Method of preparation:

  • Wash tomatoes, dry with a napkin. If the fruits are small, make a toothpick puncture around the stem. Cut large tomatoes into 4 slices.
  • Put dill, all kinds of pepper, currant leaves, cherries and garlic cloves in half at the bottom of the pot or jar.
  • Place tomatoes on top.
  • Boil water, add sugar and salt to it. Wait until they dissolve.
  • Add laurel leaves. Boil for 2-3 minutes.
  • Fill the tomatoes with hot pickle. Cover the container with a lid. Leave the tomatoes salted at room temperature until the brine has cooled completely.

After cooling, the container with tomatoes should be placed in the refrigerator. After 2-3 days (depending on the size of the fruit and the degree of their maturity), salted tomatoes will be ready for use. Instead of hot pepper, you can add sliced ​​half rings sweet pepper or onions. Then the appetizer will get a completely different taste, less spicy, but no less pleasant.

Instant salted tomatoes in a spicy marinade

Composition:

  • tomatoes - 1 kg;
  • water - 1, 5 l;
  • cinnamon - 1/4 of the sticks;
  • salt - 50 g;
  • sugar - 40 g;
  • garlic - 3 cloves;
  • currant leaves - 2 pcs .;
  • cherry leaves - 2 pcs .;
  • fresh parsley, dill, celery - 50 g.

Method of preparation:

  • Prepare the tomatoes by washing them by drying them with a kitchen towel and chopping them with a toothpick. Large fruits need to be cut or even divided with a knife into 2-4 pieces.
  • At the bottom of the container in which you plan to pickle the tomatoes, put half of the washed and dried herbs, cinnamon, leaves of fruit trees and garlic cloves.
  • Put tomatoes on top. Cover them with the remaining greens.
  • Boil brine from water, salt and sugar. Without cooling, fill them with tomatoes. Leave at room temperature for 3-4 hours.
  • Put it in the fridge.

After 2-3 days, the quick-cooking tomatoes salted in a spicy marinade will be ready to eat.

Stuffed Tomatoes of Quick Salt

Composition:

  • tomatoes of small or medium size - 2 kg;
  • coarse salt - 100 g;
  • garlic - 100 g;
  • vegetable oil - 100 ml;
  • fresh dill - 50 g;
  • fresh parsley - 50 g;
  • fresh cilantro - 50 g.

Method of preparation:

  • Finely chop the fresh greens with a knife, having washed and dried them beforehand.
  • Pass the garlic through the press, add to the chopped greens.
  • Pour in oil, mix.
  • Wash tomatoes, dry, make transverse cuts, not cutting to the edge about 1 cm.
  • Salt both halves from the inside, using at least 1 tsp of salt for each tomato.
  • Spread the filling between the tomatoes.
  • Fold the tomatoes into a glass mold or pan, cover with cling film.
  • Leave at room temperature for 5-6 hours. Then put in the fridge. Salted tomatoes will be 2-4 days, depending on their size and the amount of salt used.

This is one of the few recipes for quickly salting tomatoes in a dry way, without using brine. Thanks to this snack has a unique taste. It looks so appetizing that it can become a decoration of a festive table.
