The recipe describes in detail how to cook a delicious pork kebab in the oven for two hours. Of course, without adding a special flavor, you will not get a taste of smoke, so you have to be content with just delicious juicy meat on skewers, marinated in the most popular classical way. If the aroma of smoke is important - use the “liquid smoke”.
List of ingredients:
- 1 kg of pork pulp,
- 0, 5 lemons,
- 2 large onions,
- 2 tsp. salt (no slides),
- spices for kebabs to taste.
1. Prepare a lemon and onion for pickling. Carefully wash the lemon peel, cut it into slices. The onion needs to be cleaned and cut into halves or quarters of rings.
2. Use for the kebab pulp, neck or scapula (remove the bone). Wash the meat and dry it with a towel, cut into pieces of medium size.
3. Crush the onion and lemon with your hands so that they extract the juice, send it to the pork.
4. If you salt the meat in advance, it may lose some of the juice, but it will be well saturated and taste better - you choose. We salt right away, immediately add spices - usually you can do with black pepper, coriander, paprika. Mix everything with your hands and let the meat marinate at least 40 minutes, but the longer the better.
5. String the pieces of pork on skewers, put them on the form covered with foil. If there is a grill - use it. It is necessary that the pieces of meat are stuck in the air and blown with heat, and not lay on the hot surface.
6. Heat the oven to 200 degrees and send the form with the blanks there. For the first half hour, skewers with meat can be covered with foil - so as not to dry much, and then fry until golden brown for another 30-40 minutes.
Serve the skewers on skewers or by removing the pieces of meat from them. Serve a large dish of pickled onions, herbs, vegetables, put the meat in the center. Serve the sauce with shashlik.
