corking it and sending it to storage.

The wine for this recipe is sweet enough, but not too strong - from 10 to 14 degrees. At temperatures up to 18 degrees, it can be stored for 5 years.

Aronia Wine with Cinnamon

Composition:

  • chokeberry - 5 kg;
  • sugar - 4 kg;
  • vodka - 0.5 liters;
  • cinnamon - 5 g.

Method of preparation:

  • Well, sort the berries, knead them with your hands or a wooden pestle. Dissolve sugar and cinnamon. Put in a free container with a wide neck (a basin, a bucket will do), cover with a cloth, put in a warm place.
  • Stir as often as possible until well fermented. After 8-9 days, squeeze the juice out of the pulp, carefully filter it several times.
  • Put the juice in the fermentation tank, wait for the fermentation to end.
  • Filter the wine, mix it with vodka and bottle.
  • Seal the bottles and place them in a cool place.

The wine will ripen in six months. The taste of homemade black chokeberry wine prepared according to this recipe resembles liqueur.

Frozen Chokeberry Wine

Composition:

  • juice from frozen chokeberry - 3 l;
  • water - 3 l;
  • sugar - 2, 4 kg;
  • raisins - 200 g.

Method of preparation:

  • From thawed berries, squeeze 3 liters of juice, heat it to room temperature.
  • Mix juice with water and sugar. Immediately pour the wort into the bottle where fermentation will occur. There also pour raisins, in any case without washing it.
  • Install the water seal. Wait for the wort to ferment, ferment and lighten up.
  • Drain the wine, freeing it from sediment, pour it into clean bottles and send it to a cool place.

After three months, you get a real wine, quite light and pleasant to taste.

Chokeberry Wine: A Simple Recipe

Composition:

  • chokeberry - 1 kg;
  • water - 1 l;
  • carnation - 2 pcs .;
  • cinnamon - 2 g;
  • citric acid - 1 g;
  • sugar - 100 g;
  • vodka - 0.5 liters.

Method of preparation:

  • Pick, wash the berries, crush them, add sugar, pour two glasses of water and cook, stirring, for half an hour.
  • Allow to cool, squeeze the juice. Cake pour the remaining water, add spices and citric acid, again boil for half an hour, cool and squeeze.
  • Mix the juice of the first and second spin, strain, add vodka to them, stir and pour into bottles.

Of course, a real wine called the resulting drink will be an exaggeration, however, it turns out to be quite pleasant to the taste and is quite capable of replacing wine on a festive table.

Black Chokeberry Wine Prepared in a Can

Composition:

  • chokeberry - 0, 7 kg;
  • granulated sugar - 1 kg;
  • raisins - 100 g;
  • water - 0, 5 l.

Method of preparation:

  • Pick the berries and put them in a clean three-liter jar.
  • Pour 0, 3 kg of sugar, unwashed raisins into it, pour in water.
  • Close the jar with a nylon cap, making a small narrow hole in it with a knife. Put in a warm place.
  • Every day, mix the contents of the jar, tilting it and shaking it slightly.
  • A week later, open, add 0, 3 kg of sugar, mix, return the lid in place.
  • A week later, repeat the procedure.
  • A month later, add the remaining sugar, re-close the jar and no longer touch it until the berries go down to the bottom and the wine becomes transparent.
  • Pour the finished wine, strain and bottle.

This method of home-cooking wine from chokeberry will be enjoyed by novice winemakers who did not have time to acquire large 20-liter containers.
