Yogurt is a tasty and healthy fermented milk product, the consistency of which is similar to Greek yogurt or hibernating yogurt. It tastes like sour cream, but has lower calorie content and density. Our compatriots often make dough for pancakes on the basis of sour cream, yogurt, kefir. In the Caucasus, pancakes are usually baked on matsoni. These products are similar in taste and appearance: they are lush, tender and do not dry out for a long time. If you belong to lovers of oriental cuisine, you should try at least once to make pancakes from dough, mixed in matsoni.

Cooking Features

The process of making pancakes from dough on matsoni is not complicated, but has its own characteristics. To obtain the best result, the culinary specialist needs to know and take into account several important points.

  • Matsoni for fritters can be used with different fat content and different degree of freshness, but still not clearly missing. The consistency of matsoni depends on how much flour is added to the dough. The dough should turn out like a village sour cream.
  • Flour for pancakes must be of high quality. The second-rate product gives the product a specific taste and unappetizing grayish tint. The difference in price between the flour of the highest, first and second grade is not so great that it was reasonable to save on this product.
  • Dough on yoghurt can be made not only from wheat flour, but also from rice, buckwheat, corn, as well as with the addition of fruits and vegetables. The organoleptic qualities of the finished products will also largely depend on their quality.
  • Flour of any kind and grade must be sieved before combining with other ingredients. The main purpose of this manipulation is not to rid the product of small litter and insect larvae, although this is also important. The main task is to saturate the flour with oxygen. After sifting, it becomes easy, it is easier to combine it with other components, preventing the formation of lumps. From the dough, mixed with such flour, baking is more airy.
  • For fluffiness, fritters in dough for them, if it is not yeast, add baking powder. In its quality can act soda, which is usually quenched with vinegar. When preparing dough on yogurt or other fermented milk products, usually do without vinegar. However, to avoid soda flavor, soda in the dough should be put no more than indicated in the recipe.
  • Fry pancakes in a hot pan, covered with butter. Spread the dough with a tablespoon, periodically dipping it into cold water to prevent the dough from sticking. Between portions of the dough leave a distance of at least a centimeter, otherwise the pancakes stick together and become ugly.
  • To make the pancakes more lush, they need to be cooked over low heat under the lid. The first side is fried for 3-4 minutes, the second - 2-3 minutes, but the exact time depends on the intensity of the flame, so you need to be guided by the state of the fritters.

Pancakes made from dough, made in matsoni, can be served with the same yogurt or sour cream. Honey, syrup, condensed milk can be served with sweet products, and cheese, garlic or mushroom sauce can be served with unsweetened products.

Matsoni Fritters

Composition:

  • matsoni - 0, 4 l;
  • chicken egg - 2 pcs .;
  • wheat flour - 0, 25 kg;
  • sugar - 50 g;
  • vanilla sugar - 10 g;
  • salt - a pinch;
  • soda - 5 g;
  • refined vegetable oil - how much will go.

Method of preparation:

  • In the yogurt add soda, mix.
  • Break eggs into a bowl, add plain and vanilla sugar to them. Whisk with a whisk.
  • Transfer to a bowl of egg yogurt and mix well, add salt.
  • Add flour in portions and mix well the contents of the bowl so that no lumps of flour remain in it. The finished dough should be similar in texture to the village sour cream.
  • Heat oil in a pan. Spoon over several portions of dough onto it, leaving a small space between them.
  • Cover the pan with a lid. Fry the pancakes on one side for about 3-4 minutes, until they turn golden around the edges.
  • Turn the pancakes over with a spatula, fry them for about 2 minutes on the other side, put them on the plate.
  • Pour some more oil into the pan, fry the next batch of fritters in it.

Serve pancakes with sour cream. It can be replaced with matsoni or Greek yogurt.

Cornmeal Fritters on Matson

Composition:

  • corn flour - 100 g;
  • wheat flour - 100 g;
  • matsoni - 150 ml;
  • chicken egg - 2 pcs .;
  • milk - 120 ml;
  • baking powder for dough - 10 g;
  • salt - a pinch;
  • sugar - to taste;
  • refined vegetable oil - how much will go.

Method of preparation:

  • Sift both types of flour. Wheat mix with baking powder.
  • In the bowl, break the eggs, add salt and sugar to them. Whisk with a whisk.
  • Pour in slightly warmed milk, beat the products together.
  • Add the yogurt, mix with a whisk so that it becomes homogeneous.
  • Pour the cornmeal, mix the products well.
  • Enter the wheat flour. Stir, getting a homogeneous consistency of the dough, the thickness resembling fat sour cream.
  • Heat the pan. Pour some oil on it. Wet the spoon in the water, put the dough in the pan with it.
  • Brown browns on both sides, remove from pan. Cover it with a new portion of oil. Fry the next batch of fritters.

Corn fritters made from dough in matsoni can be made sweet and savory, it all depends on how much sugar you put in the dough. However, adding more than 40 g of the sweet product to the number of ingredients indicated in the recipe is not worth it, otherwise the pancakes will start to burn.

Banana Fritters on Matson

Composition:

  • banana - 150 g;
  • matsoni - 0, 2 l;
  • sugar - 20 g;
  • chicken egg - 1 pc .;
  • soda - 5 g;
  • wheat flour - 100-130 g;
  • refined vegetable oil - how much will go.

Method of preparation:

  • Wash, peel a banana, cut the pulp into chunks and put into a blender container.
  • Add sugar and egg.
  • Turn on the unit and turn its contents into a homogeneous mass.
  • Put the banana-egg mass in a bowl.
  • Mix matsoni with soda, wait for the reaction. Put the yoghurt in yoghurt in a bowl with an egg and a banana. Beat the food with a mixer or a whisk.
  • Sift flour. In small portions enter it into the dough, stirring it thoroughly each time, until its consistency looks like thick cream.
  • Fry the pancakes in boiling oil and serve.

You can replace bananas in this recipe with apples, but then you will need to add 2 times more sugar. Pancakes with zucchini, pumpkin, carrots are cooked in the same way. If you want the products not to be sweet, you can not add sugar at all, but then it doesn't hurt to add a little salt.

Fritters of dough, mixed in matsoni, turn out to be tender, with a pleasant sourness. They can be made sweet and savory, with and without filling.
