One of the most popular types of such preparations is Polish tomatoes. They are cooked with onions and herbs. Products are laid out in a jar in layers, then poured with marinade, sometimes sterilized and rolled up for better preservation. The snack has a pleasant sweet-sour taste, seductive aroma and is in great demand on cold days.

Tomatoes in Polish are prepared according to similar recipes, the technology of their preparation does not have significant differences. Knowing the main points allows the culinary specialist to experiment in order to prepare for the winter a snack that most closely matches his gastronomic preferences.

  • For tomatoes in Polish, you can take vegetables of any type and size, but they should not be spoiled, soft, overripe, otherwise the pieces will not retain their shape, the salad will lose its aesthetic appearance.
  • You can chop the tomatoes in halves, quarters or smaller pieces - it depends on the size of the fruit. The only important thing is that the same jar does not get pieces of different size and shape.
  • The amount of onions and herbs in the recipe can be adjusted based on your taste, but none of these ingredients can be excluded. From the green preference is given to parsley and dill, but you can also use basil and celery, which also shade the taste of tomatoes. The composition (1, 5 l):

  • tomatoes - 1 kg;
  • onions - 0, 2 kg;
  • dill greens - 100 g;
  • garlic - 3 cloves;
  • refined vegetable oil - 30 ml;
  • table vinegar (9 percent) - 30 ml;
  • sugar - 30 g;
  • salt - 10 g;
  • water - 0, 5 l.

Method of preparation:

  • Wash tomatoes, dry with a towel, cut into slices of the same size, removing seals in the region of the peduncle.
  • Wash the dill, let it dry, cut it.
  • Crush garlic cloves with the flat side of a knife, finely chop, mix with chopped dill.
  • Free the onions from the husk, cut them into thin half rings or even quarters of the rings if you have large bulbs.
  • Sterilize the jars and their lids.
  • Spread half of the tomatoes on the cans.
  • Place half the onion on top, put the dill and garlic mixture on the onion.
  • Fill the jars with the remaining tomatoes, top with the remaining onions.
  • Add oil and vinegar directly to the jars.
  • Boil water, dissolve sugar and salt in it, boil for 2-3 minutes.
  • Fill the tomatoes with hot pickle, cover the jars with the prepared lids.
  • At the bottom of the pan lay a towel, put a jar of tomatoes on it. Pour warm water into the pan so that its level reaches the hangers of the cans.
  • Sterilize the jars for 10-30 minutes depending on their volume (10 minutes for every 0, 5 l).
  • Carefully remove the cans from the water, roll up.
  • Turn the jars over, cover with a blanket. Leave to cool in a steam bath for better preservation.

After cooling, a can of tomato salad can be put away in the pantry or any other room where you keep supplies for the winter.

Polish tomatoes with dill and parsley

Composition (3 liters):

  • tomatoes - 2 kg;
  • onions - 0, 3 kg;
  • dill - 50 g;
  • parsley - 50 g;
  • garlic - 3 cloves;
  • bay leaf - 3 pcs .;
  • black pepper peas - 12 pcs .;
  • table vinegar (9 percent) - 60 ml;
  • refined vegetable oil - 60 ml;
  • sugar - 60 g;
  • salt - 30 g;
  • water - 1 l.

Method of preparation:

  • Prepare the tomatoes by washing, dried, cut into slices. Do not forget to remove patches of white firm pulp in the region of the peduncles.
  • Wash the greens, let it dry, cut off the coarse stems, leaving only the leaves on the tender twigs.
  • Peel the garlic. Wash and dry the spices.
  • Sterilize the jars. Spread on them the leaves of laurel, peppercorns, garlic cloves. Put on a sprig of dill and parsley.
  • Put a layer of tomatoes on them, put a layer of onion sliced ​​into thin rings, a few sprigs of parsley and dill. Continue to fill the jars, alternating tomatoes, onions and greens. Put a ring of onions on top.
  • Pour the appropriate amount of oil and vinegar into each jar.
  • Boil brine from water, sugar and salt by boiling it for 5 minutes.

  • onions - 150 g;
  • parsley - 50 g;

  • bay leaf - 4 pcs .;
  • black pepper peas - 16 pcs .;
  • allspice peas - 12 pcs .;
  • refined vegetable oil - 80 ml;
  • table vinegar (9 percent) - 100 ml;
  • sugar - 20 g;
  • salt - 20 g;
  • water - how much will go into the banks.

Method of preparation:

  • Wash the ingredients, let them dry.
  • Cut the tomatoes into large slices, chop the parsley and onion with a knife, cut the garlic into pieces of minimal size, cut the onion into half rings, and pepper into thin rings.
  • Sterilize the jars, boil suitable lids.
  • Spread the spice on the jars. Put pepper rings on the bottom.
  • Fill the jars with tomatoes, shifting them with onions, herbs and garlic.
  • Put salt and pepper in each jar. Pour the vinegar and oil over the cans.
  • Boil water, pour boiling water over vegetables. Sterilize the jars in a water bath from 20 to 60 minutes depending on their volume. Hermetically capper, flip, wrap.
