Beef with eggplants under vegetable sauce in the oven is a simple dish, very tasty and not very high-calorie, which is rather important nowadays. A sauce made from vegetables, no flour, sugar, milk or cream. Meat without fat, and, nevertheless, it turns out juicy and tender. Eggplants do not need to pre-fry, just a little salt to become soft, and everyone knows that when roasting eggplants absorb vegetable oil like a sponge. Tasty, of course, but the calories going wild.
I advise you to prepare light yoghurt sauce from low-fat unsweetened yogurt, Dijon mustard, dill or cilantro, sea salt and ground black pepper to the finished dish - fresh and healthy!

- 400 g of beef;
- 2 onions;
- 2 medium eggplants;
- 3 cloves of garlic;
- 1 pod of chili;
- 4 tomatoes;
- bunch of cilantro;
- ginger root, olive oil, salt, pepper.
Method of cooking beef with eggplants under vegetable sauce
We wash a piece of beef without bone with cold water, cut off with a sharp knife fat, sinews, tendons and films. I advise you to choose the meat of young cattle for this recipe.
Cut the meat large, put it in the bowl of the blender or skip through a meat grinder with a small nozzle.
Add 50 ml of cold water to the blender bowl, grind the meat - make juicy beef mince.
We cut one onion of onion into small cubes. Add chopped onion, salt to taste, ground black or red pepper in a bowl of ground beef.
Carefully knead the mince for a few minutes.
Eggplant cut into slices about one centimeter thick. Then sprinkle the slices of vegetables with salt, leave for a few minutes. Salt will soften the vegetables and pull out a little moisture, the slices will become pliable, they will decrease a little, therefore, they will take less space in the baking dish.
Lubricate the rectangular ceramic shape with a thin layer of olive oil. On a slice of eggplant put a tablespoon of minced meat with onions. We put slices with meat in a form tightly to each other.
Making vegetable sauce. Pour 2 tablespoons of olive oil into the pan, heat it. Grind the garlic cloves, cut into chili peppers and finely chop the ginger root (1.5-2 centimeters).
Throw ginger, garlic and chilli in hot oil, fry for a few seconds.
Cut the rest of the onion head into cubes. Also cut and tomatoes. Add chopped onion to the pan, finely chopped tomatoes in 5-6 minutes.
Cooking vegetables for sauce over moderate heat for about 10 minutes, then salt, pepper, grind with a dipping blender.
Pour thick vegetable sauce in the form of meat and eggplant.
Heat the oven to 175 degrees, bake beef with eggplants for 45-50 minutes. Then we take the form out of the oven, sprinkle the finished dish with finely chopped cilantro.
Serve on the table with sour cream or yoghurt sauce. Enjoy your meal!
