If you replace ordinary peas in pea soup with chickpeas, you get the same delicious soup, but still a little different in appearance and taste. First, chickpeas, even with long-term cooking, remain whole and fairly solid, it does not disintegrate into gruel, like peas, so the soup from it turns out transparent and beautiful (on the other hand, if the task is to cook puree soup, then here place ordinary peas). Secondly, chickpea itself has a stronger taste and will add a new note to the meat broth.

Like other legumes, chickpeas should be soaked in water for 10-12 hours before cooking, and the water in which it is soaked is not used for cooking, since oligosaccharides dissolve in it - the main reason why legumes can cause problems with digestion.

Ingredients:

  • meat on the bone for broth - 300 g;
  • chickpeas (in other words, mountain peas) - 1 cup;
  • potatoes - 300 g (about 5 pieces);
  • carrot - 1 pc .;
  • onions - 1 head;
  • water - 2 liters;
  • salt, pepper and other spices to taste.

1. For cooking soup you need to take care in advance about the presence of all the necessary ingredients and prepare them. It is best to soak chickpeas overnight in 600 ml of cold water, then drain the liquid.

2. First of all, prepare the broth. To do this, pour the meat with water, throw a whole head of a young onion to it, and set it on fire.

4. While the water in the pot is boiling, we are preparing vegetables. We rinse the carrot, clean it, and then cut it in a convenient way: in circles, straws or figures for beauty.

6. When the broth begins to boil, leave it to boil for 1 hour. Next, send it chopped vegetables and continue to cook.

7. When boiling again, reduce the temperature and salt the soup.

8. Boil the chickpea soup on a very quiet fire until the ingredients are fully cooked (15-20 minutes). Cooked meat can be removed at will, separated from the bone and finely chopped. In this case, you will need to do this even before the soup is completely cooked, so that the chopped meat will cook for a few more minutes.
