  • Pie can be filled with fresh, frozen lingonberries or even lingonberry jam - it all depends on the recipe. Whether to grind a berry will also be indicated in it. However, if you are preparing a filler from fresh whole berries, be sure to sort them out, rinse gently, lowering them several times in a colander in clean water and dry them, sprinkling them on a towel.

  • Lingonberry has a bitter taste, so it is often mixed with sweeter berries or fruits, sugar is added to the filling.

A simple recipe for lingonberry pie

Composition:

  • butter - 0, 2 kg;
  • wheat flour - 180 g;
  • chicken egg - 2 pcs .;
  • sugar - to taste;
  • lingonberries - 0, 2 kg.

Method of preparation:

  • Cut butter into pieces and melt it on a steam bath or in a microwave to a semi-liquid state.
  • Beat the eggs, mix with half a cup of sugar.
  • Sift flour, set aside 2 tablespoons of it.
  • Pour the egg-sugar mixture into the flour bowl, add the oil, leaving a little to lubricate the mold. Stir with a spoon or mixer, using the nozzle for the dough.
  • Set aside 2-3 tablespoons of dough, pour the rest into the mold, pre-oiled. Smooth the dough with a spoon.
  • Sort out the berries, wash them. Let it dry. To do this, it is best to sprinkle lingonberries on a towel that quickly absorbs excess moisture.
  • Dip the berries in half cooked flour.
  • Place the berry on the dough, smooth it.
  • Mix the deferred dough with the remaining flour and two or three tablespoons of sugar, stir and chop with a knife.
  • Sprinkle lingonberries with a little sugar, then crumbs of dough.
  • Place the form in an oven preheated to 180-200 degrees. Bake the lingonberry pie at this temperature for 40 minutes.
  • Grind a spoon of sugar to the state of powder in a coffee grinder. Sprinkle the iced cake out of the oven.

Before serving the cake, it is better to cool the cake to room temperature, but when hot, it will also be tasty. According to the same recipe, you can cook a pie in a slow cooker, increasing the cooking time to 50 minutes. Use the “Baking” mode.

Lingonberry and sour cream pie

Composition:

  • flour - 0, 3 kg;
  • sugar - 0, 25 kg;
  • butter - 100 g;
  • sour cream - 0, 25 l;
  • fresh lingonberries - 0, 25 kg;
  • vanilla sugar - 40 g;
  • chicken egg - 2 pcs .;
  • baking powder for dough - 5 g or according to the instructions on the package.

Method of preparation:

  • Prepare the berry by sorting it, rinsing and letting it dry.
  • Mix the berries with a spoonful of flour.
  • Whip the sour cream with a half cup of sugar and put it in the fridge.
  • Heat the oil slightly to soften it. Mix it with the eggs and the remaining sugar. At this stage, add vanilla sugar.
  • Pouring flour sifted and mixed with a baking powder and stirring the composition, make sure that you get a fairly dense, but still soft and pliable dough.
  • Put the dough in a greased form, making two-centimeter sides.
  • Pour the lingonberry over the dough, cover it with sour cream on top.
  • Place the cake in the oven, preheated to 190 degrees, and bake for 35-45 minutes until the cake is browned.

Sour cream in this cake becomes like a thick cream, the cake because of this resembles a cake. Eat it nicely, both warm and chilled. Some of the lingonberries in the recipe can be replaced by another berry. Then the dish will turn out not only tastier, but also healthier.

Cake with puff pastry lingonberry

Composition:

  • puff yeast dough - 0, 5 kg;
  • cranberries - 150 g;
  • apples - 0, 4 kg;
  • cinnamon - a pinch;
  • sugar - to taste;
  • starch - 40 g.

Method of preparation:

  • Wash the berry, sort and dry.
  • Wash apples, blot with a towel. Cut the core out of them. Peel off the knife. Coarsely grate the pulp and mix with lingonberries.
  • Divide dough into two parts. If you bought this product in a store and it is presented in the form of two layers, leave the layers whole.
  • Roll one layer so that its thickness is about 2-3 mm.
  • Raise the edges of the dough slightly and form low sides.
  • Lay out the cranberry-apple filling. Sprinkle with sugar and starch.
  • The remaining layer, rolled out, cut into strips. Put the strips on top of the grill-shaped filling.
  • Preheat the oven to 200 degrees.
  • Place the cake on floured parchment paper and place it on a baking sheet or baking dish.
  • Put the cake in the oven. After 20 minutes, check his condition. If necessary, extend the cooking time by another 5-10 minutes. During the first 20 minutes of cake baking, the oven door cannot be opened so that the dough does not drop.

Pie made according to this recipe looks appetizing at home. Lingonberry or lingonberry-apple jam can be used instead of fresh lingonberries. Sugar in this case is not required.

Shortcake with lingonberry cake

Composition:

  • flour - 0, 3 kg;
  • sugar - 0, 2 kg;
  • margarine - 150 g;
  • cranberries - 150 g;
  • soda - 5 g;
  • table vinegar (9 percent) - 5 ml;
  • vegetable oil - 20 ml.

Method of preparation:

  • Prepare the berry - it should be clean and dry.
  • Margarine slightly freeze, then grate on a coarse grater.
  • Add sugar in the amount of 100 g, pound until smooth.
  • Soda extinguish with vinegar, add to the resulting mass, mix.
  • Sift flour, combine with margarine, knead the dough.
  • Put the dough in the prepared form, buttered. Laying out the dough, immediately form a low bumpers.
  • Mix the lingonberries with sugar, leave for 15 minutes, drain the resulting syrup.
  • Spread the remaining berry mass on the dough.

Some cooks use a mixture of several types of berries for filling this cake, among which lingonberry takes up only half. The second half can be replaced with currants or cherries.
