It is not difficult to do this, it is only important to know that this effect allows you to get marinade for kebab with honey. It gives the opportunity to cook tender meat, fragrant, ruddy, but at the same time not burnt. Especially good sauce with honey is suitable for marinating pork and chicken.

There are several variants of honey marinade. Some of them are more suitable for poultry, others - for pork. The composition and technology of preparing mixtures for marinating meat for the purpose of its subsequent frying on coals may have some differences. However, there are a few common points that the chef knows, no matter what recipe he wants to make a honey marinade for kebabs and marinate in him.

  • Honey marinade is considered the most suitable for poultry meat and pork.
  • Do not be afraid that honey will make the meat too sweet. Sweetness is neutralized by spices and acids that make up the marinade, as well as vegetables that have a pronounced taste. As a result, there are only barely perceptible sweetish notes and a unique delicate aroma.
  • Honey, without being supplemented with vinegar, lemon and other sour ingredients, does not allow you to pickle the meat quickly. Chicken thighs in it are usually left to marinate throughout the night. Chicken fillet will need 3-4 hours. Pork, marinated in a simple honey marinade, will be ready for roasting on the coals in only 8-10 hours. If the marinade contains products that accelerate the process of splitting meat fibers, the time the meat stays in the marinade should be determined based on the instructions in a particular recipe.
  • The honey for the preparation of the marinade is melted to a liquid state or ground with salt, making it more liquid even without reheating.
  • Under the influence of high temperatures when frying kebabs, ice loses its beneficial properties. The kebab pickled in it will not become more useful. Honey is not included in the marinade to enhance the benefits of the finished dish, but to give it a unique taste and unique look.

Universal marinade with honey for chicken and pork

Composition:

  • honey - 60 ml;
  • soy sauce - 100 ml;
  • mint - 2 twigs;
  • basil - 2 twigs;
  • Spices for the type of meat that is pickled - to taste.

Preparation Method:

  • Prepare the meat by cutting it into pieces suitable for kebabs. Usually these are cubic pieces weighing approximately 50 g each. It is important that the size of the pieces be approximately the same.
  • Heat the honey in a water bath or melt in the microwave, pour the meat over it.
  • Pour soy sauce in a container with meat, add spices.
  • Stir the meat with your hands so that the soy sauce and honey evenly cover each piece of the future kebab.
  • Wash mint and basil, tear off the leaves and put them in a container of meat. It is not necessary to chop the greens harder, otherwise it may remain on the pieces of meat and begin to burn when frying on the grill.
  • Stir the meat again.
  • Store meat in the fridge overnight or even for a day. The property of this marinade is that the meat in it is difficult to overdo. The longer it lies in the honey-soy mixture, the more tender and juicier it becomes.

The quantities of ingredients indicated in the above recipe are enough to pickle 1 kg of chicken or pork. If you intend to fry more kebabs, increase the number of products, keeping the proportions.

Marinade for shish kebab with onions and honey

Composition:

  • honey - 100 ml;
  • Dijon mustard - 100 ml;
  • onions - 0, 5 kg;
  • a mixture of peppers, paprika, salt - to taste;
  • olive oil - 50 ml;
  • lemon juice - 20 ml.

Preparation Method:

  • From the onion, remove the husk; cut the vegetable into rings about 3 mm thick. Remember them with your hands to stand out onion juice.
  • Wash meat, pat dry. Remove films and conductors. Cut pieces of 4-5 cm.
  • Fold the meat in a dish, in which you will marinate it on the kebab. Transfer the onion to it along with the juice that has emerged from it. Sprinkle meat with spices. Salt it at this stage is not worth it, because salt draws moisture from the products, making them less juicy.
  • Stir in meat with onions and spices.
  • In a separate container, combine honey, mustard, butter and lemon juice, melted to a liquid state. Stir to obtain a homogeneous sauce.
  • Pour the sauce to the future kebab and mix it well again with your hands.
  • Cover the meat with a plate, set the load on top. Clean in a cool place. An hour before frying on the grill, add some salt and mix.

Chicken meat marinated according to this recipe can be fried in 2-3 hours, pork kebab can be fried in 5-6 hours. Meat can be left in this marinade for up to 12 hours. The amount of food specified in the recipe will be sufficient to marinate 2 kg of meat.

A simple recipe for honey marinade with mustard for kebabs

Composition:

  • honey - 100 ml;
  • table mustard - 50 ml;
  • olive oil - 50 ml;
  • garlic - 5 cloves;
  • salt, spices - to taste.

Preparation Method:

  • Put the prepared meat in a bowl.
  • Combine honey and salt in a separate container, rub them in order to make the honey more liquid.
  • Add mustard, butter and garlic passed through a press, as well as spices suitable for chicken or pork, respectively. Mix well.
  • Coat the meat pieces with the prepared composition and leave to marinate in it for 5-10 hours depending on the type of meat used.

In the honey-mustard marinade, the meat can be marinated not only for cooking on the grill, but also for cooking in the oven. Then marinate it for 30-60 minutes. Marinade will be enough for 1-2 kg of kebab, depending on how generously you will coat them with pieces.

Honey marinade is well suited for chicken kebab or pork. The process of marinating meat in honey is long, but the result is worth the time spent.
