Many people who care about their health include dietary turkey meat in their diet. It can be stewed, baked, fried in a pan. Popular dishes include chopped turkey burgers. They differ from the usual ones in that meat is not scrolled through a meat grinder, but chopped with a heavy knife or kitchen hatchet into small pieces. Thanks to this, the products are more juicy. Turkey meat is not very fat, so this method of cooking meatballs from it is optimal.

Cooking Features

Cooking chopped turkey patties is even easier than regular ones. This does not require kitchen appliances. However, in order for the products to retain their shape during preparation and to be tasty, it is necessary to know a few subtleties.

  • Chopped burgers will be tastier if made from fresh or chilled meat. When defrosting and freezing the product, the structure of the protein can be broken, due to which it loses its juiciness. You can use frozen turkey fillet to cook minced meatballs only if it is thawed in the refrigerator, without being exposed to a sharp temperature drop.
  • Turkey breast cutlets will be more tender than thigh or shin.
  • Minced meat has a not too smooth structure. For the formation of cutlets from it is necessary to make it more dense and viscous. Eggs, starch, semolina, flour, cheese cope with this task. Cutlets will be better kept in shape if they are rolled in a beaten egg before frying and breaded in flour or bread crumbs.
  • Vegetables and lard will add extra juiciness to cutlets.
  • Adding fresh herbs will help make the patties more flavorful and attractive.

Steamed turkey cutlets


  • turkey meat - 0, 35 kg;
  • semolina - 150 g;
  • onions - 100 g;
  • chicken egg - 1 pc .;
  • salt, pepper, dried thyme - to taste.

Method of preparation:

  • Wash and dry the turkey meat with napkins. Remove all seals, streaks. Cut the plates across the fibers, then finely cut each plate.
  • Put the pieces together, chop them additionally with a heavy, sharp knife or with a hatchet. Repeat the procedure.
  • Fold the minced turkey meat in a bowl.
  • Peel the onion and cut it into small pieces.
  • Put the onion to the meat, break the egg into it. Stir.
  • Add 4 tablespoons of semolina, salt, seasonings. Stir and knead the minced meat. Refrigerate it for half an hour, putting it in the fridge.
  • Pour half a liter of water into the bowl of the multicooker, place the steaming grid on top.
  • Make medium-sized balls of minced meat, roll them in the remaining semolina and place on the grid.
  • Turn on the multicooker. Start the “Steaming” program. Cook for 30 minutes.

Guided by the same principle, cutlets can be boiled for a couple in a double boiler or over a saucepan of boiling water. This recipe will appeal to those who are trying to eliminate fried from the diet.

Chopped turkey burgers in a frying pan with bacon


  • turkey pulp - 0.5 kg;
  • bacon - 50 g;
  • stale white bread - 50 g;
  • hard cheese - 30-40 g;
  • lemon - 1 pc .;
  • chicken egg - 1 pc .;
  • salt, spices - to taste;
  • vegetable oil - how much will leave.

Method of preparation:

  • Cut the washed and dried meat into small pieces, beat them and chop them finely.
  • Dry the bread in the oven, turn it into crumb using a grater or blender.
  • Finely rub the cheese.
  • Cut the bacon in small pieces.
  • Squeeze juice out of lemon. Rub the zest with it.
  • In a bowl, mix minced meat, bread, bacon, lemon juice, zest, salt and spices. Add an egg. Knead and cool the minced meat.
  • Heat oil in a pan. Form the cutlets and place them in a frying pan, leaving a bit of free space between them. Fry over medium heat under the lid until the patties are browned.
  • Turn them over and fry for 5 minutes on the other side.
  • Turn it over again, add some water, reduce heat. Continue cooking for 10 minutes.

Bringing cooked patties to readiness is possible not in a pan, but in an oven. At a temperature of 200 degrees they will need to fry for 15 minutes. Bacon gives the cutlets even more juiciness. Using lemon juice and zest allows you to make the taste of the dish unique.

Turkey mince cutlets in the oven


  • turkey fillet - 0.5 kg;
  • onions - 100 g;
  • sour cream - 50 ml;
  • garlic - 1 clove;
  • chicken egg - 1 pc .;
  • potato starch - 50 g;
  • vegetable oil - how much will leave;
  • salt, spices - to taste.

Method of preparation:

  • Prepare the turkey fillet, cut it into layers, beat off slightly and chop very finely. Transfer to a bowl.
  • Free from the husk and cut the onion as small as possible. It can be crushed on a grater with large holes.
  • Crush garlic with a hand press.
  • Put the garlic and onion to the meat, add the raw egg, mix well.
  • Add salt, spices, sour cream and starch. Stir until smooth and refrigerate for half an hour.
  • Grease a thick baking sheet with butter. Put mince on it, giving it the shape of cutlets.
  • Send the baking tray to the oven preheated to 200 degrees for half an hour.

To make the patties juicier, 20 minutes after the start of baking, they can be greased with an additional portion of sour cream or put on top of a thin slice of butter. When serving, cutlets do not interfere with sprinkling with fresh herbs.

Chopped turkey cutlets are succulent, even for inexperienced chefs. Serve them as a separate dish, watering sauce. Often these products complement the side dish. The best side dish options are steamed or baked vegetables, mashed potatoes. Dietary cutlets made from minced turkey meat with beans and peas are well combined.
