Many liver salads cause some confusion. Not surprising, because in domestic restaurants they began to serve relatively recently. Earlier in home kitchens, they did not prepare at all.
Salads with liver came to us from Europe. If they successfully combine the products and cook everything correctly, they will quickly enter into the usual menu of each family.
Salad with liver and mushrooms: general principles of cooking
The main ingredients of the following recipes are liver and mushrooms.
We supplement them with products such as garlic, onions, eggs, boiled chicken meat, and some other ingredients combined with them.
Salad dressing should maximize the taste of each of them.
Layered salad with liver and mushrooms

Ingredients
• chicken liver - 300 gr .;
• 3 eggs;
• champignons - 200 gr .;
• onion;
• ham - 200 gr .;
• sunflower oil for roasting;
• ground black pepper, salt;
• mayonnaise - 250 gr .;
• vinegar - a tablespoon;
• a little parsley;
• sugar - a tablespoon.
Method of preparation
1. Heat the pan, pour a small amount of oil.
2. Wash the liver and put it on the pan. Fry for 5 minutes on each side.
3. When the liver is completely cooled - cut it into thin strips.
4. Boil the eggs, peel and also cut into strips.
5. Wash the mushrooms under running water. Cut into small pieces, if the champignons are small - just cut in half.
6. Heat the pan well with a small amount of oil, spread the mushrooms and fry for 7-10 minutes, stirring occasionally. At the end add some salt, add some black pepper.
7. Peel the onion and cut into half rings as thin as possible. We spread it in a deep plate and pour boiling water over it so that it covers the onion completely. Add some salt, vinegar and sugar. All mix and cover with a lid. Onions should marinate for about 10 minutes, after which it needs to be far enough to cool completely. 8. Ham cut into thin strips.
9. Begin to lay out a layer of salad. First, we smear a wide flat plate with a thin layer of mayonnaise.
10. Spread a layer of the liver, lightly salt on top, peremazyvayem mayonnaise.

Ingredients
• pork liver - 350 gr .;
• onion;
• beetroot - 300 gr .;
• three cloves of garlic;
• oyster mushrooms - 150 gr .;
• vegetable oil;
• mayonnaise - 150 ml .;
• salt pepper.
Method of preparation
1. Boil the beets in salted water, it should be completely soft. Check the readiness with a sharp knife, it should easily go through the beets.
2. Cut the liver into steaks 1 cm thick.
3. Heat the pan with a little oil. Spread steaks and fry each for 3 minutes on both sides.
4. Put the prepared liver in a separate dish, salt and add black pepper.
5. Mushrooms cut into strips.
6. Put them on a preheated pan and fry for 10 minutes in vegetable oil. The fire should be moderate.
7. All ingredients must cool completely.
8. Grate the beets on a coarse grater.
9. Garlic peeled and cut as small as possible.
10. Cut the steaks of the finished liver into strips.
11. All products are mixed together with mayonnaise. Add some salt if needed. Let the salad stand for 1 hour. In the plates it can be sprinkled with fresh parsley and fried sesame.
Salad with liver, mushrooms and cheese

• chicken liver - 200 gr .;
• 1 chicken ham;
• walnuts - 70 gr .;
• white cheese - 130 gr .;
• champignons - 300 gr .;
• olive oil - 2 tablespoons;
• Lettuce salad - 300 gr .;
• a teaspoon of honey;
• a tablespoon of lemon juice;
• a tablespoon of soy sauce; • salt;
• a teaspoon of finished mustard beans;
• sunflower oil for roasting.
Method of preparation
1. Fry chicken liver in vegetable oil on both sides for 5 minutes. We salt.
2. Boil the ham in salted water.
3. Mushrooms cut into four parts each. Fry on moderate heat for 10 minutes, add salt.
4. Walnuts are fried in a dry frying pan for 7-10 minutes, stirring constantly. Then, if possible, we remove from them the husk, lightly rubbing nuts between the palms.
5. Cut the cheese into cubes, their sides should be about 1 cm each.
6. When the meat cools down - tear it with small petals.

10. Put all the products in a deep bowl. Gently tear the leaves of lettuce into small pieces. Pour over the sauce and mix with a wooden spoon or hands. Do not use metal devices, they can damage the weed, and lemon juice will give an unpleasant taste when in contact with the metal.
11. Put the salad portions on plates. You can decorate with a leaf of fresh parsley or arugula.
Salad with liver, mushrooms and breadcrumbs
Dietary variant of Caesar salad
Ingredients
• pork liver - 250 gr .;
• white bread - 200 gr .;
• one large tomato or two medium ones;
• half onion;
• hard cheese - 70 gr .;
• a tablespoon of lemon juice;
• tablespoon of olive oil;
• teaspoon sesame;
• a tablespoon of soy sauce;
• oyster mushrooms - 150 gr .;
• a teaspoon of vinegar;
• a teaspoon of sugar;
• oil for roasting;
• half a teaspoon of honey.
Method of preparation
1. Wash the liver, put the pan on a medium heat and pour a little sunflower oil. Cut the liver into steaks a little less than a centimeter thick. Fry on both sides for 3 minutes. At the end of the roast add salt. 2. Cut the bread into small cubes. Dry in the oven until a light crust is formed. Cooling down.
3. Tomato wash, cut into 4 parts. With a sharp thin knife we cut out the core, leaving only the outer part of the tomato, that is, the fillet. Cut it into strips.
4. Onion cut into half rings, lay out on a plate and pour boiling water. Add vinegar and sugar. Cover with a lid for a few minutes. Then pickled onions discarded in a colander, so that all the liquid glass.

Salad with chicken liver, mushrooms and grapefruit

Ingredients
• chicken liver - 200 gr .;
• thin sliced raw bacon;
• 1 grapefruit;
• 300 gr. oyster mushroom;
• ground black pepper;
• mix of salads;
• a tablespoon of soy sauce;
• juice of half a lemon;
• a teaspoon of finished mustard beans;
• half a teaspoon of powdered sugar;
• tablespoon of olive oil.
Method of preparation
1. Halves each chicken liver is separated. All of them are wrapped in bacon. Sold special, already cut into thin petals. If they are too wide, they can be cut lengthwise. Get narrow ribbons that wrap the liver.
2. Pour quite a bit of vegetable oil into the pan and fry each piece of liver in bacon. It should turn rosy. In the end, salt and lightly sprinkle with black pepper.

1. On medium heat, fry the liver pieces until ready. This is about 4-5 minutes on each side. For roasting we use sunflower oil. We salt.

Salad with liver, mushrooms and Chinese omelette

Ingredients
• chicken liver - 300 gr .;
• 2 eggs;
• soy sauce - 3 tablespoons;
• garlic - 2 cloves;
• 2 large lettuce leaves;
• Oyster mushroom mushrooms - 250 gr .;
• olive oil - 2 tablespoons;
• garlic - 3 cloves;
• Wasabi sauce - half a teaspoon.
Method of preparation
1. Fry the liver in vegetable oil. We salt.
2. Make an omelet from eggs and a tablespoon of soy sauce. Well heated pan, pour vegetable oil. When it is heated - pour half an omelet, fry on both sides. With the rest we do the same. 3.
