A great option for a hearty breakfast or a delicious dessert - pancakes with cottage cheese and banana. Very conveniently, then such pancakes can be made larger and frozen, so that later at any time you can satisfy your hunger with your favorite dish. For the filling, you can take home or shop cottage cheese, bananas are better to use more ripe - they are soft and sweet. Optionally, you can make the filling pasty or leave grains of cottage cheese.

List of ingredients:

  • 500 ml of liquid (water + milk in any ratio),
  • 3 chicken eggs,
  • 1 cup of flour,
  • 1 pinch of salt,
  • 3 tbsp. l sugar,
  • 3 tbsp. l vegetable oil,
  • 350 g of cottage cheese,
  • 1-2 bananas,
  • 3 tbsp. l sour cream,
  • ground cinnamon if desired.

Cooking

1. For the preparation of the filling you need to combine in one bowl cottage cheese, sour cream and finely chopped banana. Next, stir everything with a spoon or fork, kneading a banana in mashed potatoes. There is no need to add sugar to the filling, as the banana itself is sweet, but if the fruit is not too ripe, you can sweeten it.

2. In deep dishes mix the eggs and sugar.

3. Add milk, if desired, it can be diluted with water, but the total amount of liquid should be 500 ml.

4. Use top grade wheat flour for pancake dough. Sifting it, slowly mix it into the bowl, stirring constantly with a whisk. Do not forget to add vegetable oil.

5. As a result, you should have a not too thick dough without lumps. Let it stand for 20 minutes. Grease the pan with oil and heat it. Pour a small amount of dough into the pan and fry a thin ruddy pancake, literally a couple of minutes on each side. Make the fire weak.

6. The pancakes will be rolled up into a straw, so put the filling in a thin layer on half the pancakes.

7. Roll the spring roll into a thin tight tube. Do the same with the remaining pancakes and cottage cheese filling. Serve warm or already cold, with sour cream or sweet sauces.
