Okroshka is a cold soup that is popular at any time of the year. It can be cooked only with some vegetables or with the addition of meat products - lean boiled meat, sausage, ham.

Okroshka can be on kvass, kefir, sour cream. Lovers of savory taste make it in mayonnaise.

Subtleties

  • For such okroshka, they take a standard set of vegetables: potatoes, radishes, cucumbers, greens. And also lay hard-boiled eggs. The taste of okroshka affects the way of cutting. All vegetables should be finely cut into equal pieces.
  • Cucumbers and radishes can be grated. The juice of these vegetables will mix with the liquid component of okroshka and improve its taste.
  • For refueling, it is advisable to use classic mayonnaise without any additives.
  • So that it is well dissolved in okroshka, it is first mixed with chopped products and only then filled with water. If the mayonnaise is put into the finished okroshka, it will not stir, but will float in the form of small pieces, spoiling the appearance of the dish.
  • Water for hash is used only boiled. Therefore, you need to boil it beforehand and cool it in the refrigerator.
  • To add a pleasant acidity, citric acid, lemon juice or vinegar is put in the okroshka. Mustard gives it a savory taste, which is put together with mayonnaise.
  • Okroshka is made immediately in a saucepan, so that she can infuse. If it is prepared in advance - for example, for the upcoming feast - the food is cut, mixed in a saucepan and then stored in the refrigerator. Do not salt. 1-2 hours before serving they put mayonnaise, salt, spices and dilute everything with cold water to the desired thickness. Instead of water, you can use mineral water.

Ingredients:

  • boiled sausage - 300 g;
  • potatoes - 4 pcs .;
  • eggs - 4 pcs .;
  • fresh cucumbers - 3 pcs .;
  • green onions - a small bunch;
  • dill and parsley - several sprigs;
  • mayonnaise provencal - 200 g;
  • water - 1, 5-2 l;
  • salt - to taste;
  • citric acid - 1/4 tsp.

Preparation Method

  • Boil potatoes in advance. Cool it down. Cut into small cubes.
  • Wash eggs. Dip in a pan of boiling water and cook for 10 minutes. Put in cold water and cool. Crush them with a fork or cut with a knife.
  • Wash cucumbers. If the rind is bitter, be sure to cut it off. Cut the cucumbers into cubes.
  • Cut the sausage into the same cubes.
  • Crush dill, parsley and green onions.
  • Add all ingredients to the pan. Put mayonnaise. Stir. Now gradually pour the water, stirring the contents of the pan. Bring okroshka to the desired thickness. Only now put salt and citric acid. Stir once more. Put okroshka in the refrigerator for one hour.

Okroshka meat on water with mayonnaise

Ingredients:

  • boiled beef - 300 g;
  • green onions - a small bunch;
  • fresh cucumbers - 4 pcs .;
  • eggs - 6 pcs .;
  • dill - a few twigs;
  • mayonnaise - 200 g;
  • salt;
  • mustard - 1 tsp;
  • vinegar - to taste;
  • water - 1, 5-2 l.

Preparation Method

  • Boil the meat in advance. Cool directly in the broth, otherwise it will darken and become covered in a brown crust. Cut into thin strips.
  • Boil hard boiled eggs. Cool in cold water. Separate the yolks from the proteins. Squirrels chop with a knife or fork.
  • Fold the yolks into a cup. Add mustard, a little mayonnaise. All well pound until homogeneous gruel.
  • Cut the cucumbers into straws or grate a medium grater.
  • Cut onions into rings. Pound with a pinch of salt.
  • Chop the dill.
  • Fold the meat, eggs, onions and cucumbers into a saucepan. Add the mustard mixture. Season with mayonnaise. Mix everything. Pour chilled water. Add vinegar. Stir again. Try on the salt.
  • Refrigerate in the refrigerator for an hour.

Okroshka vegetable on water with mayonnaise

Ingredients:

  • potatoes - 4 pcs .;
  • fresh cucumbers - 3 pcs .;
  • carrots - 1 pc .;
  • eggs - 3 pcs .;
  • green onion - a small bunch;
  • dill - a few twigs;
  • salt;
  • mayonnaise - 200 g;
  • water - 1, 5-2 l;
  • radishes - 3 pcs.

Preparation Method

  • Cook the potatoes “in uniform”. Cool it down. Remove the skin. Cut into small cubes.
  • Peel the carrot. Cook. Rinse under running cold water. Cool in the fridge. Cut in the same way as potatoes.
  • Place the eggs in boiling water and cook for 10 minutes. Peel off the shell. Crush with a knife.
  • Cucumbers and radishes cut into small cubes or grate in a medium grater.
  • Cut onion into thin ringlets. Chop the greens.
  • Put all products in the pan. Add mayonnaise. Stir.
  • While stirring, pour water in portions. Bring okroshka to the desired thickness. Salt it. Add vinegar. Stir again.

Mistress to note

  • Potatoes, eggs and meat are put in okroshka only chilled, otherwise it can quickly sour.
  • Radishes can be replaced with green radish. It must be peeled, washed and then rubbed on a medium grater. Mustard is not added to such okroshka, because radish already has a pronounced sharp taste.
