In fact, the taste of shark meat, though unusual, but not too exotic. Those who have tried it claim that it resembles fish, chicken, scallops and pork at the same time. Before you start cooking sharks, do not hurt to make sure that its meat is harmless. The fact is that there are sharks whose meat can only be considered conditionally edible. These include the polar shark, which can cause severe poisoning. But there are types of sharks that are not only safe, but also tasty, so their meat is considered a delicacy. These are katran, mako, herring, soup and fox sharks. In general, all species of gray and blue sharks are considered edible. If gray sharks should be wary of, since their meat may contain mercury, then blue meat is safe. It is blue shark steaks that are usually sold in supercards.

  • The main disadvantage of shark meat is ammonia smell. The blood of this fish contains about 2% urea, and therefore it should be released immediately after the shark is caught. Fish that have already passed the necessary initial processing should come into the trade, so you shouldn’t be afraid of ammonia odor when buying a shark steak in the store, it’s not worth it - if it is, then it’s not significant. Regardless of this, shark meat should still be soaked in salt water or milk for at least 6-8 hours, then there will definitely not be an unpleasant smell.
  • Fresh shark purchased in our country is unrealistic. Most often the frozen product goes on sale, less often - chilled. Thawed frozen meat should be in the refrigerator, gradually, otherwise the finished dish will be dry.
  • There is no great need to remove the skin, but still, if there are children or people in your family who are prone to allergies, make sure and cut off the skin along with a small layer of meat adjacent to it. The fact is that it can contain histamines.
  • To improve the taste of shark meat it is recommended to pickle it before cooking. If you are planning to cook a dish of small pieces, then cut the fillet or steak into such pieces should be before marinating.
  • Shark meat is cooked very quickly. To keep it tender, try not to over dry it - do not exceed the cooking time specified in the recipe.

You can cook soups from sharks (remember at least the famous shark fin soup), make main dishes, use shark meat as an ingredient for cold appetizers. The most delicious are hot snacks from the shark. How to cook shark steak in a pan

Composition:

Method of preparation:

  • Prepare steaks by defrosting them, washing and marinating in water acidified with lemon juice. After 3 hours, remove from the marinade, pat dry with napkins.
  • In one bowl, beat an egg, in another, mix the flour with salt and seasoning.
  • Heat the oil in a pan.
  • Dip each steak in an egg, then breaded in flour and fry on both sides, 7-10 minutes on each side.

Before serving, steaks should be sprinkled with chopped greens. As a side dish you can cook mashed potatoes for this dish.

How to cook shark steak in the oven

Composition:

  • shark steaks - 1-1, 2 kg;
  • soy sauce - how much will go;
  • lemon - 1 pc .;
  • spices - to taste;
  • vegetable oil - 20 ml.

Method of preparation:

  • Thawed, washed, and skinned steaks fold into a bowl and cover with soy sauce. Leave it for an hour.
  • Lay a sheet of foil on a baking sheet, brush it with olive oil, put steaks on it.
  • Sprinkle with spices, put thin slices of lemon on top.
  • Cover with a second sheet of foil and put in the oven.
  • Bake at 220 degrees for 30-40 minutes.

This is the easiest recipe for shark roasting, it can be cooked in the oven and according to more interesting recipes, but this will require more ingredients, and more effort will have to be made.

Shark steak baked in foil with mushrooms

Composition:

  • blue or herring shark steaks - 1-1, 2 kg;
  • potatoes - 0.5 kg;
  • champignons - 0, 4 kg;
  • cheese - 0, 2 kg;
  • soy sauce - 60-80 ml;
  • lemon - 1 pc .;
  • olive oil - 60-80 ml;
  • butter - 50 g;
  • oregano - to taste.

