Cooking Features

Jamberry jam is especially tasty if you know the subtleties of cooking at home.

  • Irga’s rind is rather dense, so before making jam from it, it is blanched for a couple of minutes, dipped in boiling water in a colander. However, if the recipe involves a long brew, this step can be skipped.
  • There are a lot of sugars in the composition of the irgi, so it does not take much sugar to make jam from it. Usually for 1 kg of berries take no more than 1 cup of granulated sugar. Otherwise, the jam may turn out to be cloying.
  • There are many organic acids in an irga that can react with the metal, so you can only boil it in an enamel bowl or in stainless steel containers, stir it with a wooden or stainless steel spoon.
  • For cooking irgi use a bowl, bowl or other container with a large area of ​​evaporation, otherwise the jam will be very liquid.
  • Before you put the finished jam on the banks, it can be cooled. In this case, the berries will be evenly distributed over the entire area. Otherwise, the syrup during cooling will be at the bottom, and berries - in the upper part of the jar. However, preserved better jam poured in hot cans.
  • Jamberry jam is tasty without any additives, however, many people add citric acid to it when cooking, which not only adds sourness, but also increases the preservation of jam, because lemongrass is a preservative.
  • Fresh shadberry deteriorates quickly, therefore, harvesting from it for the winter should be done on the same day when it was collected, or, in extreme cases, the next one.

You can try to boil some irgi jam with raspberries or other berries, fruits. In this case, it will be even tastier and more useful.

A simple recipe for jam jungle

Composition (1 l):

  • shadberry - 1 kg;
  • sugar - 0, 2 kg.

Preparation Method:

  • Go through the irgu, leaving only the ripe one, removing the spoiled berries, twigs and leaves.
  • Rinse the berry in warm running water.
  • Boil water and dip the irga in it for 2 minutes. Take the berry out of the water with a skimmer, let it dry. So that there is no need to collect the berries with a skimmer, they can be put into a colander before being put into boiling water, in which case they will remain in it.
  • Fold the dried irgu into the bowl and cover it with sugar. Leave for about an hour or two until the shisha juice comes out and the shaker is immersed in the syrup.
  • Place the bowl on the fire, bring to a boil and cook for 5 minutes on high heat, removing the foam that forms.
  • Leave irgu for a couple of hours to soak in syrup. Then heat it to a boil again and cook for another 5 minutes.
  • Repeat the procedure again.
  • Spread the jam on sterilized jars, without cooling, roll up sterilized lids.
  • When the jam has cooled, it can be rearranged for the winter in the pantry. Before it cools down, it is better to put the jars with it on the lids to make sure that the twist is tight: insufficiently closed jars will leak.

Despite the ease of preparation and the small amount of ingredients used, the jam is tasty and healthy, well worth the whole winter at room temperature.

Thick Irrigamer

The composition (1, 5 l):

  • shave - 1, 5 kg;
  • sugar - 0, 4 kg;
  • water - 0, 2 liters.

Preparation Method:

  • Flush the washed irgu with water and set on low heat. After boiling, grind for half an hour and cook the irgu, stirring constantly, so that it does not burn.
  • Add sugar, stir and continue to boil for the same amount, constantly mixing and removing the resulting foam. If you want to get a thicker jam, you can cook a little longer (45-60 minutes).
  • Wait until the jam has cooled, chop it with a blender and spread it over sterilized jars. Close them tightly and put them in a cool place.

According to this recipe, irrig jam is thick, reminiscent of jam, and spread well on sandwiches. True, it is safer to keep it in a cool place. If you want to keep the jam at room temperature, before pastering, pasteurize the jars of jam in the water bath for 10-20 minutes depending on their volume.

Jamberry jam with citric acid (a classic recipe)

Composition (per 1-1, 25 l):

  • shadberry - 1 kg;
  • sugar - 0, 25 kg;
  • water - 0, 25 l,
  • citric acid - 1 g.

Preparation Method:

  • Boil thick syrup from water and sugar.
  • Dip prepared irgu in a hot syrup and cook for 7 minutes.
  • Leave the bowl of jam for 8-12 hours.
  • Place a bowl of jam on the fire and cook until ready, that is, until it becomes as thick as you like, but no less than 5 minutes after boiling.
  • Add citric acid or lemon juice (10 ml), stir and spread on small sterilized jars.
  • Spin the jars in metal lids as tightly as possible and leave to cool upside down.
  • After cooling, put in the winter in the pantry.

The jam prepared according to this recipe is well kept and turns out very tasty. If you do not cook it too long, it will remain useful. At the same time, the process of cooking delicacies cannot be called difficult, therefore many housewives choose this particular recipe.

Jam with Raspberry Jam

The composition (1, 5-1, 75 liters):

  • shave - 0, 5 kg;
  • raspberry - 0, 5 kg;
  • sugar - 1 kg.

Preparation Method:

  • Rinse the irgu, dip it for 2 minutes in hot water, remove and dry.
  • Sort and wash the raspberries.
  • Mix the berries, add sugar and leave overnight (for 6-12 hours).
  • Put the bowl with the berry mass on the fire, bring to a boil and cook for 5 minutes on high heat, removing the foam that forms.
  • Pour the jam over the jars, close them tightly. Be sure to sterilize caps and jars before this.
  • After the jam has cooled, put it in the fridge.

This kind of jam helps a lot when you have a cold, but you can only keep it in a cool place.

Irrigi jam is a tasty and healthy delicacy, which is not difficult to prepare for the winter. It is especially good to eat in the evening, as it has a calming effect and gives a good sleep.
