Squash pancakes - the basic principles of cooking

Squash pancakes are juicy and light. For the preparation of traditional dishes you need zucchini, spices, flour and eggs. It is better to use a young vegetable, with not yet formed seeds.

Zucchini crushed into large chips, squeeze the resulting mass slightly. Add spices and other ingredients to it. Dough knead with a spoon until smooth. Zucchini pancakes are fried in vegetable oil, but if you want to get a less-calorie meal, you can cook them in the oven.

For those who love hearty meals, pancakes are prepared with the addition of potatoes or minced meat.

The ideal sauce for squash pancakes is garlic, based on sour cream, yogurt or mayonnaise. But you can serve them with ketchup, tomato sauce, tkemali, or a mixture of hot and sweet peppers.

Recipe 1. Squash pancakes


  • an egg;
  • sunflower oil;
  • zucchini - half a kilogram;
  • onion;
  • sea salt and ground pepper;
  • 75 g flour.

Method of preparation

1. Wash zucchini, wipe with a kitchen towel and chop on a medium grater. Released juice drain. Squeeze out the resulting mass from excess fluid.

2. Shred the onion bulb finely chop. Add to grated zucchini.

3. Break egg into grated zucchini, add flour and season with freshly ground pepper and salt. Pour in 80 ml of sunflower oil. Mix thoroughly.

4. Pour the oil into the preheated pan. Spread a tablespoon of small pancakes and fry until ruddy. Then turn the pancakes and fry on the other side.

5. Cover the dish with paper towels. Put in it ready pancakes to get rid of excess oil. Serve with sour cream or tomato sauce.

Recipe 2. Squash pancakes with cheese in the oven


  • one zucchini;
  • salt;
  • cheese - 150 g;
  • ground pepper;
  • sunflower oil;
  • an egg;
  • a glass of flour or semolina;
  • parsley - a small bunch;
  • garlic - two cloves;
  • sour cream - 200 g.

Method of preparation

Cover the stuffing with the second half of the pancake so that the meat is inside the pancake. Cook for another five minutes.

6. Cover the plate with sheets of green lettuce and place the ready pancake on it. Serve with greens and sour cream.

Recipe 4. Zucchini pancakes with butter dressing in the oven


  • sea salt and spices;
  • two onions;
  • olive oil;
  • kilogram of young zucchini;
  • flour - 150 g;
  • butter - 50 g;
  • an egg;
  • milk - 100 ml;
  • lemon juice - 5 ml.

Method of preparation

1. Brush my zucchini. We wipe with a towel and grind into large chips. We turn back the squash mass on a sieve and leave it to the juice stack. Then squeeze and shift to the bowl. Pepper, salt and add lemon juice. We drive in an egg, pour in milk and pour in flour.

2. Clean and chop the onion in a blender to a slurry. Add it to the squash mass. Stir until smooth with a spoon.
