Flambe

Flambe (or flambing) is not an ordinary way of cooking. However, such food is prepared traditionally, but before serving it is poured over with brandy or another strong alcoholic beverage and set on fire.

The result: alcohol burns out, and the dish gets an unusual and savory taste.

Most often this occurs in front of the client. Such an action with elements of the show is held in cafes and restaurants, thereby attracting the public to their establishments.

But flambé can be cooked at home.

Subtleties

  • Only strong alcoholic beverages are used as fuel: brandy, rum, vodka, brandy.
  • Almost all products can be flamed: vegetables, fish, meat, fruits and berries. The flambe meat is cooked longer and requires skill and skill, so at home the housewives often make flambé from fruits or vegetables.
  • Considering the fact that the burning temperature of alcoholic beverages is quite high, safety precautions must be observed to avoid scalding.
  • Before you begin such an unusual cooking, you need to get the appropriate dishes. Modern pans with non-stick coating for this purpose will not work. Therefore, it is best to use stainless steel or cast iron frying pans. They must be with a long handle to prevent burns.

Banana flambé

Ingredients:

  • bananas - 4 pcs .;
  • butter - 70 g;
  • sugar - 80 g;
  • lemon juice - 40 ml;
  • orange juice - 100 ml;
  • cognac - 50 ml;
  • orange peel - 1 tbsp. l .;
  • ice cream.

Method of preparation

  • Cut the bananas along in two.
  • Split the oil in half. Melt one half in a frying pan and fry bananas on it.
  • Pour orange and lemon juice in another skillet, add sugar and remaining oil. Stir and simmer over low heat for about three minutes.
  • Put the fried bananas in the syrup and warm it all together for a few minutes.
  • Cook the plates on which you will lay out your dessert. Sprinkle bananas with zest, pour over brandy and set it on fire. When the fire goes out, put the dessert on the plates. Next put a portion of ice cream.

Pancakes with fruit flambé

Ingredients:

  • thin pancakes made according to your favorite recipe - 8 pcs .;
  • cranberries - 100 g;
  • apples - 1 pc .;
  • sugar - 100 g;
  • butter - 50 g;
  • cognac - 50 ml.

Method of preparation

  • Cut the apples, remove the core, cut the fruit into cubes.
  • Wash cranberries and dry.
  • Melt butter in a pan, add apples and berries. Put the sugar. Stir and heat to dissolve sugar.
  • Pour brandy over the fruit and set it on fire.
  • When the fire goes out, keep the fruit on fire for another 2-3 minutes.
  • Place pancakes and fruit flambé on the plate.

Orange Flambe Pancakes

Ingredients:

  • thin pancakes - 8 pcs .;
  • butter - 50 g;
  • sugar - 8 tbsp. l .;
  • oranges - 2 pcs .;
  • cognac - 80 ml.

Method of preparation

  • Divide all ingredients into 4 parts, each of which will be used to make flambé for two pancakes.
  • Peel the oranges, disassemble, and remove the white film from them.
  • Put the butter in the pan and melt. Add sugar and mix.
  • When the sugar has melted, put orange slices in it and mix again.
  • Put the pancake, folded in half, and coat with syrup.
  • Pour in a spoonful of brandy and set it on fire.
  • When the fire goes out, put the pancake on a plate and cover with orange flambé.
  • In the remaining syrup, cook another flambe pancake.

Berry flambé in sand baskets

Ingredients:

  • shortbread dough - 500 g;
  • strawberries - 200 g;
  • sweet cherry - 100 g;
  • cranberries - 100 g;
  • cognac - 70 g;
  • sugar - 70 g;
  • butter - 50 g.

Method of preparation

  • Bake baskets from short pastry. Cool it down.
  • Rinse and dry the berries.
  • Melt butter in a pan, put sugar in it and warm it until caramel is obtained.
  • Put the berries in it and mix.
  • Pour over brandy and set it on fire.
  • When the fire goes out, put the berries in baskets.

Using these recipes, flambé can be made from any kind of food. The main thing - do not be afraid to experiment!
