Pork with stewed vegetables - one of the most successful combinations! In the process of stewing, potatoes, carrots and other vegetables are soaked with meat juices and the resulting fat, while the meat remains juicy, it turns out soft and fragrant.
In the process of cooking it is important to observe the sequence of laying the products - only in this case, the potato will retain its shape and will not melt. If desired, in addition to carrots and peppers, you can add asparagus beans, mushrooms and any other vegetables at your discretion.
- pork ribs - 800 g;
- potatoes - 5 pcs .;
- carrots - 1 pc .;
- onions - 1 pc .;
- Bulgarian pepper - 1 pc .;
- water - 1 tbsp .;
- tomato paste - 1 tbsp. l .;
- bay leaf - 1 pc .;
- salt - 0, 5 tsp;
- a mixture of ground peppers - 2 chips.
1. We wash the pork ribs in cold water, thus removing small pieces of bone that could have formed during the process of cutting meat. With the help of a paper napkin, we remove excess moisture, after which we cut the ribs into sections - into one portion of 1-2 ribs. Salt, pepper and leave to marinate for 10 minutes at room temperature.
2. On a hot skillet, fry the ribs for 5-6 minutes on each side until a confident golden crust. In the process of roasting fat should be formed, if it is not enough, you can add 0, 5 tbsp. l vegetable oil.
3. Fried ribs are placed in a saucepan, and in a frying pan, where they are fried, lightly sprinkle the onion in cubes with coarsely chopped carrots. Fry vegetables on high heat until light browning - this will give the finished dish a richer taste and aroma.
4. Send the vegetables to the pan to the pork ribs, pour 0, 5 cups of cold water and set on medium heat. Simmer under a closed lid for 30 minutes.
5. After the indicated time, add potatoes, cut into large cubes.
6. Add water so that it covers the potatoes, put tomato paste and bay leaf, salt to taste. Tomato paste, added at this stage, while the potatoes are still raw, will not let it boil soft. Cover the pan with a lid and simmer on low heat for another 20 minutes until the potatoes are ready.
7. We leave the prepared stewed ribs with vegetables under the closed lid for 10 minutes, you can add some greens.
Serve hot, adding homemade pickles or fresh cabbage salad.
