Citric acid is in the arsenal of any hostess. It is added to dough, pickles, compotes. This is a great alternative to vinegar when you need to acidify a dish, but to avoid the smell of vinegar.

  • Okroshka with citric acid is prepared according to the standard scheme. Vegetables and other foods should be cut into equal pieces: diced, straws or slices. Then okroshka will look more appetizing, and the ingredients are better connected with each other.

Okroshka on water with citric acid: with mayonnaise and sausage

Ingredients:

  • potatoes - 3 pcs .;
  • eggs - 3 pcs .;
  • fresh cucumbers - 3 pcs .;
  • boiled sausage without fat - 200 g;
  • green onions - a few feathers;
  • dill - a thin bunch;
  • mayonnaise - 150 g;
  • water - 1 l;
  • salt - to taste;
  • citric acid - to taste.

Method of preparation

  • Boil in advance and cool the water. Dilute citric acid to taste.
  • Boil the potatoes, cool, cut into small cubes.
  • Boil hard-boiled eggs, cool, peel the eggshell, chop with a fork or knife.
  • Cut the sausage into small cubes. Instead of sausage, you can take sausages - the taste of okroshka will not change.
  • Wash cucumbers, cut into small cubes. You can also grate them on a medium grater, then the liquid in okroshka will get a richer taste.
  • Chop greens and onions.
  • Put all the ingredients in the pan, put the mayonnaise. Stir as you do with the salad. Try on the salt, as its amount directly depends on the taste of mayonnaise used. Dilute the vegetables with acidified water to the desired thickness. If necessary, add a little more salt or citric acid.
  • Allow the okroshka on the water to infuse, putting it in a refrigerator for half an hour, then pour it into plates and serve it on the table.

Okroshka on water with citric acid: with radish and meat

Ingredients:

  • potatoes - 3 pcs .;
  • radish green average - 1 pc .;
  • boiled meat (beef) - 300 g;
  • dill - a thin bunch;
  • green onions - a few feathers;
  • sour cream - 200 g;
  • water - 1 l;
  • salt - to taste;
  • citric acid - to taste;
  • ground black pepper - pinch.

Method of preparation

  • Boil water and cool. Dilute citric acid in it.
  • Boil potatoes, cool, cut into cubes.
  • Cook lean meat, cool in broth, then cut into strips.
  • Radish clean, wash, grate on a medium grater.
  • Chop greens and onions finely.
  • All products put in a pan, combine with sour cream, add pepper and salt, mix. Fill with acidified water and mix again. Put okroshka in the fridge for half an hour, so that it cools and infuses. Determine if there is enough salt and citric acid.
  • Okroshka pour into plates and serve on the table.

Meat and sausages can be added to okroshka with citric acid or cooked with only vegetables.

If the list of other products can be changed at your discretion, then cucumbers, greens and green onions are put into almost any okroshka. The exception is okroshka with radish. It is not necessary to put cucumbers in it, since this winter version of okroshka completely dispenses with them.
