  • 2 carrots;
  • 2 onions;

  • 2 chilli pods;
  • 1 teaspoon of pepper;
  • 1 tablespoon of gelatin;
  • 1 tablespoon of apple cider vinegar;
  • 2 tablespoons of vegetable oil;
  • 1 egg;
  • salt.

Spices for pork leg broth: leek and 1 onion, garlic, carrots, a bunch of dill, laurel and pepper, chili pod.

Carefully wash the pork leg, if necessary, scrape the skin, then wash it with running water.

In the largest saucepan we put the knuckle, pour 4 liters of cold water, add all the above seasonings, except the carrot. We close the pan with a lid tightly, after boiling we remove the scale with a skimmer and make the heating minimal.

Cook on low heat for about 2 hours, 30 minutes before the end of cooking, put the cleaned carrot into the pan.

You can salt the broth for 20 minutes until ready, but I prefer to salt the meat and broth separately in the process of further cooking, in order to better control the amount of salt.

We get the knuckle from the broth, we shift it to the bowl, we filter the broth.

Separate the meat from the bones and sort. Put the pieces of boiled pork without fat into a separate bowl - this is meat for salad. Separately fold the skin and fatty meat - for aspic.
