It just so happened that only two types of caviar are recognized in Russia: black and red and completely unfairly write off caviar from pike. But the latter is in no way inferior in taste to recognized delicacies, and there are sometimes more benefits in it.

Recipe number 1. Nothing extra

You will need:

  • pike caviar - 550 grams,
  • salt - 2 tablespoons,
  • vegetable oil - 10 ml.

Method of preparation

  • Rinse the pike thoroughly, carefully remove the eggs in the pouches.
  • The eggs in the bags should also be washed and the eggs out of the bags in a plate. Ensure that there are no remains of the film in the calf.
  • Add salt to the caviar and carefully beat it with a fork until the salt dissolves. It usually takes about 20 minutes, you will understand that the caviar is ready for salting in the appeared white foam.
  • Now add 2/3 of a part of vegetable oil to caviar and mix well.
  • Put the caviar in a glass jar or stewpan, and pour the remaining oil on top. Tightly close the container with a lid and refrigerate for 5 days.

Pike caviar prepared according to this recipe is ready for use after the designated time has elapsed.

Recipe No. 2. Quick salting of pike caviar

You will need:

  • pike caviar - 300 grams,
  • water,
  • salt.

Method of preparation

  • Caviar, without taking out of the bags, lay out in a deep bowl. Stir with a fork.
  • Pour into the caviar 1, 5 liters of boiling water. We continue to stir it for another five minutes. Separated films are removed.
  • Gently pour off the hot water.
  • Fill the caviar with cold water and drain it again.
  • Mix the eggs, remove the remnants of the films.
  • It is necessary to wash the eggs thoroughly and for a long time, it may take 10 procedures or even more. After that, the eggs should be dried.
  • Salted caviar salt to taste. At the same time, we do not forget to constantly stir it, since this way salt will dissolve faster.
  • The fact that the caviar can be put into a jar and put into the fridge, you will understand by dyeing it in amber color.
  • Put the eggs in the fridge; after 6 hours, it is ready to eat.

Home-salted pike caviar is a delicious ingredient for sandwiches, which in turn can be an excellent option for breakfast or snacks on the holiday table.