Method of preparation:

  • Defrost and wash the shark steaks, if desired, remove the skin.
  • Put the steaks in a bowl, cover them with water so that they cover them completely. Squeeze the juice from the lemon into this water. Leave in a cool place for 6 hours.
  • Remove the steaks from the marinade, dry. In a frying pan, heat about half of the olive oil in the recipe, fry shark steaks in it over medium heat (about 2-3 minutes on each side).
  • From foil, build “boats” with sides of shark steaks. Lubricate these “molds” with the remaining olive oil with a cooking brush.
  • Wash the potatoes, dry and bake until cooked in uniform. If you want to save time, you can simply boil the potatoes.
  • Cool and peel potatoes, cut into thin slices. Put them on the bottom of the “tin” foil.
  • Wash, dry, cut champignons into thin plates.
  • In a clean pan, melt the butter, put the mushrooms in it and fry. You need to fry until you feel that the excess moisture from the mushrooms has evaporated.
  • Put the champignons on the potatoes.
  • Place shark steaks on the mushrooms.
  • Pour on each soy steak sauce. Sprinkle with oregano.
  • On a large grater, rub the cheese, put it on steaks.
  • Place the “forms” of foil on a baking sheet, cover them with a sheet of foil.
  • Heat the oven to 180 degrees and place a baking tray with the billet in it. Bake for 10 minutes. Remove the foil and bake as much again.

Shark steaks baked on a mushroom pillow are served directly in the foil.

Shark steaks in tomato sauce

Composition:

  • shark steaks - 1 kg;
  • dry white wine - 0, 2 l;
  • tomato sauce - 0, 5 l;
  • garlic - 3 cloves;
  • white pepper - 2-3 g;
  • dried basil - 5 g;
  • dried parsley - 5 g;
  • salt - to taste;
  • olive oil - how much will leave;
  • lemon - 2 pcs.

Method of preparation:

  • Put the thawed and washed shark steaks in the pan.
  • Fill with water, mixing it with salt, leave overnight. Take out the steaks, wash and put in a clean pan.
  • Squeeze the juice of 2 lemons on them, cover with water and leave for 3 hours.
  • Heat olive oil in a pan, fry each steak on both sides, and fry each side for 5-7 minutes. The flame should be of medium intensity.
  • Place the fried steaks in a saucepan or deep frying pan. You can even use a thick-bottomed saucepan.
  • Finely chop the garlic, mix it with pepper and aromatic herbs. Sprinkle the steaks with this mixture.
  • Mix tomato sauce with wine, pour this mixture into a container with steaks.
  • Put this container on low fire. Stew shark meat for 8-10 minutes after boiling the sauce.

Garnish for this dish. A good option would be boiled rice, brown is better, or pasta from durum wheat. Do not forget to sprinkle it with a shark sauce.

How to cook shark steaks on the grill

Composition:

  • shark steaks - 1 kg;
  • young zucchini - 0, 3 kg;
  • garlic - 2 cloves;
  • hard tomatoes - 0, 3 kg;
  • salt, spices, dill - to taste;
  • olive oil - 100 ml.

Method of preparation:

  • Prepare shark steaks by cutting off the meat from the bone, removing the skin. If necessary, soak the shark in milk in advance.
  • Wash vegetables, cut into slices.
  • In a blender, mix garlic, dill and oil, season and salted. Spread this mixture on vegetables and steaks, leave for 15 minutes.
  • Place the steaks on the grill rack and fry them for 10-15 minutes depending on the thickness of the pieces.
  • Fry the vegetables on the same grill, it takes 5 minutes.

Grilled steaks are served along with grilled vegetables.

Shark Fillet Kebabs

Composition:

  • shark fillets - 0.5 kg;
  • lemon juice - 80 ml;
  • garlic - 3 cloves;
  • olive oil - how much will leave;
  • honey - 40 ml;
  • ginger root - 20 g;
  • soy sauce - 60 ml.

Method of preparation:

  • Cut shark fillets into pieces of approximately 2 cm.
  • Crush the garlic by passing it through a special press.
  • Rub the ginger.
  • Mix 40 ml of butter, honey, lemon juice, garlic and ginger, as well as soy sauce in a bowl.
  • Marinate shark fillet in the resulting sauce.
  • After an hour, remove the pieces from the sauce and string them onto wooden skewers.
  • Fry kebabs on each of the 4 sides for 5 minutes in a frying pan in boiling oil.

Skewers can only be served with sauce, and you can cook a side dish for them.
