  • Gentle meat is found in lamb, but not in old sheep. Therefore, it is desirable to acquire the ribs that belonged to the young animal. They are not large, odorless, the fat is white or light yellow on them, without pronounced yellowness.
  • During freezing and subsequent defrosting of meat, it loses its juiciness. Therefore, if you want the lamb ribs in the oven turned out to be juicy, you need to buy them fresh or chilled, that is, not subjected to freezing.
  • When baked on ribs, the thinnest film is formed, which allows them to preserve their richness and flavor. However, if the product is marinated before cooking, it will smell even more seductive. In addition, pickling allows you to slightly reduce the cooking time, but it is considerable.
  • The cooking time for lamb ribs depends on their size and the age of the meat. Lamb ribs bake from an hour to one and a half hours, an adult ram - from one and a half to two hours. Cooking time can be reduced if you pre-marin the ribs for 3-4 hours at least or boil until half cooked. True, pre-boiled, and then already baked ribs have a slightly different taste, so it is advisable to limit the marinating.

Lamb chops baked on a lattice

Composition:

  • lamb ribs - 1 kg;
  • honey - 10 ml;
  • sugar - 15 g;
  • olive oil - 40 ml;
  • dried thyme - 10 g;
  • oregano - 10 g;
  • a mixture of peppers - 10 g;
  • paprika - 10 g;
  • garlic - 2 cloves;
  • lemon - 1 pc .;
  • Tabasco sauce - 5 ml;
  • dry white wine - 20 ml;
  • butter - 100 g;
  • salt - to taste;
  • mustard - 20 ml.

Method of preparation:

  • Rinse ribs, cut into portions and pat dry.
  • In a small container, mix thyme, oregano, and pepper mixture. Add to them finely chopped with a knife or garlic passed through a press. Dilute this mixture with olive oil. Spread the sauce over the ribs and put them in the fridge for an hour, so they are slightly marinated.
  • Pour water on the pan, put it in the oven. Place a trellis over it and place the marinated ribs on it.
  • Turn on the oven, wait until the temperature reaches 190 degrees, and cook the ribs at this temperature for 40 minutes first on one side, then 30 minutes on the other.
  • In a small saucepan, mix wine, honey, sugar, salt, paprika, juice from one lemon, Tabasco sauce and mustard. Heat over low heat, not allowing to boil. Add the butter and wait for it to dissolve.
  • Sauce the ribs and send them to the oven for another half an hour.

When cooking ribs, make sure that there is water in the pan, otherwise the ribs may be too dry. When offering this dish to guests, keep in mind that it is very spicy.

Lamb ribs baked in oven in foil

Composition:

  • lamb ribs - 1 kg;
  • fresh parsley - 100 g;
  • tomatoes - 0, 3 kg;
  • hard cheese - 100 g;
  • dried basil - 10 g;
  • garlic - 2 cloves;
  • lemon - 1 pc .;
  • vegetable oil - 60 ml;
  • salt, pepper - to taste.

Method of preparation:

  • Wash and dry ribs well.
  • Wash tomatoes, blot with a napkin, cut into thin slices using a special vegetable knife.
  • Chop cheese on a fine grater.
  • Wash greens, chop with a knife (separately).
  • In a small bowl, squeeze lemon juice, add to it finely chopped garlic, parsley and dried basil. Marinate the ribs in this sauce. You need to pickle for at least an hour, keeping the meat cold at this time.
  • Heat oil in a pan. Put ribs in it and fry over high heat until golden brown.
  • Prepare the foil. Each rib will need its separate piece, while the foil is better to fold in half.
  • Place a rib in the center of the piece of foil, salt it and pepper to taste. Cover with circles of tomatoes, sprinkle with cheese. Wrap in foil and place on a baking sheet.
  • Do the same with the remaining ribs.
  • Preheat the oven to 200 degrees and place a pan with ribs in it. Bake them for one and a half hours.

You can serve lamb chops cooked according to this recipe in foil or by turning and putting it on a plate. Garnish for this snack is not required, but it goes well with fresh vegetables. Therefore, pickled onions or fresh vegetable salad would be appropriate in this case.

Lamb ribs baked in the sleeve

Composition:

  • lamb ribs - 1 kg;
  • garlic - 1 head;
  • fresh dill - 100 g;
  • fresh coriander - 50 g;
  • thyme - 5 g;
  • salt, pepper - to taste.

Method of preparation:

  • Prepare the ribs by rinsing them well and blotting them with a towel.
  • Finely chop cilantro and dill with a knife.
  • Peel and chop the garlic into small pieces.
  • Put the greens, thyme and garlic in the mortar. Add pepper and salt, mash well with a pestle.
  • Rub the spicy mixture over the ribs and leave for an hour in a cool place.
  • Fold the ribs into the baking sleeve. Tie the sleeve on both sides or fasten its edges tightly with special clips. In the film, make several small holes for steam to escape. Holes are easily made with a toothpick.
  • Preheat the oven to 180 degrees and place a pan with ribs in it.
  • Bake ribs in the sleeve for one and a half hours.

Composition:

  • lamb ribs - 1 kg;
  • honey - 20 ml;
  • ketchup - 20 ml;
  • mustard - 20 ml;
  • sesame (optional) - 20 g;
  • salt - to taste.

Method of preparation:

  • Melt the honey to a liquid state, mix with mustard and ketchup. Stir until the sauce is completely smooth.
  • Smear the ribs that have been washed and towel dried beforehand. Leave for 2 hours in the refrigerator to soak.
  • Lay a foil on a baking sheet, put ribs on it. Cover them with a layer of foil.
  • Place the pan with ribs in the oven preheated to 190 degrees.
  • After half an hour, flip over the ribs, re-cover with foil and put back into the oven.
  • After another half hour, remove the ribs again, brush them with the remaining sauce, sprinkle with sesame. Return to the oven, but this time without covering it with foil. Bake for half an hour.

Lamb ribs baked in honey mustard glaze look very appetizing. Their taste will not disappoint you either.

Lamb chops with potatoes in pots

Composition:

  • lamb ribs - 1 kg;
  • potatoes - 0.5 kg;
  • celery root - 100 g;
  • onions - 100 g;
  • tomatoes - 0.5 kg;
  • cheese - 100 g;
  • hot peppers - 1 pc .;
  • salt, seasonings - to taste;
  • vegetable oil - how much will leave.

Method of preparation:

  • Pepper wash, cut, remove seeds. Chop pulp in a blender. Mix with olive oil in the amount of 40-50 ml and seasonings.
  • Gently wash and dry the ribs with a spicy mixture and put in the fridge for an hour to marinate.
  • Peel the potatoes and cut into small cubes.
  • Cut the peeled celery root into small cubes.
  • Cut the peeled onion in medium-sized pieces.
  • Heat the butter in a deep frying pan, put the cubes of potato, celery and onion in it. Fry on medium heat until the vegetables are browned.
  • Spread the vegetables in pots.
  • Remove the ribs from the refrigerator, shake off excess pepper from them. Put on the potatoes. In each pot pour half a glass of warm water.
  • Cut the washed tomatoes into cubes, put them on ribs.
  • Rub the cheese and sprinkle the dish with it.
  • Put the pots in the oven. Turn it on and wait until the temperature reaches 180 degrees. After that, prepare the dish for half an hour at the specified temperature.
  • Let the pots stand for 15 minutes in the oven turned off, after which they can be served.
